CARAMELIZED ONION AND POTATO FLAN
5 ingredients and only 3 steps! This recipe was highly recommended by one of the nurses that I work with. It is an easy and elegant side dish from the Best of Bridge ladies. Excellent with ham or roast beef. Enjoy!

Steps:
- In large frying pan over medium heat, saute onions in butter until deep golden brown, about 20 minutes. Cook slowly to caramelize.
- Grease a 9" x 13" or large round baking dish. Layer half the potatoe slices in a shingle fashion and season. Top with half the onions and cheese. Repeat next layer, ending with cheese.
- Bake at 350F for 50 minutes, or until potatoes are fork tender. Cut in squares or wedges to serve.
POTATO FLAN OLE
My Mom was cleaning out one of her closets and came across several folders full of recipes that she had clipped from magazines and newpapers over the years. I can't tell what magazine this came from but it was a contest winner submitted by Shirley Desantis. It's a great and tasty way to use leftover chicken and mashed potatoes!

Steps:
- Preheat oven to 375 degrees fahrenheit. Grease an 11-inch pie plate or an 11 x 7 inch casserole dish.
- In a large bowl, mix the mashed potatoes and egg until smooth.
- Add flour, cornmeal, garlic powder, pepper, and 2 tablespoons olive oil. Blend well.
- Press into the bottom and up the sides of the prepared pan. Bake for 15 minutes.
- Spread picante sauce over the bottom of the crust. Top with chicken, cheese, and parsley. Drizzle the remaining 2 tablespoons of oil over top.
- Bake for 25 minutes. Serve hot with sour cream and guacamole.

I make this for my family on a regular basis. It has a wonderful flavor and the pork chops are always tender! I found the recipe in a Taste of Home Magazine .

Steps:
- In a large skillet, brown pork chops in oil; sprinkle with seasoned salt and pepper.
- Meanwhile, in a greased 13X9X2-inch baking dish, combine rice, water, tomato sauce and taco seasoning; mix well.
- Arrange chops over rice; top with green pepper.
- Cover and bake at 350F for 1-½ hours.
- Uncover and sprinkle with cheese; return to the oven, until cheese is melted.

- Halve the spaghetti squash lengthwise and remove seeds.
- Place, cut side down, on a baking sheet.
- Bake in a 350 degree oven for 45 to 50 minutes or until tender.
- Use a fork to shred and separate the spaghetti squash into strands.
- Meanwhile, for sauce, in a large skillet cook chicken, onion, pepper and garlic until vegetables are tender.
- Drain fat.
- Stir in tomato puree, corn, beans, chili powder, cumin and oregano.
- Cook and stir until slightly thickened and bubbly.
- Cook and stir 2 minutes more.
- Put 1 cup spaghetti squash on serving plate.
- Spoon 1 cup sauce over squash and top each serving with 1/4 cup cheese.

- Preheat oven to 475°F
- Mix seasoning, sugar and spices together.
- Slice scrubbed, unpeeled potatoes into rounds.
- Place 1/2 of the potatoes into a plastic bag.
- Spray with olive oil.
- Sprinkle half of spice mix into bag.
- Close bag and shake until potatoes are coated.
- Repeat process with other half of potatoes and spices.
- Spray 2 baking sheets with olive oil.
- Spread potato rounds out on baking sheets into a single layer.
- Bake until crisp, 30-40 minutes.
