- Preheat the oven to 350°F and lightly grease a 9x13-inch, 3-quart baking dish with baking spray or olive oil. Place the potatoes in a large microwave-safe bowl and add 1 cup water. Cover and microwave for 5 to 7 minutes, or until the potatoes are just tender. (You can steam them on the stovetop instead of cooking in the microwave, if you prefer.) Drain the potatoes. Spread half of them in the bottom of the prepared baking dish. Mix together the bell pepper, garlic, and 1/2 cup of the Parmesan cheese. Spread this mix over the potatoes. Whisk together the eggs, then whisk in the milk, yogurt, and 1/2 cup Parmesan cheese. Season with the salt and a generous quantity of black pepper. Pour about half of this egg mixture over the potatoes. Lay the rest of the potatoes on top in neat overlapping rows. Pour the rest of the egg mixture over the potatoes, and top with the remaining 1/4 cup Parmesan cheese. Bake uncovered for 50 to 60 minutes or until the egg is puffed and golden around the edges and fully cooked in the center. Sprinkle with chopped parsley or basil. Let cool for 5 to 10 minutes before serving.

This recipe and photo came from a new cookbook I received from Midwest Living. What could be better than potatoes and cheese--and whipping cream! Oh my! This dish has got to be a little piece of heaven!

- 1. In a medium saucepan, combine cream and garlic; bring just to a simmer over medium heat. Simmer uncovered for 5 minutes (DO NOT BOIL). Remove from heat; let stand.
- 2. Generously butter a 3- to 3-1/2-quart au gratin or baking dish. Layer one-third of potato slices in dish. In a small bowl combine grated cheese, thyme, salt, nutmeg, and pepper. Sprinkle one third of cheese mixture over potato layer. Repeat layers twice. Pour garlic/cream mixture over all. Cover with foil.
- 3. Bake in a preheated 350-degree oven for 1-1/4 to 1-1/2 hours or until potatoes are almost tender. Uncover; bake 20 to 30 minutes more, or until liquid is absorbed and potatoes are browned. If dish is broiler safe, broil 3 to 4 inches from heat for 2 to 3 minutes or until top is crisp and brown. Let stand 10 minutes. Add desired toppings.
PARMESAN POTATOES AU GRATIN
This recipe represents my philosophy of cooking to its best - cooking with love. A good test to see if you have enough cream in the recipe is to gently press on the top of the layers (once finished). If there is enough cream, you should see it coming out on the sides, but not overflowing. Letting the au gratin rest is very important . . . even though it is so delicious that you would want to jump right in. - Preheat oven to 325°. Combine the first five ingredients. Layer a third of the potatoes and 2/3 cup cheese mixture in a greased 8-in. square baking dish; repeat layers. - Preheat oven to 400°F. Butter 13 x 9 x 2-inch glass baking dish. Layer 1/3 of potatoes evenly in prepared dish. Sprinkle with salt and pepper. Drizzle with 1/3 of melted butter. Top with 1/3 of Parmesan cheese. Repeat layering twice more with remaining potatoes, butter and Parmesan cheese. Pour milk evenly over.
- Bake potatoes 15 minutes. Reduce temperature to 350°F. Continue to bake until potatoes are tender, top is golden brown and most of milk is absorbed, about 1 hour longer. Remove from oven; let stand 10 minutes and serve.
POTATO GRATIN
In this classic gratin, thinly sliced potatoes soak up all the goodness of a milk-and-cream mixture that has been spiked with nutmeg. A sprinkling of grated Gruyere cheese on top becomes gooey in the oven. Using a mandoline creates thin slices, which helps the gratin cook more evenly.

- Preheat oven to 375 degrees. Peel potatoes, and place in a bowl of water to prevent discoloring. Rub inside of a 9-by-12-inch oval baking dish with cut sides of garlic. Heat cream, milk, nutmeg, and 1 1/2 teaspoons salt in a medium saucepan over medium heat until bubbles form around edge. Season with pepper. Remove from heat.
- Meanwhile, slice potatoes 1/8 inch thick; transfer to a bowl. Pour warm cream mixture over top. Mix well, using your hands to separate and coat potatoes, and transfer to prepared dish. Gently push potatoes down, and pour cream mixture from bowl over top. Sprinkle with Gruyere. Bake (with a baking sheet placed on the rack below to catch drips) until potatoes are fork tender and top is bubbling and brown, about 1 hour and 15 minutes.

- Add potato and water to a large microwave safe dish and cover. Microwave on high for 3-4 minutes, or just until potatoes are crisp and tender, but not mushy. Do not over cook.
- Meanwhile, heat olive oil in a large cast iron skillet over medium heat. Add red pepper and onion and sprinkle with garlic powder, parsley, rosemary, and smoked paprika. Season with salt and black pepper, to taste, and stir to combine.
- Cook, stirring frequently, until the pepper and onion soften and develop a bit of color, approximately 3-4 minutes.
- Drain excess moisture from the potatoes and pat dry. Transfer to the skillet and season with additional salt and black pepper, as desired.
