- In a medium sauce pot heat oil to 350 degrees F.
- Clean and julienne leeks. Sift cornstarch and flour together. Dust leeks in flour/cornstarch and fry until golden brown, about 30 seconds. Drain on a paper towel, season with salt. See Cook's Note.
PORK CHOPS WITH TOMATO JAM AND FRIED LEEKS
Steps:
- 1. Preheat the oven to 400 degrees F. Heat 1/4 cup olive oil in a skillet. Add the shallots and garlic and cook until translucent, about 3 minutes.
- 2. Stir in the tomatoes and mirin; cook over medium heat until the mixture is almost dry, about 15 minutes.
- 3. Heat 2 tablespoons oil in a large skillet. Sprinkle the chops with salt and pepper. Sear the chops until brown, about 1 1/2 minutes on each side. Transfer to the oven and cook until an instant-read thermometer reaches 145 degrees F, about 5 minutes.
- 4. Add the remaining 4 tablespoons olive oil to the pan. Thinly slice the white portion of the leek. Add the leeks to the hot oil and fry until crispy.

CREAMY DIJON LEEKS

- Halve 1 bunch leeks lengthwise, then cut into 3-inch pieces. Cook in a steamer basket until tender, 10 to 12 minutes. Cook 1 minced shallot in a saucepan with 1 tablespoon olive oil, 2 minutes; season with salt. Add 1 tablespoon flour and cook 1 minute. Whisk in 1 cup chicken broth and cook until thickened, 4 minutes. Whisk in 1 1/2 tablespoons dijon mustard and 3 tablespoons minced parsley. Spoon over the leeks.
PERFECT FRIED PORK CHOPS RECIPE

- Rinse pork chops and pat dry with paper towels, making sure to remove all excess moisture.
- In a medium bowl, combine flour, seasoned salt, black pepper, steak seasoning, and salt to taste.
- Dip each side of the pork chops into the seasoning mixture, then set aside on a plate.
- Heat canola oil over medium-high heat in a large skillet and once it is hot (between 325-375 degrees F), add butter to the skillet.
- When the butter is melted, cook pork chops 2 to 3 minutes on the first side; 1 to 2 minutes on the other side.
- Dispose of the excess oil.
- Remove fried pork chop to a plate and repeat with remaining porch chops.
- Store them in an airtight container to eat them as leftovers on busy weeknights.

- Heat a large heavy skillet over medium-high heat. Season pork chops with salt and black pepper on both sides and add to skillet. Brown pork chops, about 4 minutes per side. Transfer to a plate and cover with aluminum foil.
- Add onions and garlic to the hot skillet. Cook and stir until softened but still crisp, about 5 minutes. Add tomatoes, capers and liquid, rosemary, red pepper flakes, oregano, and basil. Bring sauce to a simmer and cook about 5 minutes to meld flavors.
- Pour any accumulated juices from the plate with the pork chops into the sauce in the skillet and stir. Add cooked pork chops and cover with sauce. Simmer until warmed through, about 5 minutes more.
