GRANDMA CARDOZA'S PORTUGUESE SWEET BREAD
Grandma Cardoza's sweet and tasty Portuguese Sweet Bread

Steps:
- Dissolve 1 package of yeast and 2 tbsp. sugar in 1/2 cup warm water. Let stand until frothy and bubbly (about 5-15 minutes).
- In a small saucepan, combine milk and butter and bring to a simmer. Remove from heat and let cool a bit.
- Combine flour and salt. My grandma's recipe calls for sifting the flour, so I sift as grandma suggests.
- In a mixing bowl, beat eggs and sugar together until mixed well. Next add the milk and butter mixture, the lemon extract, the anise extract, and the yeast mixture to the eggs and sugar.
- Gradually add the 6 cups of flour to the mix.
- Knead the bread until very smooth, which takes about 15 to 20 minutes.
- Cover the dough, place in a warm area, and let rise until the dough doubles in size. This takes approximately 2 hours.
- Punch dough down, divide, and form into rolls, large round loaves, or braided loaves.
- Place the dough on a buttered cookie sheet (I use parchment paper) or in a pie pan, cover, and let rise again for roughly an hour.
- If you are making Folar da Pascoa, make sure the eggs are boiled and tuck them in the loaves before baking.
- Bake at 350 F for 25-30 minutes. When the bread starts to brown, I brush the top with milk, and this helps give a shiny, golden top to the bread. As soon as the bread is ready, I butter the top.
- Enjoy right from the oven, if you choose!

PAO DE MEL (PORTUGUESE HONEY BREAD)
This sweet bread is so yummy. Note: you can cut the cooking time if you use two small loaf pans instead of one large one. If you use the smaller pans, bake for 40 minutes or until toothpick comes out clean.

- Spray one large loaf pan with the cooking spray and set aside.
- In a large bowl, combine flour, sugar, cocoa, cloves and baking powder.
- Add eggs, honey, milk and butter; combine well.

- Bake for 1 hour or until a toothpick inserted in the center comes out clean.
- Let cool, then drizzle melted chocolate over the top.

PAO: PORTUGUESE FARM BREAD

- Combine the yeast, semolina flour, and water by pulsing 10 seconds in a large heavy-duty food processor (about 11 cup capacity) fitted with the metal chopping blade. Scrape down the side of the work bowl, recover, and let stand until foamy, about 15 minutes.
- With the machine running, add 1 1/2 cups of the all-purpose flour down the feed tube. It's easier if the flour is poured from a spouted measuring cup into a wide-mouth canning funnel inserted in the feed tube, or a stiff piece of paper rolled into a cone (the opening at the bottom should be at least 1-inch across).
- Using a plastic spatula scrape the work bowl and, if necessary, redistribute the dough so that it evenly surrounds the blade. Be careful of the blade. Add the salt and remaining flour, distribute evenly over the dough, and pulse for 10 seconds. Again scrape the work bowl and redistribute the dough.
- Pulse the dough for 20 seconds nonstop, shut the machine off, and let the dough rest covered in the work bowl for 5 minutes. Now pulse for another 20 seconds.
- Leaving the blade in place, carefully redistribute the dough until it's of uniform thickness. Recover the work bowl, keeping the pusher from the feed tube in. Note the level of the dough, estimate what it should be when doubled in bulk, and mark that level on the side of the work bowl.
- Let the dough rise in the sealed work bowl until doubled in bulk, about 1 hour. Meanwhile, lightly coat an 8-inch springform pan or 8-inch pie pan lightly with nonstick cooking spray and set aside.
- When the dough has fully doubled, pulse quickly 4 to 5 times to punch down, then pulse for 20 seconds nonstop. Let the dough rest in the sealed work bowl for 5 minutes, then pulse for another 20 seconds. The dough will roll into a ball and leave the sides of the work bowl reasonably clean.
- Turn the dough onto a lightly floured surface, shape into a ball, then roll in the flour to dust lightly. Place the loaf in the prepared pan, cover with a clean, dry dish towel, and set in a warm, dry spot until nearly doubled in bulk, this will take about 30 minutes.
- When the dough has risen for 10 minutes, position 1 rack in the middle of the oven and slide a second rack in the slot just below. Place a large shallow baking pan on the lower rack?I use a 15 1/2 by 10 1/2 by 1-inch jelly roll pan?and half-fill with water. Preheat oven to 500 degrees F.
- Center the risen loaf on the middle rack and bake uncovered for 15 minutes. Reduce the oven temperature to 400 degrees F. and continue to bake until richly browned and hollow sounding when thumped, about 20 to 25 minutes longer.
- Remove the bread from the pan as soon as it comes from the oven, set right-side up on a wire rack, and cool to room temperature before cutting.
PORTUGUESE HONEY, SPICE AND ALL THINGS NICE, FRUIT BREAD.
This recipe is for a Portuguese bread containing cranberries, candied fruit, nuts and port... has been adapted from Gourmet. Special equipment: 6 (6 by 3 1/4 by 2 inch) metal loaf pans of(2 to 2 1/4 cup capacity) Note: this bread keeps, wrapped tightly in plastic wrap and then foil, at room temperature 1 week. - Put oven rack in middle position and preheat oven to 325°F (160 C).
- Butter 6 (6 by 3 1/4 by 2 inch) metal loaf pans. (2 to 2 1/4 cup capacity)
- Put cranberries, candied fruit, and Port together in a small saucepan and heat until it simmers. Remove from heat, cover and set aside.
- Coarsely chop walnuts using a food processor then add the flour, salt, baking soda and spices and pulse just enough to combine.
- Cream together the butter and sugar until pale and fluffy, and then add the eggs 1 at a time, beating each in well.
- Stir together yeast and warm water in a small bowl and let stand until foamy, about 5 minutes. If your mixture doesn't foam, discard it and start over with new yeast.
- Starting with one and a half cups of flour mixture added to butter mixture and mixing with an electric beater at low speed . add each of the following and combine after each addition : molasses, then another one and a half cups of flour mixture, then the yeast mixture, the final one and a half cups of flour mixture. Then hand stir in the candied fruit mixture.
- Divide batter among pans, smooth the tops. You don't need to let the batter rise.
- Bake for about 50 to 60 minutes or until a wooden pick or skewer inserted in centers of loaves comes out clean.
- Cool in the loaf pans on a rack for about 10 minutes, then remove loaves from pans and cool completely on rack.

NO-KNEAD BROA (PORTUGUESE CORN BREAD)
Broa is a very rustic recipe from Portugal and bears little resemblence to American southern corn bread. It's a very dense loaf that's perfect for sopping up hearty soups. Another great recipe from Artisan Bread in Five Minutes a Day cookbook.

- MIXING INSTRUCTIONS:.
- Mix the yeast and salt with the water in a 5 quart bowl or a lidded (not airtight) food container.
- Add oil and honey.
- Mix in the remaining dry ingredients without kneading, usings a spoon or a heavy-duty stand mixer with dough hook.
- Note:: If not using a mixer you may need to use wet hands to incorporate the last bit of the flour.
- Cover (not airthight) and allow to rest at room temperature until the dough rises and collapses (or flattens on top), approximately 2 hours.
- The dough can be used immediately after rising, however it is easier to handle when cold.
- Refrigerate in a lidded (not airtight) container and use over the next 7 days.
- BAKING INSTRUCTIONS:.
- Dust the surface of the refrigerated dough with flour and cut off a grapefruit size piece (1 lb.).
- Dust with more flour and quickily shape into a ball by stretching the surface of dough around to the bottom on all four sides, roating the ball a quarter-turn as you go.
- Flatten the top slightly and allow to rest on a cornmeal-covered pizza peel for 40 minutes.
- Twenty minutes before baking time, preheat oven to 450º F, with a baking stone placed on the middle rack.
- Place a cast iron skillet or empty broiler tray on the bottom rack.
- Sprinkle loaf liberally with cornmeal and slash the top using a serrated bread knife.
- Slide loaf directly onto the hot stone.
- Pour 1 cup of hot tap water into the skillet or broiler tray and quickly close the door.
- Bake for about 30 minutes or until top of crust is dark brown and firm. Smaller or larger loaves will require adjustments in baking time.
- Remove from oven and cool on wire rack.
- Allow to cool before slicing.
