PORK TENDERLOIN WITH HONEY GARLIC SAUCE



Pork Tenderloin with Honey Garlic Sauce image

Recipe VIDEO above. Tender, succulent pork fillet seasoned with a rub, seared until golden then baked in a Honey Garlic Sauce until sticky on the outside and juicy on the inside. Simply incredible! (And really, it's SIMPLE!)

2 pork tenderloin ((pork fillet), 500g/1lb each (Note 1))
1 1/2 tbsp olive oil ((or butter))
3 garlic cloves (, very finely chopped)
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
3 tbsp cider vinegar ((Note 2))
1 1/2 tbsp soy sauce, light or all purpose ((Note 2))
1/2 cup honey ((or maple syrup))

Steps:

  • Preheat oven to 180C/350F.
  • Mix Sauce ingredients together.
  • Mix Rub ingredients then sprinkle over the pork.
  • Heat oil in a large oven proof skillet (Note 3) over high heat. Add pork and sear until golden all over.
  • When pork is almost seared, push to the side, add garlic and cook until golden.
  • Pour sauce in. Turn pork once, then immediately transfer to the oven.
  • Roast 15 - 18 minutes or until the internal temperature is 68C / 155F (Note 4).
  • Remove pork onto plate, cover loosely with foil and rest 5 minutes.
  • Place skillet with sauce on stove over medium high heat, simmer rapidly for 3 minutes until liquid reduces down to thin syrup.
  • Remove from stove, put pork in and turn to coat in sauce.
  • Cut pork into thick slices and serve with sauce!

This is common way to eat in Finland, in earlier days it was eaten almost daily. Now with the fusion cooking and all this is usually served in schools and office lunch-diners.

600 g pork, cubed
2 onions, chopped
50 ml flour
1 teaspoon black pepper
1 teaspoon salt
700 ml water

Steps:

  • Brown the Side Pork, a few at a time, in a saucepan.
  • Season the slices with salt and pepper.
  • Place the meat preferably into a cast iron casserole pot.
  • Sauté the chopped onions in the remaining fat from the pork slices and then place them in the pot.
  • Add the flour to the remaining fat. When the flour is a light golden brown, pour the water into the saucepan, whilst constantly stirring. 6. Pour the sauce over the meat, in the cast iron casserole pot, and allow it to simmer at a low heat for at least 20 - 30 minutes.
  • Serve the Pork Sauce hot together with boiled potatoes.

Steps:

  • Melt butter in microwave and pour in greased 9 x 13 pan.
  • Combine other ingredients & beat well.
  • Poor into pan, stirring into melted butter with fork.
  • Bake @ 400 for 30 minutes.
  • Sprinkle the top with powdered sugar.

  • Preheat oven: Preheat oven to 200°C / 390°F (180°C fan). Place a rack over a tray (for resting the cooked meat).
  • Sear pork: Heat oil in a large oven-proof skillet over medium-high heat. Sear pork all over until golden. This takes around 5 minutes (I sear 4 sides).
  • Bake (Note 5): Transfer the skillet with the pork in it to the oven. Bake for 12 - 15 minutes or until an instant read thermometer reads 65°C / 149°F. This will have a blush of pink, a perfect medium for optimum juiciness. (For no pink at all, add 3 minutes cooking and target an internal temperature of 68°C / 155°F.)
