POSSUM'S FRAGUNE (COLD CALZONE)
Fragune has always been an Easter-time staple back home, and Possum's momma shared her recipe! Fragune is basically a cold calzone - in fact, you can follow the steps outlined below, only instead of "serving cold", just "serve hot" with a topping of tomato sauce, and boom, you've got yourself a calzone. We normally ate these around breakfast time, but they never really lasted all that long - we couldn't help but sneak some between meals, too. For some variation, try substituting different salamis instead of pepperoni, or adding a portion of mozzarella cheese to the recipe.

Steps:
- Mix together all ingredients except dough and butter, then divide into 4 equal portions.
- On a floured surface, divide each loaf of bread dough in half.
- Roll out dough into a rectangle.
- Place cheese mixture on one side of the rectangle, then fold over opposite side, pressing edges together and fluting edges with a floured fork.
- Repeat above steps with remaining 3 portions of cheese mixture & bread dough.
- Place each rectangle of filled dough onto a greased cookie sheet.
- Prick tops slightly, and bake at 350 degrees until golden brown. (Cooking times will vary depending on your oven!).
- Remove carefully from cookie sheet and brush tops and seams with melted butter.
- Turn over onto a cooking rack.
- When cooled, refrigerate.
- Slice into "fingers" to serve.
- Enjoy!

REAL ITALIAN CALZONES
This is real calzone, because there is no tomato sauce INSIDE of it! We eat it at least once a week. Have a bowl of tomato or spaghetti sauce on the table for people to top their calzone with, if desired.

- To Make Dough: In a small bowl, dissolve yeast in water. Add the oil, sugar and salt; mix in 1 cup of the flour until smooth. Gradually stir in the rest of the flour, until dough is smooth and workable. Knead dough on a lightly floured surface for about 5 minutes, or until it is elastic. Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40 minutes, or until almost doubled.
- To Make Filling: While dough is rising, combine the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl. Mix well, cover bowl and refrigerate to chill.
- Preheat oven to 375 degrees F (190 degrees C).
- When dough is ready, punch it down and separate it into 2 equal parts. Roll parts out into thin circles on a lightly floured surface. Fill each circle with 1/2 of the cheese/meat filling and fold over, securing edges by folding in and pressing with a fork. Brush the top of each calzone with egg and place on a lightly greased cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 30 minutes. Serve hot.

CLASSIC MEAT LOVER'S CALZONES RECIPE BY TASTY
Making a calzone from scratch might seem intimidating but this meat lover's calzone recipe makes it easy. Have fun kneading the dough, rolling it out, and stuffing it with a delicious sausage filling. If you aren't sharing these, freeze them and reheat later for a quick lunch or dinner.

- Make the dough: In a medium bowl, combine the warm water, yeast, flour, and salt. Mix with a rubber spatula until well-combined and the dough comes together into a ball.
- Lightly flour a clean surface, then turn the dough out and knead for 1-2 minutes to smooth and encourage gluten development. Shape the dough into a ball.
- Drizzle the olive oil in a clean large bowl. Add the dough ball and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
- Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
- While the dough is rising, make the filling: Add the sausage to a medium nonstick pan over medium heat and cook until no longer pink, 5-6 minutes. Add the onion, salt, and pepper and continue to cook until the sausage is browned, about 5 minutes more. Remove from the heat and let cool.
- After the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 4 portions, then roll each into and round about ¼-inch (½ cm) thick.
- Spread ¼ of the sauce over one half of each dough round, leaving a ½-inch (1 cm) border along the edge. Top each one with 2 slices of ham, 5 pepperoni, ¼ of the sausage and onion mixture, and ¼ cup (25 G) of mozzarella cheese.
- Lightly beat the egg with a pinch of salt. Brush the egg wash on the border of the dough, fold the other half over, and press the edges together. Starting from one corner, fold the dough over itself in a twist. Tuck the other corner underneath. Transfer the calzones to the prepared baking sheet. Brush lightly with egg wash and score the tops with a knife to allow steam to escape.
- Bake for 15-17 minutes, until golden brown. Let cool for 5 minutes.
- Serve the calzones with marinara sauce for dipping, if desired.
- Enjoy!

- Roast Opossum:.
- The opossum is a very fat animal with a peculiarly flavored meat.
- It is dressed much as one would dress a suckling pig, removing the entrails, and if desired, the head and tail.
- After it is dressed, wash thoroughly inside and out with hot water.
- Cover with cold water to which has been added 1 cup of salt.
- Allow to stand overnight. In morning, drain off the salted water and rinse well with clear water.
- Stuff opossum with opossum stuffing (stuffing recipes next); sew opening or fasten with skewers.
- Place in roaster, add 2 tablespoons water and roast in moderate oven (350°F) until tender and richly browned, about one and one half hours.
- Baste every 15 minutes with drippings.
- Remove skewers or stitches, and place on heated platter.
- Skim fat from gravy remaining in pan.
- Opossum Stuffing:.
- Brown onion in fat.
- Add finely chopped opossum liver and cook until liver is tender.
- Add crumbs, a little red pepper, Worcestershire sauce, egg, salt and water to moisten.

- Combine flour, salt and yeast in a large mixing bowl. Add liquid ingredients and mix with paddle or beaters for 4 minutes on medium speed. Gradually add additional flour if needed and knead with dough hook(s) 5 to 7 minutes until smooth and elastic. Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until dough doubles and passes the ripe test.
- Preheat oven to 375°. Turn dough onto lightly floured surface; punch down to remove air bubbles. Divide dough into 6 pieces. Shape to balls. Let dough relax 10 minutes. On floured surface, roll each piece into an 8-inch circle.
- Spoon pizza sauce, cheese and toppings onto half of each circle. Make egg wash. Moisten edge of dough with egg wash mixture. Fold in half; seal edge by pressing with fork. Prick each top; brush with remaining egg mixture. Bake on greased cookie sheets for 30 to 35 minutes or until golden brown. Serve immediately.
