PRALINE-TOPPED SWEET POTATOES
Sweet potatoes and streusel mixture come together to make this nutty baked side dish.

- Heat oven to 350°F. Spray shallow 2 1/2-quart casserole with cooking spray.
- In medium bowl, mix flour, brown sugar, pecans, butter and cinnamon until blended. In large bowl, mix sweet potatoes, vanilla and 1/2 cup of the streusel mixture. Spoon sweet potato mixture into casserole; sprinkle with remaining streusel mixture.
- Bake uncovered 45 minutes or until thoroughly heated and streusel is crisp.

- Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
- Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
- Bake for 30 minutes in the preheated oven.

- Preheat oven to 350 F. Bring a large pot of water to a boil. Add sweet potatoes and cook for 15 minutes until tender.
- Drain and pour potatoes back into pot. Add 1 stick unsalted butter, sugar, eggs, and vanilla extract. Using a potato masher, mash to combine.
- Spray a 9x13-inch baking dish with non-stick cooking spray. Pour sweet potato mixture into baking dish and spread evenly.
- In a medium bowl, add remaining butter, pecans, brown sugar, and flour. Stir to combine.
- Sprinkle mixture on top of sweet potatoes.
- Bake for 50 minutes.
- Let cool, serve, and enjoy.

- Wash and skin potatoes, chop into large chunks.
- Boil potatoes until tender and mash.
- Stir in butter, cinnamon, brown sugar and mini marshmallows to taste.
- Mix in a separate bowl, flour, sugar, cinnamon, and pecans, drizzle melted butter over mixture and stir to moisten, mixture should resemble chunky crumbs.
