From a 1980 cookbook "Texas Recipes from Texas Place" Cook time doesn't include soaking the beans overnight.

1 lb pinto beans
3 quarts water
1/2 lb salt pork, cut up
1 medium onion, chopped
1 minced garlic clove
6 ounces tomato paste
1 teaspoon salt
1/2 teaspoon sugar
1 teaspoon cumin seed
1/2 teaspoon marjoram

Steps:

  • Wash beans. Place beans in large pot cover with cold water and soak overnight.
  • When ready to cook bring beans to a boil. Reduce heat and simmer 1 hour.
  • Stir in remaining ingredients cover and simmer 3 hours or till beans are tender.
  • Add more water if necessary.

I made this for a potluck and it was devoured. Several people asked for the recipe. It was one of those... "what do I have on hand" dishes. It has lots of flavor and I will definitely make this again. Good comfort food.

2 lbs dried pinto beans
1 lb ground pork
2 cups strong black coffee
1 onion, minced
1 (10 ounce) can tomato sauce
1 large tomatoes, minced
1/2 teaspoon cayenne pepper
1/2 teaspoon cajun seasoning
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Sort, Rinse and Soak beans overnight.
  • Brown pork and onions in frying pan.
  • Add spices and coffee.
  • Bring to a boil; reduce to a simmer for 5 minutes.
  • In crock pot or large sauce pan add beans, pork mixture, can of tomato sauce, and minced tomato.
  • Cover with water and cook until tender.

Pinto Beans for Make Your Own Burritos image

This makes flavorful "soupy" pinto beans that are great for wet burritos. Our family always called these "make your own burritos" since everyone's end up so unique. Serve with recipe #202702

2 cups pinto beans
1 tablespoon bacon grease
1 onion, diced
1/2 bell pepper, diced
2 tablespoons ketchup
1 tablespoon mild chili powder
2 teaspoons cilantro
1 teaspoon cumin
3 teaspoons kosher salt
1 garlic clove

Steps:

  • Sort beans to make sure there are no small rocks.
  • Place beans in large pan and fill with water to within a few inches of the top. Soak beans overnight, or bring to a boil and let sit, covered, off heat for one hour. Drain and rinse beans.
  • Refill pot with water. There should be about 3 cups of water per each cup of beans.
  • Add bacon grease, cover, and bring to a boil.
  • Turn down to simmer and cook about 4-5 hours, or until beans are fairly tender.
  • Add remaining ingredients, cover and bring to a boil again. Then turn down to simmer and cook one more hour. Adjust spices to your liking.
  • Once beans are tender, you can remove the lid and continue cooking to make the beans less soupy if you prefer.
  • Serve with other burrito fixings like taco meat, cheese, onions, tomatoes, guacamole, sour cream, olives, etc.

2 cups tomatoes, peeled, seeded and diced
1/2 cup vegetable broth
1 green pepper, peeled, seeded and diced
3 tablespoons unsweetened chocolate (or cocoa powder)
3 tablespoons sesame seeds, roasted
2 tablespoons masa harina (Mexican corn tortilla flour)
2 tablespoons raisins
1 1/2 tablespoons dried ancho chile powder (or your preference)
3 garlic cloves, peeled
1 teaspoon coarse salt
1 teaspoon honey
1/2 teaspoon ground aniseed
1/4 teaspoon ground coriander
1/8 teaspoon cinnamon
1/8 teaspoon pepper
1/8 teaspoon ground cloves
1/8 teaspoon allspice
1 1/2 cups vegetable broth
4 1/2 cups pinto beans, cooked and drained

Steps:

  • In a blender, mix all of the ingredients except the last 1 1/2 cups of broth and the beans.
  • Blend until very smooth.
  • Add the remaining broth and blend again.
  • Pour the sauce over the beans in a nonstick pot and simmer, covered, for 15-20 minutes.
