MERM'S POTATO CHEESE SOUP WITH GREEN CHILIES



Merm's Potato Cheese Soup With Green Chilies image

One taste of this soup at my grandparents' then favorite Mexican restaurant in Tucson - Molina's - and my mom (whose grandchildren called Merm) had to make her own. This is how she made hers and actually everyone liked Mom's version (made with love) better than Molina's. This is pure comfort food for my Dad and for me and we chat about memories of my beloved Mother as we eat. Serve with fresh warm flour tortillas for dipping and of course a nice Mexican beer.

4 tablespoons butter
1 medium onion, chopped
1 garlic clove, minced
4 medium potatoes, peeled and cut into 1-inch cube
1/3 cup flour
2 cups chicken broth
2 cups milk
27 ounces whole green chilies (drained and chilies diced into bite-sized pieces, Mom used canned, I use fresh roasted chilies, abou)
1/2 teaspoon salt
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
pepper

Steps:

  • Heat butter in large dutch oven or other large soup pan over medium heat.
  • Add onion and garlic; cook until onion is tender.
  • Stir in potatoes and cook for abbout 1 minute.
  • Stir in flour until smooth and continue cooking 1 minute.
  • Slowly add broth stirring well.
  • Bring to a boil. Cover and reduce heat. Simmer 30 minutes or until potatoes are tender.
  • Stir in milk, chiles and salt.
  • Heat until simmering.
  • Add cheeses; cook and stir just until cheeses melt. Do not boil. Add pepper to taste. Serve in individual bowls. Garnish as desired.

4 tablespoons salted butter
1 medium onion, chopped
1 clove garlic, minced, or more to taste
4 medium potatoes, peeled and cubed, or more to taste
⅓ cup all-purpose flour
2 cups beef broth
28 ounces canned roasted Hatch green chile peppers, diced
2 cups milk
½ teaspoon ground cumin
½ teaspoon dried Mexican oregano
½ teaspoon salt, or to taste
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
ground black pepper to taste

Steps:

  • Heat butter in a large Dutch oven or heavy-bottomed soup pot over medium heat until melted. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in potatoes and cook for 1 minute.
  • Sprinkle in flour and stir until smooth. Cook for 1 minute, stirring continuously, until browned but not burned. Slowly pour in broth and stir until well incorporated; bring to a simmer. Cover and cook, stirring every 15 minutes, until potatoes are tender, about 30 minutes. Be sure the soup does not boil.
  • Stir in chile peppers, milk, cumin, oregano, and salt. Bring to a simmer, then immediately remove from heat; do not allow to boil. Add Monterey Jack cheese and Cheddar cheese; stir until melted. Season with pepper and serve.

200 gr (3/4 cup) fresh cheese (cut in cubes)
680 gr (1.5 lb) potatoes (cut into cubes of 2cm/0.8")
Green chillies (Anaheim, California, Poblano, italian, etc.)
200 gr (1 cup) Tomatos (diced)
50 gr (2/3 cup) onions (finely sliced)
chicken broth or hot water
120 ml (1/2 cup) whole milk
1 garlic clove (finely chopped)
1 tsp oregano
3 tbsp oil (olive oil, canola oil, etc.)
salt and pepper

Steps:

  • Wash throughly the green chilli peppers, roast them with the technique you prefer (in the oven, directly on the stove's fire or on a comal or pan).
  • Put them in a plastic bag or container and then wrap them in a kitchen cloth. Let them sit for 10-15 minutes.
  • Remove the skin from the peppers, cut them in half, remove all the seeds and remove the veins. Cut them into strips and set aside.
  • In a large saucepan, heat the oil over medium heat. Add the onion and sauté for 4 minutes over low heat until transparent and tender.
  • Add the garlic and sauté for a minute stirring constantly to release its aroma.
  • Add the tomato and cook, stirring from time to time for about 5 minutes or until the tomato has released its juices and you'll have a thick sauce.
  • Pour the broth, add the cilantro and season with salt and pepper (READ NOTES). Raise the heat and bring to a boil. Let everything simmer for 1 minute.
  • Add the potatoes and cover the pan. Cook until the potatoes are tender (about 25 minutes).
  • Uncover the pan and add the chillies and milk. Mix carefully and let the potato soup cook for 2 minutes.
  • Turn off the heat and immediately add the cheese. Mix and let stand 5 minutes before serving

4 medium potatoes, scrubbed unpeeled
3 cups water
1 tablespoon olive oil
1 1/2 cups chopped onions
2 garlic cloves, minced
1 1/2 cups red peppers, diced
1 1/2 cups anaheim chilies, diced
1 cup soymilk or 1 cup low-fat milk
1 teaspoon ground cumin
1 teaspoon dried basil
1 garlic clove, minced
salt
pepper
scallion, chopped (optional)
cilantro, chopped (optional)

Steps:

  • Cut cleaned and unpeeled potatoes into large cubes (about 1 to 1 1/2 inches). Bring water and potatoes to a low boil, cooking until the potatoes are tender.
  • While potatoes are cooking, place oil and onions in a skillet and cook until onions are cooked soft and translucent but not brown. Add peppers, cumin, basil and garlic and continue cooking until peppers are tender, about 6-9 minutes.
  • Place potatoes and three quarters of the water into a blender or food processor, reserving the remaining water. Blend until smooth.
  • Return processed potatoes to pot, adding peppers and milk. Use reserved water to thin the soup further if desired. Warm over low heat until it is ready to serve.
  • Garnish with scallions or cilantro if desired.

2 large potatoes, peeled and shredded
5 stalks celery, sliced
1 medium sweet onion, chopped
1 (8 ounce) package shredded sharp Cheddar cheese, divided
1 (7 ounce) can mild green chiles
¼ teaspoon ground black pepper
1 quart water, or as needed to cover
1 (12 fluid ounce) can evaporated milk
2 tablespoons butter
1 tablespoon chicken bouillon granules
½ cup shredded sharp Cheddar cheese, or to taste

Steps:

  • Combine potatoes, celery, onion, 1/2 of the Cheddar cheese, green chiles, and pepper in a soup pot and cover with water. Cover the pot and bring to a boil. Reduce heat and simmer until celery is tender, 30 to 40 minutes. Add evaporated milk and butter. Stir in bouillon; taste and adjust if needed.
  • Pour into serving bowls and top with remaining Cheddar cheese.

1 large onion, chopped
2 to 3 cloves garlic, minced
1 large green bell pepper, finely chopped
5 medium potatoes, peeled and diced
6 cups water with 2 vegetable bouillon cubes, or other stock option (page 9)
1 cup chopped fresh, ripe tomatoes
1 cup cooked fresh or thawed frozen corn kernels
1/2 cup chopped fresh mild green chilies, such as poblano
2 teaspoons ground cumin
1 1/2 cups cheddar-style nondairy cheese, grated (this is great with Vegan Gourmet nacho cheese)
1 cup rice milk, or as needed
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a soup pot. Add the onion and sauté over medium heat until translucent. Add the garlic and green pepper and continue to sauté until the mixture begins to brown lightly.
  • Add the potatoes and water with bouillon cubes. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the potatoes are just tender, about 15 minutes. Coarsely mash about half of the potatoes in the pot with a potato masher.
  • Stir in the tomatoes, corn, chilies, and cumin, then cover and simmer gently for another 15 minutes, stirring occasionally.
  • Sprinkle in the cheese, a little at a time, stirring it until fairly well melted. Add enough rice milk to give the soup a thick yet fluid consistency.
  • Season with salt and pepper and continue to simmer over very low heat, stirring occasionally, for 5 minutes longer. If time allows, let the soup stand off the heat for an hour or so. Heat through before serving. Adjust the consistency with more rice milk if the soup becomes too thick, then taste to adjust the seasonings.

3 pounds baking potatoes
1 pound lean ground beef
½ cup chopped onion
3 cloves garlic, minced
1 (15 ounce) can tomato sauce
1 (15 ounce) can chili beans
1 (1.25 ounce) package chili seasoning mix
1 cup low-sodium chicken broth
¼ cup butter
4 cups milk
1 cup buttermilk
1 teaspoon salt
½ teaspoon ground black pepper
1 ½ cups shredded white Cheddar cheese
½ cup sour cream
chopped fresh chives

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Prick potatoes with a fork. Transfer to a 10x15-inch baking pan.
  • Bake in the preheated oven, turning once, until tender, about 1 hour.
  • Meanwhile, for chili, add ground beef, onion, and garlic to a large saucepan. Cook over medium heat, stirring to break up lumps, until meat is browned and onion is tender, about 10 minutes. Drain grease.
  • Add tomato sauce, chili beans, and chili seasoning mix to saucepan. Bring to a boil. Reduce heat to low and simmer, covered, at least 10 minutes to let flavors meld.
  • When potatoes are cool enough to handle, use a spoon to scoop potato pulp into large bowl. (You should have about 4 cups pulp). Discard skins. Add broth to bowl. Mash potatoes until smooth.
  • Melt butter in a 4- to 5-quart Dutch oven over medium heat. Stir in flour and cook, whisking constantly to make a light roux, about 2 minutes. Gradually whisk in milk, 1 cup at a time. Cook, whisking constantly, until lightly thickened. Stir in potato mixture, buttermilk, salt, and pepper. Cook, stirring frequently, until heated through, 3 to 5 minutes (soup will be very thick). Remove from heat and gradually stir in 1 cup cheese.
  • Divide soup among bowls. Top with chili, sour cream, remaining 1/2 cup cheese, and chives (if using).
