GRILLED PORK CHOPS WITH ORANGE JALAPEñO GLAZE



Grilled Pork Chops with Orange Jalapeño Glaze image

Michael Symon created this recipe with a Knob Creek whiskey infusion for the brand, although this pork chop recipe would be great at any tailgate.

6 pork chops (bone in)
olive oil
freshly ground black pepper
orange and jalapeño knob creek rye glaze
1/4 cup knob creek rye
1/2 gallon fresh-squeezed orange juice
2 ounce fresh-squeezed lime juice
1 jalapeño, sliced in 1/2 with seeds in
1 cup brown sugar

Steps:

  • Let the pork chops come to room temperature by removing them from the fridge ½ an hour to 1 hour prior to cooking.
  • In the meantime, preheat your grill to a medium-high heat (a charcoal grill is recommended).
  • Brush the pork chops with a little olive oil, and season them with salt and freshly ground black pepper.
  • Once the grill is heated, place the pork chops on the grill to cook for about 5 minutes per side, or until they reach an internal temperature of 140 degrees, basting them with the glaze every minute or so until they start to develop a great fiery whiskey citrus crust.
  • Remove the pork chops from the grill and let them rest for 5 minutes.
  • Place all ingredients in a non-reactive pan over medium heat. Reduce by ½ (about 1 hour).

1 teaspoon salt
1 garlic clove, minced
2 to 3 fresh thyme sprigs or 1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 boneless pork loin roast (5 pounds)
GLAZE:
1 cup orange juice
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1/3 cup cold water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour. , Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. Add to orange juice mixture. Bring to a boil; cook and stir 2 minutes. Reserve 1 cup glaze for serving; brush half of remaining glaze over roast. , Bake until a thermometer reads 145°, 20-40 minutes longer, brushing occasionally with remaining glaze. Let stand 10 minutes before slicing. Reheat reserved glaze; serve with roast.

1 cup orange marmalade
1/2 cup chopped white onion
1/4 cup brown sugar, light or dark
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
2 jalapeños, one seeded, both finely chopped
1 clove garlic, grated on a rasp
Zest of 1 orange (if using fresh orange juice)
Kosher salt and freshly ground coarse black pepper
1 cup orange juice (preferably fresh)
3 to 4 pounds baby back pork ribs, sliver skin removed
Kosher salt and freshly cracked black pepper
1 orange, sliced into wedges, for serving

Steps:

  • For the sauce: Add the marmalade, onions, brown sugar, ketchup, Worcestershire sauce, jalapeños, garlic, orange zest, a pinch of salt and plenty of coarse ground black pepper to a medium pot on medium-high. Bring to a simmer and cook until slightly reduced and thickened. Remove from the heat and divide as follows: for the basting liquid, pour 1/4th of the sauce into a medium bowl and whisk in the orange juice. Pour the remaining sauce into a medium bowl to use as the glazing liquid.
  • For the ribs: Preheat the oven to 250 degrees F. Sprinkle the ribs generously on all sides with salt and pepper and place on a rimmed baking sheet, bone-side down. Brush lightly all over with the basting liquid. Pour all the remaining basting liquid into the bottom of the baking sheet and cover tightly with aluminum foil. Cook 3 to 5 hours, basting with the liquid every hour and re-covering tightly each time. After 3 hours, begin checking the ribs for doneness by gently pulling at the middle bone to see if it will release easily from the meat. The ribs are also done with about a 1/2-inch of the bone showing on the ends, or a pull at the middle bone feels like it will release the meat.
  • Once the ribs are cooked remove the aluminum foil and brush the ribs with the reserved sauce. Adjust the rack to the bottom of the oven, turn the broiler on high and cook the ribs until the glaze caramelizes, about 10 minutes.
  • Remove the ribs from the oven onto a cutting board, tent with aluminum foil and let rest for 10 minutes. Cut into 1- or 2-bone slices and serve with orange wedges.

Steps:

  • Preheat oven to 425°. Place green beans in a 15x10x1-in. baking pan coated with cooking spray; toss with oil, 1/4 teaspoon salt and 1/8 teaspoon pepper. Roast 15-20 minutes or until tender and lightly browned, stirring occasionally., Meanwhile, sprinkle pork chops with the remaining salt and pepper. Place a large nonstick skillet coated with cooking spray over medium heat. Add chops; cook, uncovered, 4 minutes. Turn chops over; spread tops with half of the jalapeno jelly., Cook, uncovered, 2-3 minutes longer or until a thermometer reads 145°. Turn chops over; spread tops with remaining jelly. Let stand 5 minutes. Serve with green beans.

4 bacon strips, diced
1 boneless pork shoulder butt roast (3 to 4 pounds)
1 large onion, thinly sliced
1-1/2 teaspoons minced garlic
1 jalapeno pepper, seeded and finely chopped
4-1/2 teaspoons chili powder
1 teaspoon salt
1 teaspoon pepper
1 cup chicken broth, divided
2/3 cup orange juice
1/4 cup all-purpose flour
Hot mashed potatoes, optional

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Cut roast in half. Brown meat in drippings on all sides., Transfer to a 5-qt. slow cooker, reserving 1 tablespoon drippings. Brown onion in the drippings. Add garlic; cook 1 minute longer. Add the jalapeno, chili powder, salt and pepper. Stir in 1/2 cup chicken broth, the orange juice and bacon; pour over roast., Cover and cook on low for 4-1/2 to 5 hours or until meat is tender., Remove pork and onion to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring to a boil., Combine flour and remaining broth until smooth. Gradually stir into the pan. three racks pork back ribs, about 8 pounds
sea salt and pepper
orange jalapeno glaze:
one jar orange marmalade, 18 ounces or 1 3/4 cups
1/2 cup chopped, seeded jalapeno peppers, three peppers
1/4 cup distilled white vinegar
four garlic cloves, minced
1 teaspoon dried rosemary crushed
1/2 teaspoons sea salt

Steps:

  • 1. preheat oven to 325°. Remove the thin papery membrane from the underside of rib racks if present; slice the tip of a small knife under the membrane at the third rib and loosen until you can peel it off. Cut each rack crosswise in half; season to taste with salt and pepper.
  • 2. To make the glaze, mix all ingredients in a small pan; heat to simmering. Cook, uncovered, over medium low heat, stirring occasionally, for 10 minutes. Let cool slightly.
  • 3. Place ribs in a single layer in one large or two small roasting pans. Cover the pans tightly with foil. Cook in the oven until the meat is fork tender, about 1 1/2 hours. Remove ribs from the oven; pour off drippings.
  • 4. Increased oven setting to 375°. Brush ribs with glaze. Return to the oven and cook, uncovered, until the ribs are glazed, watching carefully, about 10 minutes. Makes six servings.
  • 5. Note: to cook ribs on the grill, prepare grill for indirect grilling. Place ribs on grid over a drip pan or over off burners for gas grills. Grill, covered, till the meat is fork tender, about 1 1/2 hours. Brush with glaze during the last five minutes.
