SHERRY APPLE PORK CHOPS

Chops baked with apples, sugar, cinnamon and last but not least, mon cherie, sherry! Simple, elegant, savoir-fair cooking.

6 pork chops
3 large apples - peeled, cored and sliced
¼ cup packed brown sugar
½ teaspoon ground cinnamon
2 tablespoons butter
salt and pepper to taste
½ cup dry sherry

Steps:

  • In a large skillet, brown chops, about 2 minutes each side; reserve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange apple slices in the bottom of a 9x13 inch baking dish. Sprinkle with brown sugar and cinnamon. Dot with butter or margarine. Top with browned pork chops and season with salt and pepper to taste. Pour sherry over all, cover and bake in the preheated oven for 1 hour or until tender and the internal temperature has reached 145 degrees F (63 degrees C).

3 tablespoons apple jelly
1 teaspoon chopped fresh thyme
3 boneless center-cut pork chops (about 11/4 pounds)
Kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil, plus more for brushing
1/2 small red onion, finely diced
3 tablespoons whole-grain mustard
1/4 cup apple cider vinegar
2 heads Boston or Bibb lettuce, torn
1 Fuji or Gala apple, diced
1 small turnip, peeled and diced
3/4 cup crumbled blue cheese
Chopped fresh parsley, for topping (optional)

Steps:

  • Preheat a grill to high. Mix 2 tablespoons apple jelly with the thyme. Season the pork chops with salt and pepper and brush with olive oil on both sides. Grill the chops until marked, about 3 minutes per side. Brush with the jelly-thyme mixture and continue to grill until the chops are cooked through, about 2 more minutes. Set aside to cool.
  • Soak the diced onion in a bowl of cold water, about 10 minutes. Meanwhile, whisk the mustard, vinegar and the remaining 1 tablespoon apple jelly in a large bowl and season with salt and pepper. Slowly add 1/2 cup olive oil, whisking until smooth.
  • Cut the pork into bite-size pieces and drain the onion. Add the lettuce, apple, turnip, pork, onion and blue cheese to the bowl with the dressing and toss. Top with parsley, if desired.

A delightfully different slaw style salad. You can use more or less horseradish to suit your taste. I love to serve this as a pre-dinner salad spooned on top of a bed of watercress or part of a large buffet.

1/2 lb gruyere cheese
1 medium celery root
1 1/2 granny smith apples
2 tablespoons fresh lemon juice
3/4 cup mayonnaise
2 tablespoons spicy brown mustard
1 tablespoon honey
1 teaspoon salt
3 tablespoons bottled horseradish, drained or 3 tablespoons grated fresh horseradish, to taste

Steps:

  • Cut cheese into matchsticks and put in a large bowl.
  • Peel celery root and apples and cut into matchsticks.
  • Add celery root, apples, and lemon juice to cheese, tossing gently.
  • In a small bowl stir together remaining ingredients and add to slaw, tossing gently.
  • Slaw may be made 1 day ahead and chilled, covered.
  • Add additional horseradish to taste before serving if necessary.

  • Put 2 Fresno chiles, thinly sliced, in a small heatproof bowl. Whisk together ½ cup white wine vinegar and 1 Tbsp. honey in a small saucepan; season with a big pinch of kosher salt.
  • Pat four ½"-thick bone-in pork rib chops (about 2 lb.) dry with paper towels. Season all over with salt and freshly ground black pepper, then lightly sprinkle both sides with 2 Tbsp.
  • Heat 2 Tbsp. extra-virgin olive oil in a large cast-iron skillet over medium-high. Working in 2 batches and adding 1 Tbsp. extra-virgin olive oil between batches, cook pork chops, turning every 2 minutes, until golden brown and cooked through, 6–9 minutes per batch.
  • Add 2 large shallots, finely chopped, to fat in skillet; season with salt. Cook, stirring, until softened, about 1 minute. Pour in 1 cup low-sodium chicken or vegetable broth and bring to a boil, scraping up any browned bits.
  • Toss 1 large bunch frisée, torn, 1 small apple (such as Fuji or Gala), thinly sliced, drained reserved pickled chiles, 3 Tbsp. pickling liquid, and remaining 2 Tbsp.

  • Pat pork chop dry with paper towels. Mix salt, pepper, and sugar in a small bowl; sprinkle all over pork. Place pork on a wire rack set inside a rimmed baking sheet so it’s resting on its side with bone sticking upright and chill, uncovered, at least 8 hours and up to 1 day.
  • Preheat oven to 300˚. Heat a large skillet, preferably cast iron, over medium-high. Rub chop all over with oil and carefully place in skillet; reserve rack and baking sheet.
