POWDERED SUGAR CINNAMON SPICED BUTTER FOR TOAST/BAGELS/ PANCAKES
This is a spice spread using evaporated milk. This is wonderful spread on pancakes. If someone loves peanut butter, put the spread on the pancake, then the peanut butter.Spread on the pancake, then the syrup.

- In mixing bowl add butter, sugar, cinnamon and evaporated milk. Stir.
- Add salt and water. Mix.
- Add variations if desired.
- Variations: Use Splenda instead powdered sugar, use cinnamon and nutmeg together. If there is any left, refrigerate.

- Allow the butter to soften at room temperature for 30 minutes.
- Slice the vanilla bean lengthwise and scrape the meat from inside the bean.
- Combine the butter with the vanilla meat, Splenda, and cinnamon. Mix well.
- Shape the butter into a small stick and wrap tightly in plastic wrap. Chill in refrigerator.

- Add all ingredients to the container of an electric blender.
- Process until smooth.
- Heat a lightly greased griddle or large skillet.
- Pour 1/4 cup batter onto griddle for each pancake.

- Flip pancake and cook other side.
- Serve warm.

CREAMY CRUNCHY PEANUT BUTTER PANCAKES
I found this in 'Better Homes and Gardens' magazine this month (Jan 07). While I don't stray from my pancake recipe often, I had to try this one. It's a PB-lover's pancake and the crunchiness is the best part:).

Steps:
- In a large bowl, combine dry ingredients.
- In a medium bowl whisk eggs and peanut butter until combined; then gradually add milk until thin and smooth.
- Pour wet mixture into dry and stir just to combine. (will still be lumpy) **I added a bit more milk now, as I don't like my pancakes this thick**.
- Gently stir in the chopped peanuts.
- Place a greased griddle over medium heat.
- When hot, cook the pancakes until golden brown.
- 1/4cup-sized pancakes should take 1-2 minutes per side and will yield about 16.

APPLE PANCAKES WITH LEMON SPICED BUTTER
A delicious way to serve pancakes. The slices of apple in the pancakes makes the dish quite pretty. The recipe is designed to make about 10 small pancakes about 3" across. From the magazine 'Australian Good Taste'.

Steps:
- FOR THE PANCAKES.
- Sift the flour into a large bowl and make a well in the centre.
- Whisk the buttermilk and egg together in a jug.
- Gradually pour the buttermilk mixture into the flour whisking well to make a smooth batter.
- Grease a non-stick pan with some of the butter and heat until the butter is foaming.
- Gently pour 1/3 cup of batter into the pan and top batter with apple slices.
- Depending on the size of your pan you can cook two or three at a time.
- Cook pancakes for about 1 minute, bubbles will appear on the top and the bottom should be golden.
- Turn the pancake and cook for a further minute or two until the second side is golden.
- Repeat with remaining batter and apple slices, greasing pan before each batch.
- FOR THE SPICED LEMON BUTTER.
- Combine all the ingrediants in a small bowl and mix together well.
- TO SERVE.
- Arrange 2 or 3 warm pancakes in a stack, top with the flavoured butter and fresh berries.
