CLASSIC MORNAY SAUCE



Classic Mornay Sauce image

Yield about 2 cups of sauce

Number Of Ingredients 8

2 1/2 tablespoons butter
3 tablespoons all-purpose flour
2 cups warmed milk
1/4 teaspoon salt
1/8 teaspoon white pepper
pinch freshly grated nutmeg (optional)
2 ounces grated cheese, such as Gruyere
Steamed vegetables, such as broccoli, cauliflower or baby carrots, for accompaniment

Steps:

  • In a medium saucepan melt the butter over medium-high heat. Add the flour and cook, stirring constantly, until the roux is pale yellow and frothy, about 1 minute. Do not allow the roux to brown. Slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil, about 2 to 3 minutes. Reduce the heat to a simmer and season with the salt, pepper and nutmeg. Allow to simmer for 2 to 3 minutes. This is now called a bechamel sauce, and may be used as is to top any number of dishes.
  • Stir in the cheese and whisk until melted. If the sauce seems to thick, thin with a little milk.
  • The sauce is now called a Mornay Sauce. Pour over steamed vegetables and serve immediately. If not using right away, cool, cover surface with plastic wrap and refrigerate for several days.

1 tablespoon vegetable oil
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup water
1/3 cup swiss cheese, shredded
2 tablespoons parmesan cheese, grated

cooked rice or egg noodles

Steps:

  • In a skillet, brown pork chops in hot oil.
  • Add soup and water; cover and simmer until pork is no longer pink (about 20 minutes).
  • Stir in shredded Swiss, parmesan and nutmeg after removing from heat.
  • Serve over cooked rice or egg noodles.

6 blue corn tortillas, cut into strips
6 flour tortillas, cut into quarters
1 tablespoon kosher salt
3 tablespoons ancho chili powder
2 tablespoons light brown sugar
1 tablespoon pasilla chili powder
1 tablespoon kosher salt
2 teaspoons allspice
2 teaspoons chile de arbol
2 teaspoons ground cinnamon
Freshly ground black pepper
2 tablespoons canola oil
1 1/2 pounds pork tenderloin, split in half
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 to 2 1/2 cups whole milk, heated
12 ounces Monterey Jack cheese, grated
1/2 cup grated Parmigiano-Reggiano
Kosher salt and freshly ground black pepper
Pinch chile de arbol
2 ripe Hass avocados, diced
2 ears corn, roasted in husks and grilled, kernels removed
1 Charred Jalapeno, seeded and finely diced, recipe follows
Juice of 1 lime
1/2 small red onion, finely diced
Splash olive oil
Salt and freshly ground black pepper
1/4 cup chopped fresh cilantro, for garnish
6 jalapenos
2 teaspoons canola oil
Kosher salt and freshly ground black pepper
Pickled red onions, for garnish
4 ounces soft goat cheese, cut into small pieces
Fresh cilantro leaves, for garnish

Steps:

  • For the tortilla chips: Heat oil in a deep fryer to 340 to 350 degrees F. Fry the tortillas, in batches, until firm. Drain on paper towels and season immediately with salt. For the new mexican rubbed pork tenderloin: Combine the ancho chili powder, sugar, pasilla chili powder, salt, allspice, chile de arbol, cinnamon and some black pepper in a small bowl. Heat the oil in a medium saute pan over high heat. Sprinkle the pork with salt on both sides, and then dredge in the spice rub, tapping off any excess. Sear the pork on all sides until golden brown, and then continue cooking to medium doneness or when an instant-read thermometer inserted into the center registers 135 to 140 degrees F, 8 to 10 minutes. Transfer to a cutting board and let rest 10 minutes before thinly slicing. For the mornay sauce: Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook 1 minute. Slowly whisk in 2 cups of the warm milk, bring to a boil and continue whisking until the sauce thickens and the flour taste has been cooked out, about 5 minutes. Remove from the heat and slowly whisk in the Monterey Jack a handful at a time. Continue whisking until smooth, adding more milk if too thick. Whisk in the Parmigiano-Reggiano and season with salt, black pepper and chile de arbol. Set aside. For the avocado-corn relish: Combine the avocado, corn, jalapeno, lime juice, onions and olive oil in a bowl. Season with salt and black pepper, and fold in the cilantro. For the charred jalapenos: Toss the jalapenos with the oil and sprinkle with salt and black pepper. Char in a cast-iron pan over high heat or on a baking sheet in a 400 degrees F oven until the skin is charred on both sides. Let cool before slicing. For assembly: Arrange the tortilla chips on a large platter in a single layer. Top each chip with a heaping teaspoon of the avocado-corn relish, a slice of pork and some of the Mornay sauce. Garnish with the sliced charred jalapenos, pickled red onions, a dollop of the goat cheese and cilantro leaves.

This is one of our family favorites and I have been making it for many years. I got the recipe from an old Betty Crocker Cookbook and have tweaked it to meet our tastes. We like lots of the Mornay Sauce so I have doubled that part of the recipe. If you like more tomato sauce on the pork you can add more of that too. It can also be prepared in an electric skillet.

4 large cubed pork steaks, cut in half
2 eggs, beaten
1 cup dry breadcrumbs
3 tablespoons vegetable oil
3 tablespoons water
8 tablespoons tomato sauce
1 tablespoon margarine
1 teaspoon margarine
1 tablespoon flour
1 teaspoon flour
2 dashes salt
2 dashes ground nutmeg
2 dashes cayenne pepper
1/2 cup chicken bouillon
1/2 cup half-and-half
1/2 cup shredded cheddar cheese (or more)
paprika

Steps:

  • Dip pork steaks into egg; coat with bread crumbs.
  • Heat oil in a 10 inch skillet that has a lid.
  • Fry pork over medium heat until brown.
  • Add water to pan and spoon 1 tablespoon of tomato sauce onto each pork steak; reduce heat to low.
  • Cover and cook until done, about 30 minutes.
  • While the pork steaks are cooking prepare Mornay Sauce.
  • Heat margarine in small saucepan until melted.
  • Blend in flour, salt, nutmeg and cayenne pepper.
  • Cook over low heat, stirring constantly, until mixture is smooth and bubbly.
  • Immediately stir in bouillon and half-and-half. Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Stir in cheese until melted.
  • When pork steaks are done, remove to platter; top with Mornay Sauce.
  • Sprinkle with paprika.

½ cup uncooked rotini pasta
1 tablespoon butter or margarine
2 tablespoons all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese
1 cup frozen green peas
1 cup frozen corn kernels
2 (7 ounce) cans tuna, drained
salt
½ cup bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Bring a pot of lightly salted water to a boil. Add the pasta and cook until tender, about 8 minutes. Drain.
  • Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the flour until smooth. Gradually mix in milk so that no lumps form. Stir constantly until the mixture boils, then mix in half of the cheese. Add the peas, corn and macaroni. Drain the tuna, leaving a small amount of liquid to keep it moist. Flake with a fork and stir into the cheese mixture. Transfer to a casserole dish and top with the remaining cheese. Sprinkle breadcrumbs over the cheese.
  • Bake for 20 minutes in the preheated oven, until sauce is bubbly and cheese is browned.

1 cup tomato sauce, prepared
20 cannelloni tubes, precooked
1/2 cup parmesan cheese
1 cup mozzarella cheese, shredded
1 tablespoon olive oil
2 medium leeks or 2 medium onions, chopped
2 garlic cloves, crushed
2 small shallots, minced
1 cup spinach, cooked and chopped
1 cup cottage cheese
1/2 cup ricotta cheese
1 egg, beaten
2 cups cooked chicken, finely diced
3 tablespoons butter
1/4 cup flour
2 cups milk, scalded
1/2 teaspoon nutmeg
1/2 teaspoon salt and pepper

Steps:

  • Pour tomato sauce in of 13"x9" pan. Set aside.
  • White Sauce:
  • Melt 3 Tbsp butter in microwave. Add flour to butter and slowly whisk in scalded milk. Microwave 3 minutes stirring a few times. Add nutmeg, salt and pepper and ¼ Cup of mozzarella cheese. Mix to melt cheese and set aside.
  • Filling: Heat 1 Tbsp of olive oil in skillet, add leeks/onions, garlic, shallots and cook till tender. Pour mixture in bowl, add spinach, cottage cheese, ricotta, chicken, parsley, 1/4 Cup parmesan cheese, egg and mix.
  • Spoon in piping bag fitted with a large plain tip and fill each tube. Arrange in single layer over tomato sauce in baking dish. Top with white sauce covering each and every tube. Sprinkle with remaining parmesan and mozzarella cheese. Bake 1 hour, covered, in a 350* oven. Uncover and bake 30 minutes longer. Broil 2-3 minutes until lightly browned.

This is decadent dinner for company with not too much work. I love Veal Oscar, and this is my simpler version. Veal can be expensive, but pork tenderloins and pork loins are relatively inexpensive these days. A rich dish of asparagus, crab and a very simple glaze and bernaise sauce makes this a wonderful dinner for a special occasion.

1 1/4 lbs pork tenderloin (Cut the tenderloin into 1-1 1/2-inch thick rounds)
1 teaspoon dried thyme
1 teaspoon dried tarragon
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground black pepper
2 tablespoons olive oil
2 teaspoons lemon juice
1/3 cup flour
salt
pepper
1 tablespoon olive oil, to saute the pork
1/2 cup white wine
1/2 cup chicken broth
1 teaspoon butter
1 lb asparagus (ends trimmed and cut in 2-inch pieces on an angle)
2 (14 ounce) cans crabmeat (a mix of lump and claw, also, check your seafood counter, sometimes that have great deals)
1/4 cup butter
2 egg yolks
2 tablespoons heavy cream
1 teaspoon minced shallot
1 tablespoon white wine vinegar
1 1/2 teaspoons lemon juice
1/4 teaspoon dry mustard
1 teaspoon dried tarragon
1 teaspoon chopped fresh parsley
1 pinch cayenne (optional)
salt
pepper

Steps:

  • Pork and Marinade -- Mix all the ingredients in a large baggie and add the pork tenderloins. Close the bag and "squish" around to make sure they are well coated. Let them marinade 2-4 hours.
  • Saute Pork -- In a large baggie or you can use a pie plate or flat plate, add the flour, salt and pepper and dredge the pork in the flour mixture. Make sure to shake off any extra flour. In a large pan (I prefer a cast iron vs a non stick pan), add the olive oil and bring to medium / medium high heat. Then add the tenderloins and saute on each side until golden brown. They will only take 2-3 minutes per side and don't forget, they will continue to cook once removed. Transfer the medallions to a plate and cover to keep warm. They will need to rest a few minutes before you serve the dish.
  • Keep the burner on, just set the pan off to the side.
  • Asparagus and Crab -- As the pork is cooking, start your asparagus, it only takes a couple of minutes. I do this easy and make it right in the microwave, but you can steam it anyway you prefer. In a medium bowl, add the asparagus, 1 teaspoon of water and cover with saran wrap. Microwave for 1 minute, uncover, check to see if it is tender. If not, stir and cook for another 15 seconds at a time, until the asparagus is crisp tender. Remove from the microwave and press a piece of saran wrap right on top of the asparagus. Then add the crab right on top of the saran wrap, and then cover the entire bowl. This is an easy way to heat up the crab without cooking it. The heat from the asparagus will warm it up which is all you need.
  • Pork Glaze -- Since the pork is resting, return the pan to the burner on medium heat and add in the wine, scraping up all the bits. Then add in the chicken broth and turn to medium low and just let it simmer. It will slightly thicken and reduce. This is not a heavy rich gravy and it is just a light drizzle, so don't expect a lot of the sauce.
  • Bernaise -- Very easy. Add the butter to a small glass bowl and melt in the microwave on medium for 20-30 seconds until melted. Add in the eggs, shallot, vinegar, cream, lemon juice, tarragon, mustard, parsley, mustard, salt, pepper and cayenne if you want (optional). Return to the microwave, and cook 20-30 seconds at a time on medium-low stirring each time until thickened and smooth. It will take 3-4 times to get a rich perfect Bernaise. I know it isn't traditional, but sure is easy and works every time. But don't think that a higher temp will work, it will just scramble the eggs. A few times on medium heat is what works best.
  • Plating -- On each plate, drizzle a little of the glaze. Then top with a couple of the pork medallions. Top with the asparagus, crab and finish with the bernaise sauce.
  • It sounds like a lot, but break each step down. It really isn't hard at all. Serve with some oven roasted fingerling potatoes and a simple salad. Trust me your friends will be totally impressed. ENJOY!
