Potato and Olive Salad image

Serve this warm mayo-free potato salad with roasted lamb or broiled fish fillets.

1 1/2 pounds new potatoes, halved or quartered if large
1 tablespoon coarse salt, plus extra for seasoning
2 tablespoons extra-virgin olive oil
1 teaspoon sherry vinegar
1/3 cup chopped pitted Kalamata olives
1 tablespoon finely chopped fresh parsley
Ground pepper

Steps:

  • In a large saucepan, cover potatoes with 2 inches cold water. Add salt and bring to a boil over high heat; cook until potatoes are tender when pierced with a knife, about 10 minutes. Drain potatoes and return to pan. Add oil, vinegar, olives, and parsley. Toss to combine, and season with salt and pepper.

3 garlic cloves
3 tablespoons Sherry vinegar
1 teaspoon salt
1/4 teaspoon dried hot red-pepper flakes
5 tablespoons olive oil
3 pound hot cooked small (2-inch) boiling potatoes, quartered
2/3 cup bottled roasted red peppers (4 ounces), rinsed, patted dry, and chopped
2/3 cup fresh flat-leaf parsley leaves
1/3 cup pitted brine-cured black olives, halved

Steps:

  • Mince garlic and mash to a paste with a pinch of salt using side of a large heavy knife. Transfer to a large bowl and whisk in vinegar, salt, and red-pepper flakes, then whisk in oil.
  • Add hot potatoes to vinaigrette and toss to coat. Let stand until potatoes cool to warm, about 30 minutes, then stir in peppers, parsley, and olives. Serve warm or at room temperature.

TOMATO-POTATO SALAD WITH OLIVE VINAIGRETTE

2 pounds small Yukon Gold or red-skinned potatoes
Kosher salt
1/2 cup extra-virgin olive oil
1/4 cup white wine vinegar
Freshly ground pepper
1/3 cup pitted nicoise olives
2 stalks celery, diced, plus 1/4 cup roughly chopped celery leaves
2 pounds beefsteak tomatoes, chopped
1/4 cup fresh basil, torn
1/4 cup chopped fresh chives

Steps:

  • Place the potatoes in a large pot; cover with water by 2 inches. Season generously with salt and bring to a boil. Reduce to a simmer and cook until the potatoes are tender, about 20 minutes. Drain the potatoes; let cool 15 to 20 minutes.
  • Whisk the olive oil, vinegar, 1 teaspoon salt and a few grinds of pepper in a medium bowl; stir in the olives and diced celery. Halve the potatoes and transfer to a shallow bowl. Scatter the tomatoes over the potatoes, then drizzle with the vinaigrette. Scatter the celery leaves, basil and chives over the salad and season with salt and pepper.

3 medium Yukon Gold potatoes, unpeeled
¼ medium red onion, thinly sliced
3 tablespoons sliced pitted Kalamata olives
3 tablespoons red wine vinegar
2 tablespoons chopped fresh parsley
1 ½ tablespoons olive oil
1 teaspoon chopped fresh thyme leaves
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon white sugar

Steps:

  • Slice potatoes 1/4 inch thick and place in a large saucepan. Add salted water to cover by about 1 inch. Bring to a boil over medium-high heat. Reduce heat to medium and simmer potatoes until tender, 6 to 8 minutes; do not overcook. Drain and transfer to a bowl.
  • Add red onion, and Kalamata olives to the warm potatoes; toss gently.
  • Whisk vinegar, parsley, olive oil, thyme, salt, pepper, and sugar together in a small bowl. Pour dressing over potato mixture, tossing gently. Serve warm or at room temperature.

Moroccan olives are among the best in the Mediterranean and find their way into many salads. Look for good ones for this salad, which is best made in advance so that the dressing and flavors are absorbed. The potatoes will attract the dressing and flavors better if they are peeled.

Number Of Ingredients 10

1 pound new potatoes
3 tablespoons extra virgin olive oil
Juice of 1/2 lemon
1/2 teaspoon paprika
1/2 teaspoon ground cumin
Pinch of chili pepper
Salt
2 tablespoons chopped flat-leaf parsley
1/2 large mild red or white onion, chopped finely
12 black olives

Steps:

  • Peel the potatoes and boil them in salted water until tender. Drain them and cut them in half, or quarters if large, but leave them whole if small.
  • Prepare the dressing in the serving bowl. Mix the oil with the lemon juice, paprika, cumin, chili pepper, and salt.
  • While still warm, turn the potatoes in the dressing, add the parsley, onion, and olives and mix gently.

1 ½kg small new potato , cut into halves or quarters
2 tbsp lemon juice
1 tsp harissa or chilli paste
1 red onion , finely chopped
6 tbsp olive oil
200g kalamata olive

Steps:

  • Cook the potatoes in boiling salted water for 15-20 mins until tender, then drain well and tip into a large bowl.
  • Tip the lemon juice, harissa, salt and pepper into a bowl and whisk well, then add the onion and olive oil and whisk again.
  • Pour over the potatoes and olives, toss well, then leave to cool. Can be covered and chilled for up to 1 day.

Posting for ZWT 2006 this is an appetizer or cold side dish. Sounds nicely spiced and very interesting. I would think the spices in this could be played with a little bit.

1 lb baby potatoes
salt, as needed
1/2 teaspoon sugar
1 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
2 -3 garlic cloves, chopped
15 -20 mediterranean oil-cured black olives (such as Kalamata)
3 tablespoons extra virgin olive oil
1/2 lemon, juice of (to taste)

Steps:

  • Place the potatoes in a pot with water to cover; add 1 teaspoon salt and the sugar.
  • Bring to a boil over high heat then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  • Drain the potatoes, return them to the pan and shake in the dry pan for a few minutes, until thoroughly dry.
  • Cut the potatoes into thick slices, several per potato, or into quarters.
  • Place in a bowl and toss with the cumin, paprika, cayenne, garlic and olives.
  • Dress with the olive oil, lemon juice and salt; refrigerate until ready to serve, or serve at room temperature.
