2 stalks celery, finely chopped
3 tablespoons butter, divided
2 pounds ground sirloin
1/4 cup bread crumbs
1 (1-ounce) packet au jus gravy mix (recommended: McCormick)
4 hamburger buns, toasted

Steps:

  • Preheat oven to 400 degrees F.
  • In a large, oven-proof skillet, over medium heat, saute celery in 1 tablespoon butter, about 4 minutes. Remove celery and let cool.
  • In a medium bowl, stir to combine ground sirloin, bread crumbs, au jus mix, and sauteed celery. Form into 4 patties.
  • Melt remaining butter in skillet. Carefully place patties in skillet and cook 2 to 3 minutes, or until browned on 1 side. Flip patties and place in preheated oven. Cook for 12 to 15 minutes for medium doneness.
  • Serve hot on toasted buns with desired condiments.

SIRLOIN PORTOBELLO AND PATE BURGER

6 tablespoons unsalted butter, plus more for greasing
1 1/2 pounds ground sirloin
Kosher salt and freshly ground black pepper
1/2 cup red wine
4 burger-size portobello mushroom caps
2 shallots, finely chopped
4 slices pate
4 brioche burger buns
Truffled Oven Fries, for serving, recipe follows
2 russet potatoes
2 tablespoons olive oil
Kosher salt
1 tablespoon white or black truffle oil

Steps:

  • Preheat the oven to 300 degrees F. Butter a glass baking dish large enough to hold the burgers.
  • Sprinkle the meat with salt and pepper and form it into 4 patties. Place them into the prepared baking dish and bake until cooked through, 25 to 30 minutes. When they are done, set aside and keep warm. Add a little bit of wine to the pan and scrape up all the browned bits on the bottom. Set aside.
  • While the burgers are cooking, melt 2 tablespoons of the butter in a medium skillet over medium heat. Fry the mushrooms until they are just tender. Remove from the pan and keep warm.
  • Add the shallots to the pan with another tablespoon of butter and cook until they are softened. Pour in the wine and reduce by half. Pour in the juices from the baking dish and reduce again. Strain into a small pitcher and keep warm, reserving the shallots. Put the pan back on the heat and melt a tablespoon of butter. Add the pate slices and cook until just warmed through, 1 to 2 minutes.
  • Add the remaining 2 tablespoons butter to another skillet and toast the buns in the buttery juices.
  • To build the burger, place a mushroom cap on top of a burger bun. Set a burger on top, a spoonful of the reserved shallots and then a slice of pate. Pour some of the red wine reduction over the whole thing and top with the bun. Repeat with the remaining burgers. Serve with Truffled Oven Fries.
  • Preheat the oven to 425 degrees F.
  • Peel the potatoes and cut them into 1/2- by 1/2-inch strips. Toss them with the olive oil, season with salt and spread them in a single layer onto a baking sheet. Bake, tossing once or twice, until golden brown and crispy, 25 to 30 minutes.
  • Put the hot fries into a large bowl, drizzle with truffle oil and season with salt. Toss well to coat and serve immediately.

8 thin slices white bread
Olive oil cooking spray
1 pound lean ground beef
1 pack (1-ounce) pot roast seasoning
1 egg, lightly beaten
2 tablespoons Worcestershire sauce

Steps:

  • Make the toasts 1 day ahead. Preheat oven to 400 degrees F.
  • Take 8 slices white bread and cut out 32 circles using a 1 3/4-inch round pastry cutter or an empty, clean 6-ounce tomato paste can. Arrange discs on an unlined sheet pan and spray lightly with olive oil. Toast rounds for 7 minutes. When cool, store in an airtight container.
  • Make the burgers the day of. Preheat oven to 400 degrees F.
  • Mix ground beef, seasoning, egg, and Worcestershire sauce in a large bowl. Form 1-inch meatballs using 1 tablespoon of meat mixture per ball. Arrange on a broiling pan, leaving an inch space between meatballs. Using index finger, gently poke holes in the middle of each meatball. Bake for 12 minutes. Turn temperature to broil and cook for another 5 minutes. Let stand 7 minutes before transferring to toasts.
  • Gently fill each burger hole with ketchup or mustard. Serve warm.

PORTOBELLO BURGERS

2 tablespoons brown spicy mustard
3 tablespoons balsamic vinegar
1/2 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon hot sauce
4 portobello mushroom caps
4 slices Gouda cheese
1/2 cup mayonnaise
4 hamburger rolls
1 red onion, sliced
4 leaves butter lettuce
1 tomato, sliced

Steps:

  • Combine marinade ingredients. Place caps into a baking dish and pour marinade over top. Use a brush to make sure all caps are covered with the marinade. Set aside and let marinate up to 2 hours.
  • Remove the portobellos from marinade (do not discard marinade) and place gill side down on a preheated gas, electric or charcoal grill over medium-high heat. Grill 3 to 4 minutes per side. Top each cap with cheese 2 minutes to melt before they are finished grilling.
  • In a medium bowl combine 1/2 cup mayonnaise and 2 tablespoons of the marinade.
  • Spread the flavored mayonnaise onto each bun and top with portobellos. Serve with sliced onion, lettuce and tomato.

15 oz black beans, 1 can, drained and rinsed
½ teaspoon salt
1 clove garlic, minced
2 large portobello mushroom caps, finely chopped
½ cup walnuts, finely chopped
¼ cup parsley, finely chopped
2 tablespoons ground flaxseed
4 tablespoons water

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a large bowl, microwave black beans for 1 minute, or until softened.
  • Add salt and garlic. Mash until black beans are finely mashed.
  • Add mushrooms, walnuts, and parsley.
  • In a small bowl, mix ground flax and water and stir until thoroughly combined.
  • Add flax mixture to the mushroom mixture and mix thoroughly.
  • Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment-lined sheet pan.
  • Bake for 30 minutes, or until firm and browned, flipping over halfway through.
  • Serve burgers with your favorite fixins.

2 tablespoons balsamic vinegar
1 tablespoon olive oil
3 garlic cloves, minced
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
Dash salt
Dash pepper
2 large portobello mushrooms, stems removed
2 slices reduced-fat provolone cheese
2 hamburger buns, split
2 lettuce leaves
2 slices tomato

Steps:

  • In a small bowl, whisk the first seven ingredients. Add mushroom caps; let stand for 15 minutes, turning twice. Drain and reserve marinade. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill mushrooms, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until tender, basting with reserved marinade. Top with cheese during the last 2 minutes. , Serve on buns with lettuce and tomato.
