BUTTERY STUFFED ARTICHOKES



Buttery Stuffed Artichokes image

Filled with seasoned Panko & drizzled with olive oil, these Stuffed Artichokes are baked until golden brown and tender!

2 large artichokes
1 lemon (divided)
1 tablespoon olive oil
1 cup Panko bread crumbs
2 tablespoons butter
¼ teaspoon garlic powder
½ teaspoon lemon zest (from lemon above)
⅔ cup parmesan cheese (shredded, divided)
salt & pepper to taste

Steps:

  • Rinse the artichokes and trim the bottom of the stems. Cut off about 1" of the top of the artichoke. Using scissors, cut the tip off of each leaf. Rinse artichokes under cool water.
  • Bring a large pot of salted water to a boil. Add artichokes and simmer 30-45 minutes or until leaves are easily pulled off. Drain well.
  • Meanwhile, preheat oven to 425°F.
  • Combine bread crumbs, butter, garlic powder, lemon zest, and ¼ cup of the parmesan cheese in a small bowl. Stuff breadcrumb mixture between the leaves of the artichoke.
  • Place on a baking sheet, top with remaining parmesan cheese, and drizzle with olive oil. Bake 8-10 minutes or until crumbs are golden. Broil 1-2 minutes if desired.
  • Serve warm with lemon wedges and melted butter or aioli for dipping.

15 ounces canned artichoke hearts
1/4 cup butter
2 tablespoons blue cheese (to taste)
1 garlic clove, chopped
1 shallot, chopped
1/2 lime

Steps:

  • Drain artichokes, and fry in two tablespoons of butter until a bit dark, I like to fry these until some of the leaves are brown.
  • Separately melt the rest of the butter, add the shallot and cook a bit 2 minutes, add garlic cook a bit more and then add blue cheese till it melts with the butter. Then add 1/4 lime and mix, add the artichokes and mix.
  • Serve and lastly squeeze the other half of the lime on top. Enjoy.

1 package (12 ounces) fettuccine
1 cup sliced fresh mushrooms
1 can (14 ounces) water-packed artichoke hearts, drained and chopped
1-1/2 cups Alfredo sauce
1/4 cup crumbled blue cheese

Steps:

  • Cook fettuccine according to package directions., Meanwhile, place a lightly oiled large nonstick skillet over medium-high heat. Add mushrooms and artichoke hearts; cook and stir until mushrooms are tender. Stir in Alfredo sauce; bring to a boil over medium heat. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally., Drain fettuccine, reserving 1/3 cup pasta water. Add fettuccine to artichoke mixture; toss to combine, adding reserved pasta water if desired. Sprinkle with blue cheese.

Steamed Artichokes With Lemon Butter image

Large, plump artichokes are generally better for steaming than smaller ones. They may take longer to soften, but you'll end up with plenty of meaty petals to pull off and dip into the lemon butter. This recipe gives instructions for steaming the artichokes in a traditional pot, but a pressure cooker (either electric or stovetop) is a faster option if you have one. See the Note below for instructions.

2 large artichokes, or 4 medium artichokes
1 whole lemon, halved, plus 2 tablespoons lemon juice
1 garlic clove, finely grated or minced
Large pinch of kosher salt
4 tablespoons melted butter

Steps:

  • Pull off any brown or very tough outer leaves from one artichoke. Use a sharp knife to cut off the top 1 inch of artichoke, then rub with the cut side of the lemon. Use kitchen shears or scissors to cut the pointy tops off the remaining outer layer of leaves. Use a vegetable peeler or paring knife to peel the stem down to its tender pale-colored core; immediately rub the stem with a lemon half. Use your fingers to separate the center leaves to expose the fuzzy pale choke sitting on top of the heart. Use a grapefruit spoon (or other spoon) to scoop out the choke, and rub a little lemon juice over the exposed flesh. Repeat with the remaining artichokes.
  • Fill a medium pot with 2 inches of water, place a steamer basket inside, and bring water to a simmer. Place the artichokes bottoms down on the rack, cover with a tight-fitting lid, and simmer over low heat until you can easily pull off an artichoke leaf, 45 minutes to 1 1/2 hours. Remove from the steamer basket and transfer to a serving platter.
  • Meanwhile, in a small bowl, whisk together the lemon juice, garlic and salt. Slowly whisk in butter. To serve, have everyone pull off the leaves and dunk the meaty bottoms into the lemon butter, swirling to mix butter with each dip (the butter will separate as it sits).

1 cup KRAFT Real Mayo Mayonnaise
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup crumbled ATHENOS Blue Cheese
1/2 cup KRAFT Shredded Parmesan Cheese
4 green onions, sliced
thin wheat snack crackers

Steps:

  • Preheat oven 350°F. Place all ingredients in food processor container; cover. Process just until blended, but not completely smooth.
  • Spoon into 9-inch pie plate.
  • Bake 20 to 25 minutes or until lightly browned. Let stand 5 to 10 minutes before serving. Serve with crackers.
