TRAIL MIX PORRIDGE



Trail Mix Porridge image

EFFORT: NOT MUCH PREP TIME: 15 MINUTES COOK TIME: 6 HOURS KEEPS ON WARM: 1 HOUR The ingredient list is designed for use in a medium (4- to 5 1/2-quart) slow cooker. See the cook's notes for ingredient lists for small (2- to 3 1/2-quart) and large (6- to 8-quart) models.

Yield Serves: 6 to 12

Number Of Ingredients 11

6 cups water
1 1/2 cups chopped fresh cranberries
3/4 cup pearled barley
3/4 cup packed light brown sugar
1/2 cup walnut pieces, toasted and coarsely ground
6 tablespoons medium-ground bulgur (or #2)
6 tablespoons corn (or hominy) grits
6 tablespoons millet
6 tablespoons maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Stir all the ingredients in a slow cooker until the maple syrup has dissolved and all the grains are moistened. Cover and cook on low for 6 hours, or until the porridge is creamy and the grains are tender.

7 ounces dried fruit, approximately 3 cups
5 ounces mixed nuts, approximately 1 cup
3 1/2 ounces granola, approximately 1 cup

Steps:

  • Combine the fruit, nuts and granola in a large bowl. To store trail mix, place in an airtight glass container. Keep container in a cool dry place for up to 1 month.
  • Cook's Note: Fruit dried at home should be pliable, but not sticky and you should not be able to squeeze moisture from it. If the mixture becomes soft overnight, your fruit is not dry enough.

A trail mix of my own creation that my family absolutely loves. I love the smell the caramelized maple syrup makes in my house when I make this. The measurements are an approximation (as well as the servings!), use your good judgment and own taste when making. Enjoy!

2 tablespoons butter (Earth Balance is an excellent brand) or 2 tablespoons margarine (Earth Balance is an excellent brand)
1/3 cup plain unsalted almonds
1/3 cup walnuts
1/3 cup pecans
1/4 teaspoon salt
1/4 cup maple syrup
1/3 cup unsweetened dried shredded coconut
1/4 cup pitted and chopped delgate dates
1/4 cup pitted and chopped medjool dates
1/4 cup dried sweetened cranberries
1/4 cup roasted salted sunflower seeds

Steps:

  • Melt butter in skillet.
  • Add almonds, walnuts and pecans to the butter and sprinkle salt on top. Sauté nuts until butter coats them and they begin to toast. (3 to 4 minutes).
  • Add maple syrup (will bubble up) and sauté nuts until it begins to caramelize. (about 2 to 3 minutes).
  • Sprinkle coconut on top of nuts and stir until well coated over all of the nuts.
  • Remove skillet from heat and place nuts in large bowl.
  • Stir in dates, cranberries, and sunflower seeds until well incorporated.

With a child allergic to tree nuts and the schools not allowing you to bring in peanuts, I had to create my own trail mix. I love all the seeds, but more importantly, my daughter likes it too! The variations are countless, so use this as a base, or as-is!

  • Makes ~ 1 pound of trail mix.
  • Serving size: 1 ounce.
  • Variations:
  • Add other dried fruit like pineapple, cherries, cranberries, apples.
  • Add low-fat granola, rice chex or cheerios.
  • Add yogurt covered pretzels or chocolate covered rasins.

1 cup shortening or 1 cup margarine, softened
1 cup packed brown sugar
1/2 cup honey
2 eggs
1 1/3 cups all-purpose flour
1/2 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oats
3/4 cup dried cranberries
3/4 cup chopped dried apricot
1 cup slivered almonds
3/4 cup sunflower seeds
1/3 cup flax seed
1/4 cup sesame seeds
3/4 cup chocolate chips

Steps:

  • Preheat the oven to 375°F.
  • Cream the shortening, brown sugar, honey and eggs together.
  • Combine the flour, wheat germ, baking soda and salt.
  • Add to the creamed mixture gradually and beat until blended.
  • Stir in the oats, fruits, nuts, seeds and chocolate chips.
  • Mix well.
  • Drop dough by heaping tablespoons about 2 inches apart onto a greased cookie sheet.
  • Bake for 10-15 minutes or until golden.
  • Cool for 5 minutes on the cookie sheet, then transfer cookies to a rack and cool completely.
