2 lb ground beef
1 cup onion, diced, sauteed
3 cloves garlic, minced, sauteed
1 ½ cups grated parmesan cheese, divided
2 eggs
1 cup panko breadcrumbs
2 teaspoons salt
1 ½ teaspoons pepper
2 teaspoons worcestershire sauce
½ cup milk
½ cup fresh parsley, finely chopped
1 ½ cups ketchup
½ cup brown sugar
2 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons paprika
¼ cup tomato paste
1 lb yukon gold potato, peeled, chopped, cooked
2 tablespoons butter
1 teaspoon salt
½ teaspoon pepper
1 cup milk
28 slices bacon, slices

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large bowl, mix together beef, cooked onions and garlic, Parmesan, eggs, panko, salt, pepper, Worcestershire, milk and parsley. Set aside.
  • In another bowl, make the glaze by mixing ketchup, brown sugar, mustard powder, onion powder, paprika, and tomato paste. Reserve half of the glaze in a separate bowl for after the meatloaf is cooked. Set aside.
  • In a large bowl, mash cooked potatoes, butter, salt, pepper, milk and parmesan to desired consistency. Set aside.
  • Line a bundt pan with slices of bacon and use a pastry brush to spread a layer of glaze on the inside of the bacon.
  • Add ⅔ of the meat to the bottom of the bundt pan and spread up the sides and up the middle of the pan making a "bowl" for the mashed potatoes.
  • Add the mashed potatoes into the "bowl" and smooth out. Top the mashed potatoes with the remaining meat, smooth out, coat the top with the raw meat glaze, and fold the slices of bacon over the top of the meat. Cover with foil and bake for 1 hour, remove the foil after 30 minutes and carefully drain some of the fat before putting it back into the oven.
  • Place a cooling rack on top of the bundt pan and flip over onto a baking sheet. Remove the bundt pan and coat the meatloaf with the reserved glaze.
  • Broil on high for 3-5 minutes or until the glaze has caramelized.

1 1/2 lbs lean ground beef
3/4 cup V8 vegetable juice
1 egg
1 tablespoon gluten-free Worcestershire sauce
1 small onion, fine diced
3/4 cup gluten free breadcrumbs
1 1/2 teaspoons salt
1/2 teaspoon Keen's dry mustard
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground thyme
2 cups fresh spinach leaves, large veins removed
8 slices swiss cheese or 200 g sliced swiss cheese
8 slices freybe gluten free capicolli style ham or 175 g ham
2 sheets wax paper (10 inch by 14 inch)

Steps:

  • In a large bowl mix together the ground beef, V8 juice, egg, onion and Worcestershire sauce.
  • Mix together the spices and breadcrumbs. Add to meat and mix until well blended.
  • Place the ground beef between the layers of wax paper. Roll into an even rectangle shape, about 1/2 inch thick.
  • Arrange a double layer of spinach leaves onto the ground beef within 1/2 inch of the edges.
  • Top the spinach with the capicolli ham then the swiss cheese.
  • Carefully roll up, using the wax paper to lift. Press the edges and ends to seal.
  • Place on a lightly oiled baking pan, seam side down.
  • Brush the top with a little melted butter and sprinkle with a few breadcrumbs.
  • Bake uncovered @ 350F for about 45 - 50 minutes.
  • Let rest for a few minutes. Slice and serve.

1 lb breakfast ground sausage
1 lb ground chuck
1 cup Mission Picante Flavor pork rinds, crushed
1 cup heavy cream
1 1/2 cup cheddar cheese, shredded , reserving 1/2 cup
2 medium yellow onions, finely chopped and divided
1/2 cup green onion, diced small
2 cloves garlic, minced
1 medium carrot, finely chopped
2 eggs, lightly beaten
Kosher salt and freshly ground pepper, to taste
6 slices bacon
2 cups mashed potato (see note at bottom)
GRAVY
2 TBSP unsalted butter
2 TBSP almond flour
2 cups beef stock
2 sprigs fresh thyme
1 bay leave

Steps:

  • Preheat oven to 450 degrees 1. Combine pork, beef, crumbs, cream, 1/2 onions, garlic, carrot, egg, salt and pepper in a bowl and mix until combined evenly. 2. Transfer mixture to a large cutting board or work surface covered in parchment paper. 3. Either by rolling or using your hands, spread mixture out, achieving a 1 1/2 inch thickness. 4. Spread mashed potatoes over the center of mixture, sprinkle the reserved 1/2 cup of cheese over the top. 5. Fold sides to center, tucking the top and bottom toward center. Shape into a loaf. 6. Place loaf in greased baking pan, seem side down. 7. Wrap loaf with 6-8 pieces of bacon. 8. Place loaf in preheated 450 degree oven and bake for 35 minutes or until 160 degree internal temperature is reached. Remove loaf and rest for 10 minutes. 9. Gravy Heat butter in a 10″ skillet over medium-high heat. Add remaining onions; cook until caramelized, about 8 minutes. Add flour; cook, stirring, until lightly browned, about 4 minutes. Add stock, thyme, and bay leaf; cook until thickened, about 15 minutes. Pour gravy through a fine strainer into a bowl; season with salt and pepper. Spoon gravy over meat loaf to serve. Notes...used 8 russet potatoes, peeled and cooked. Combined and mashed with heavy cream, unsalted butter and seasoned with Kosher salt and freshly ground pepper. Cauliflower also a excellent stuffing choice!

1 ½ pounds lean ground beef
1 ½ cups crispy rice cereal squares (such as Rice Chex®), finely crushed
1 (12 ounce) can tomato sauce, divided
1 cup finely shredded carrots
¼ cup chopped fresh parsley
2 large eggs
1 clove garlic, minced
¾ teaspoon salt
¾ teaspoon ground white pepper
3 cups prepared mashed potatoes
1 cup shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 2 1/2-quart baking dish (either a 9-inch square or a 7x11-inch) with cooking spray.
  • Mix together ground beef, crushed cereal, 2/3 of the tomato sauce, carrots, parsley, eggs, garlic, salt, and pepper until well combined.
  • Press 1/2 of the beef mixture into the prepared pan. Spread mashed potatoes on top, then spread remaining beef mixture on top of that. Cover with foil.
  • Bake in the preheated oven for 45 minutes. Remove foil and top with remaining tomato sauce. Sprinkle Italian cheese blend over top.
  • Return to the oven and bake until cheese is completely melted or begins to gently brown, 10 to 15 more minutes.
  • Cool for 15 minutes before serving.

1/3 cup hot water
1/3 cup sour cream
1 teaspoon dried parsley flakes

1 teaspoon chili seasoning mix
1 cup tomato sauce
1 lb lean ground beef

Steps:

  • Preheat oven to 350F degrees.
  • Coat loaf pan with olive oil or cooking spray.
  • In a medium bowl, combine potato flakes, water, sour cream and parsley flakes.
  • Mix well and set aside.

  • Add to meat.
