- Preheat an outdoor grill for medium heat.
- To make the guacamole, mash the avocado in a medium bowl with the juice of half a lime, jalapeno, tomatoes, 1/4 cup onion, and 1 1/2 teaspoons of minced garlic; season to taste with salt, and set aside.
- In a large bowl, mix together beef, the juice of half a lime, 1 tablespoon garlic, chili powder, 1/2 cup diced onion, and cilantro. Form the meat into 6 patties.
- Cook the burgers to desired doneness on the preheated grill. Add a slice of cheese to each burger during the last minute of cooking. Serve on toasted buns with a dollop of guacamole.

LT GUACAMOLE BURGER

- Heat a griddle medium hot.
- Using your hands, form the beef into a 1/4-inch-thick patty, trying not to press the patty too much or the meat becomes tough and the patty does not cook properly in the center. Brush some butter on both sides of the patty, season with salt and pepper and cook on the griddle for 2 to 3 minutes. Flip the burger, place the cheese on top and continue griddling for 2 to 3 minutes for medium rare.
- Meanwhile, brush softened butter on both slices of the bun and place on the griddle until toasted.
- To assemble, place the hamburger on the bottom slice of the bun, and the lettuce, tomato and pickle on top of the hamburger. Spread the LT Guacamole on the top bun and then put the sandwich together and serve.
- Mash the ingredients together in a medium bowl.

- Place the prawns and lime zest in a large, non-metallic bowl.
- Place the lime juice, chile pepper, garlic, ginger, and onion in a food processor or blender, and process until smooth. You may need to add a little oil to facilitate blending.
- Pour over the bowl of prawns, and stir to coat. Cover, and refrigerate for 4 hours.
- Preheat grill for medium-high heat.
- Thread prawns onto skewers, piercing each first through the tail, and then the head.
- Brush grill grate with oil.
- Cook prawns for 5 minutes, turning once, or until opaque.

- For the Shrimp Burgers: Place the shrimp on a cutting board and chop it up into 1/2 inch pieces or smaller. You can also just pulse it in the food processor a few times but be sure you don't turn the shrimp into a paste. In a medium bowl combine all the burger ingredients before adding shrimp. Mix until *just* combined. Divide mixture into 4 equal patties about 1/2 inch in thickness.
- Make the Slaw: Place all the ingredients for the slaw (except cabbage) with 1/2 teaspoon of salt and start with 3 tablespoons of lime juice into a blender and blend until smooth. Taste and adjust salt and lime juice to preference. Toss 1/2 the dressing with the cabbage and adjust with more to taste.
- Cook the Shrimp Burgers: Heat a swish of olive oil in a large non-stick skillet. Add the patties but do not overcrowd the pan. Do this in two batches if you need to. Pan fry shrimp burgers for 5-7 minutes total or until cooked. Serve over a bed of prepared slaw or on brioche buns with slaw on top. Enjoy!
