Pork Loin Roast with Mushroom Sauce image

Categories     Dinner     lunch

Time 2h15m

Number Of Ingredients 16

4 lb pork loin ((boneless))
1 Tbsp fresh rosemary ((crushed))
2 Tbsp fresh sage ((crushed; or 1 1/2 tsp dried sage leaves))
1 tsp fresh thyme ((crushed; or 1/2 tsp dried thyme leaves))
1 tsp kosher salt
1/2 tsp coriander seeds ((crushed))
2 cloves garlic ((pressed))
1 lb cremini mushrooms ((or button mushrooms, sliced about 1/4" - 3/8" thick))
2 Tbsp olive oil
1 shallot ((thinly sliced))
1 cup dry sherry ((or Madeira, or dry vermouth))
1 cup chicken stock
1 Tbsp soy sauce
2 tsp cornstarch ((dissolved in 1 Tbsp of water))
Salt ((to taste))
Black pepper ((to taste))

Steps:

  • Preheat oven to 425F.
  • Crush coriander seeds in a mortar. Add the fresh herbs and crush together with the coriander seeds.
  • Mix the crushed herbs and coriander seeds with salt and pepper in a small bowl.
  • Rub the pork loin with the seasoning, patting it to make sure the seasonings stick well. Position the pork loin on a rack fitted over a baking pan lined with foil. Make sure that the fat cap is on top of the loin.
  • Insert a BBQ or meat thermometer, put the loin in the oven and roast at 425F for 15 minutes. Reduce temperature to 325F and continue to roast until the temperature in the center of the thickest part of the loin reaches 140F, about 50 - 70 minutes.
  • Remove the meat from the oven, tent with a piece of foil and let rest for 10 minutes before carving.
  • Meanwhile, heat the oil in a skillet over medium-high heat. Saute the garlic and the shallot for 1 minute. Add the mushrooms and continue sauteing for another 5 minutes or so, until the mushrooms begin to brown.
  • Add the sherry wine and continue cooking until most of the liquid evaporates.
  • Pour in the chicken stock and the soy sauce. Bring to a boil. Add the cornstarch mixture and simmer for about 2 minutes, until it thickens. Season with salt and pepper to taste.
  • Serve the pork loin with your favorite side dish (these garlic mashed potatoes are the best match for this dish) with mushroom sauce spooned over it.

PORK, MUSHROOM, AND ARTICHOKE FRICASSEE

Pork, Mushroom, and Artichoke Fricassee image

Not familiar with fricassee? It's a cross between a saute and a stew with a creamy pan sauce. Here, juicy pork tenderloin is teamed with mushrooms and canned artichokes, and everything is cooked in one pan.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 45m

Number Of Ingredients 11

1 pork tenderloin (1 pound), cut into 2-inch rounds
Kosher salt and freshly ground pepper
1/4 cup unbleached all-purpose flour
3 tablespoons unsalted butter
8 ounces mixed-mushroom blend (sliced, if large)
1 tablespoon minced garlic (from 2 cloves)
1 tablespoon Dijon mustard
2 cups low-sodium chicken broth
1 can (15 ounces) artichoke-heart quarters, drained (about 1 cup)
1/4 cup heavy cream
Chopped flat-leaf parsley, for serving

Steps:

  • Pound pork between sheets of plastic wrap to 1/8 inch thick. Season with salt and pepper; dredge in flour, shaking off excess. Heat 1 tablespoon butter in a large skillet over medium-high. Add half of pork in a single layer and cook, flipping once, until browned, 2 to 3 minutes. Transfer to a plate. Wipe skillet clean and repeat with 1 tablespoon butter and remaining pork; transfer to plate.
  • Add remaining 1 tablespoon butter and mushrooms to skillet; season with salt. Cook, stirring occasionally, until golden, about 8 minutes. Add garlic; cook, stirring, 1 minute more. Stir in mustard and broth; cook until reduced by half, 10 minutes. Stir in artichoke hearts and cream. Return pork and any juices to skillet; cook until thickened slightly, about 3 minutes. Stir in parsley; serve.

PORK CHOPS IN GARLIC MUSHROOM SAUCE

Pork Chops in Garlic Mushroom Sauce image

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

Time 30m

Yield 8

Number Of Ingredients 9

2 pounds boneless pork chops
½ teaspoon paprika
1 pinch kosher salt and ground black pepper to taste
¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms
4 cloves garlic, minced
1 teaspoon Dijon mustard
2 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.

Pork Fricassée with Mushrooms and Carrots image

Categories     Soup/Stew     Milk/Cream     Mushroom     Pork     Stew     Carrot     Fall     Winter     Gourmet

Yield Serves 8

Number Of Ingredients 15

3 tablespoons vegetable oil
3 1/2 pounds boneless pork shoulder, trimmed of excess fat and cut into 2-inch pieces
1 large onion, chopped
2 ribs of celery, chopped
1 bay leaf
4 cups chicken broth
4 cups water
8 large carrots, cut diagonally into 1-inch-thick pieces
1 pound mushrooms, sliced thin
1/2 stick (1/4 cup) unsalted butter
1/4 cup all-purpose flour
1 cup heavy cream
1 tablespoon fresh lemon juice, or to taste
1/2 cup minced fresh parsley leaves
paprika rice as an accompaniment

Steps:

  • In a kettle heat the oil over moderately high heat until it is hot but not smoking and in it brown the pork, patted dry, in batches, transferring it as it is browned to a large bowl. Pour off the fat from the kettle, return the pork to the kettle with the onion, the celery, the bay leaf, the broth, and the water, and simmer the mixture, uncovered for 1 1/2 hours, or until the pork is tender. Add the carrots, simmer the mixture, covered for 15 minutes, or until the carrots are tender, and transfer the pork and the carrots with tongs to a bowl. Strain the mixture through a fine sieve into a bowl return the cooking liquid to the kettle, and boil it until it is reduced to about 3 cups.
  • In a large heavy skillet cook the mushrooms in the butter over moderate heat, stirring occasionally, until most of the liquid the mushrooms give off is evaporated, sprinkle the mixture with the flour, and cook it over moderately low heat, scraping up the brown bits, for 3 minutes. Stir in the cream, stirring until the mixture is combined well, add the mushroom mixture to the cooking liquid, and simmer the sauce, stirring, until it is thickened. Stir in the lemon juice, the pork, the carrots, salt and pepper to taste . The fricassee may be made 2 days in advance and kept covered and chilled. Stir in the parsley and serve the fricassee over the paprika rice.

MUSHROOM FRICASSEE WITH CREAMY POLENTA

Mushroom Fricassee with Creamy Polenta image

Provided by Scott Conant

Categories     main-dish

Time 6h45m

Yield 4 servings

Number Of Ingredients 25

6 tablespoons plus 1 teaspoon extra-virgin olive oil
4 medium shallots, halved and thinly sliced lengthwise
Kosher salt
10 ounces mixed domestic and wild mushrooms, sliced or cut into bite-sized pieces (about 4 cups)
2 sprigs fresh thyme
2 cups Chicken Reduction, plus more as needed, recipe follows
1 tablespoon preserved black truffles, optional
1 tablespoon chopped fresh chives
Pinch of crushed red pepper
3 cups Creamy Polenta, recipe follows
6 pounds chicken bones (some meat on them is fine)
3 tablespoons olive oil
2 sprigs fresh rosemary, bruised with the dull side of a chef's knife
1 clove garlic, coarsely chopped
2 celery stalks, coarsely chopped
1 medium onion, coarsely chopped
1 carrot, coarsely chopped
4 whole canned tomatoes, coarsely chopped
2 cups dry white wine
4 cups heavy cream
4 cups whole milk
1 tablespoon kosher salt
1 cup coarse polenta
4 tablespoons unsalted butter
1/3 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • In a medium saucepan, heat the 6 tablespoons of olive oil over medium heat. Add the shallots, season lightly with salt, and cook, stirring, until the shallots just begin to color, about 4 minutes. Add the mushrooms, thyme, and the remaining 1 teaspoon olive oil, and cook, stirring occasionally, until the mushrooms release their liquid, about 2 minutes. Add the Chicken Reduction, bring to a boil, then reduce to a simmer. Cook, stirring occasionally, until the liquid is reduced by half and has a saucy consistency, 2 to 3 minutes. Stir in the preserved truffles (if using). If the mixture thickens too much -- you want the mushrooms to be swimming in the sauce but there should be a mushroom in every bite -- add 2 tablespoons of the Chicken Reduction to thin it out a bit. Stir in the chives and crushed red pepper.
  • Divide the Creamy Polenta among serving bowls. Top with the mushrooms and their cooking liquid and serve immediately.
  • Heat a convection oven to 425 degrees F or a conventional oven to 450 degrees F.
  • Rinse the chicken bones and pat them dry. Spread them out on two rimmed baking sheets in a single layer with a little room between the bones. Roast until golden brown, about 1 hour, flipping and turning the bones every 15 minutes or so.
  • In a large stockpot, heat the olive oil over medium heat. Add the rosemary and garlic and cook, stirring, until fragrant, about 1 minute. Add the celery, onion, and carrot, and cook, stirring occasionally, until the vegetables are well browned, about 10 minutes. Add the tomatoes, and cook, stirring, until some of the juices evaporate, 2 to 3 minutes. Add the wine and cook until almost all of it has evaporated. Add the chicken bones (with juices and drippings) to the stockpot, then add enough water to cover everything by about 2 inches (about 6 quarts). Increase the heat to medium-high, bring to a boil, then reduce the heat to medium to cook at a gentle simmer, stirring often to break up the bones and emulsify the fat, until the chicken is falling off the bones and the stock has a full flavor, 2 to 2 1/2 hours.
  • Remove the chicken bones and strain the broth several times through a chinois or other fine-mesh strainer. If you want to make and use the reduction right away, spoon off any visible fat floating on top of the stock. Otherwise, chill the stock until the fat solidifies on top, and then scrape off and discard most of it.
  • Pour the defatted stock into a saucepan and bring to a boil over high heat. Reduce the heat slightly so the stock is not boiling so furiously. As the stock simmers, some of it will remain on the sides of the saucepan; use a spoon or ladle to pour some of the stock over this to deglaze it. (This will further increase the intensity of the flavor.) Continue simmering until the stock has darkened, thickened, and reduced to about 4 cups, about 30 minutes. The reduction can be refrigerated for 3 days or frozen for up to 2 months. Yield: 4 cups
  • In a large, heavy-based saucepan over medium-high heat, heat the cream and milk until warm, about 5 minutes. Whisk in the salt and keep whisking until the liquid is very frothy (like a cappuccino) and hot. While still whisking, slowly rain the polenta into the pot. Continue to whisk until the granules swell, about 8 minutes. At this point, switch to a wooden spoon to stir the polenta. (It will get too thick for the whisk.) Keep stirring until the polenta has begun to thicken, about 5 minutes. Turn the heat down to medium and cook until it evenly begins to bubble. Reduce the heat to low, cover with a tight-fitting lid, and cook, stirring every 10 to 15 minutes, until cooked through and the liquid has reduced, about 1 1/2 hours. The polenta might look "done" sooner, but it does continue to soften, so be patient. During this time, a skin might form on the bottom of the pan, which is fine.
  • Just before serving, raise the heat to medium-high, stir in the butter and the cheese, and cook, stirring, until the butter is melted, then take the pot off the heat. If the polenta looks thin, don't worry, as it will thicken as it cools. Yield: 8 to 10 servings

ULTIMATE PORK TENDERLOIN WITH MUSHROOM SAUCE

Ultimate Pork Tenderloin with Mushroom Sauce image

This ultimate pork tenderloin is baked in the oven with mushrooms, onions and a bottle of beer. It comes out so tender, it melts in your mouth. Thank you to my mother for this recipe, it's a family favorite. I usually serve it with homemade mashed potatoes, since it makes a lot of gravy.

Provided by Michelle McCormick

Categories     Meat and Poultry Recipes     Pork     Pork Tenderloin Recipes

Time 1h40m

Yield 8

Number Of Ingredients 8

2 cups all-purpose flour
2 (1 pound) pork tenderloins
1 pinch salt and ground black pepper to taste
4 tablespoons vegetable oil
1 white onion, chopped
2 (4.5 ounce) jars sliced mushrooms, drained
1 (12 fluid ounce) can or bottle domestic beer
2 (1 ounce) packages dry onion soup mix

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour flour onto a work surface. Rinse pork tenderloins, pat dry, and then dredge in flour. Shake off excess flour and season with salt and pepper; some flour may remain.
  • Heat oil in a large skillet over medium heat. Add pork to the hot oil and cook until well-browned, 2 to 3 minutes per side. Transfer to a medium baking dish leaving any oil and drippings in the skillet.
  • Add onion to the pan drippings and cook over medium-low heat for 5 minutes. Add mushrooms and saute until onion is translucent and cooked, about 5 minutes. Pour the onion-mushroom mixture over the pork.
  • Whisk beer and soup mix together in a bowl until well blended. Pour beer mixture into the baking dish, making sure that it both covers and surrounds the pork, mushrooms, and onions. Cover tightly with aluminum foil.
  • Bake in the preheated oven until pork is slightly pink in the center and gravy is bubbling, about 1 hour. Remove from the oven and set aside, still covered, to allow it to cook a little bit longer outside of the oven, about 10 minutes longer. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
