MOM'S POPPY SEED ROLL (ROULETTE) RECIPE



Mom's Poppy Seed Roll (Roulette) Recipe image

This is my Mom's recipe for poppy seed rolls and it's one of my husband's favorites. I've always been intimidated by this classic roulade, but I've come to find it's not as complicated as it looks.

1 and 1/3 cups 1% milk
1 Tbsp active dry yeast (I used Red Star Brand)
2 large eggs
3/4 cup sugar
1 stick (8 tbsp salted butter (or unsalted butter plus 1/4 tsp salt))
4 cups bleached all-purpose flour (I used flour Made in Canada, which is best for this recipe)
1/2 tsp vanilla extract or vanilla powder
1 cup poppy seeds (you will need a food grinder to prepare these)
1 egg white (for egg wash)
8 oz sweetened condensed milk (from a 14 oz can)
1 cup raisins

Steps:

  • Heat 1 1/3 cups milk in the microwave until it's luke-warm. Pour milk in a large mixing bowl (preferably the bowl from your KitchenAid mixer). Add 1 tbsp yeast, 2 Tbsp sugar and 1 cup flour. Mix until flour is well blended. Let stand in a warm oven (100 degrees) for 1/2 hour or put it on the counter for 1 hour at room temperature if you have all the time in the world. Dough should rise about 1.5 times in volume. Stir dough lightly.
  • Melt 1 stick (8 Tbsp) butter (until it's just melted - it should not be hot). Add butter to the batter. Add 2 whole eggs. Add the rest of your 3/4 cup of sugar, 1/2 tsp vanilla and 1 cups flour. Whisk together.
  • Using the dough hook (on speed 2), add the remaining 2 cups of the flour 1/2 cup at a time. After all the flour is in, let it continue mixing 15 minutes. Dough is ready when it is no longer sticking to the sides of the bowl. Finished dough will be soft. It will feel sticky to the touch but should not stick to your fingers.
  • Place dough in a very large mixing bowl (our Kitchenaid bowl is 6 Qts so I left it in the same bowl), cover with plastic wrap and set in a warm place (in a 100 degree oven or in the sun) Let sit 2.5 hours to rise (until about 3-4 times in volume) Carefully peel off cellophane when it's done.
  • Fill medium saucepan with 1 cup poppy seeds and add enough water for impurities to float to the top, drain off the water and repeat.
  • Add 3 cups water to the pot. Over medium heat, bring to a simmer. (Don't boil). Turn off. Cover with lid and let it sit for 30 minutes.
  • Return to a simmer (don't boil). Turn off. Cover and let it sit for another 30 minutes. Drain poppy seeds by keeping lid on and put cheese cloth on lid to catch stray poppy seeds, or if you have a fine mesh sieve, use it!
  • Push the poppy seeds through a food grinder using the fine grinding plate. You can also use a coffee grinder and do it in smaller batches. With the meat grinder, you need to push firmly. The seeds won't grind well unless they are under pressure. P.S. I've tried putting them through a food processor and it did not work.
  • Mix 8 ounces of sweetened condensed milk into ground poppy seeds.
  • Line an extra large cookie sheet with parchment paper.
  • Put dough onto a clean, dry, non-stick surface (a sheet of parchment paper works well). Divide into 4 equal pieces.
  • Roll out the dough into an 11" x 8" oval-ish shape; similar to a thin crust pizza dough. It should not stick to your rolling pin. Spread 1/2 cup poppy seed mixture over the dough and sprinkle about 30-40 raisins over the poppy mixture.
  • Roll the Roulette (not too tight!) and Place side-by-side on the lined baking sheet. Brush the top with egg wash (1 egg white, 1/2 tsp sour cream, 1/2 tsp sugar - whisked together). Let them rise on the counter for 1 hour (or in a 100˚F oven for 30 minutes).
  • Preheat Oven to 360°F and bake 28-30 min until the tops are deep golden (but not brown).

Usually, I don't get much of an immediate response from people when I serve this. They're too busy eating it! Poppy Seed Roll really brings the light to my husband's eyes. He prefers it over any birthday cake I could bake. I like to serve this bread as a just-right, not-too-sweet dessert. And i always offer a glass of cold milk, too-my husband's part of a family dairy!

Steps:

  • In a saucepan, heat milk, butter, sugar and salt. Cool to lukewarm. Add 2 beaten eggs and the vanilla extract. Dissolve yeast in warm water. , In a large bowl, combine milk mixture, yeast mixture and enough flour to form a soft dough. Turn out onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and let rest for 5 minutes. Roll dough into a 12-in. x 18-in. rectangle. Spread with poppy seed filling and 1 cup nuts. Starting with the long side, roll up dough and pinch the edges to seal. , Place on a large greased baking sheet, seam side down. Curve slightly to form a crescent shape. Cover and let rise in a warm place until doubled, about 30 minutes. , Beat remaining egg with 1 teaspoon water; brush over top. Bake at 350° for about 30 minutes. Cool on wire rack. Glaze with confectioners' sugar icing and top with remaining nuts.

3 tablespoons unsalted butter
¼ cup milk

3 tablespoons powdered sugar, or as needed
1 teaspoon milk, or as needed

Steps:

  • Combine warm milk, yeast, and 1/2 cup of flour for dough in the bowl of a stand mixer and whisk to combine. Let sit until a "sponge" forms, about 30 minutes.
  • Add egg yolks, sugar, melted butter, salt, and vanilla extract to the "sponge" and whisk until combined. Add remaining 1 cup flour and mix using a dough hook attachment on low speed, scraping down the bowl occasionally with a spatula, until a soft, smooth, slightly elastic dough forms, about 5 minutes. Add more flour and continue to knead if the dough seems too wet and sticky.
  • Remove dough from the bowl and knead by hand, checking consistency, about 1 minute, adding a little more flour if necessary.
  • Transfer the dough to a lightly greased bowl. Toss to coat, cover, and let rise in a warm spot until doubled in size, about 2 hours.
  • While the dough is rising, add butter, milk, honey, sugar, and water to a saucepan and place over medium-high heat; bring to a simmer. Add poppy seeds and cook, stirring, until the mixture thickens up to a spreadable texture, about 5 minutes. Turn off the heat and allow to cool to room temperature before using, 20 to 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat®).
  • Once the dough has risen, transfer to a lightly floured surface and use your hands to roll into a log shape, about 15 inches long. Switch to a rolling pin and roll the dough out into a 10x18-inch rectangle, about 1/8-inch thick.
  • Spread cooled filling over top, leaving about 1 1/2 inches of dough exposed on the longer side that you'll be rolling towards. Brush the exposed edge of dough very lightly with water.
  • Roll up the dough and filling toward the edge you just brushed, finishing with the seam on the bottom. Seal the ends and use your hands to shape the roll as evenly as possible. If you have lots of excess dough on either end, it can be trimmed off.
  • Cut the roll into 8 even pieces and lay flat on the prepared baking sheet. If possible, tuck any seams under the dough spiral as it's placed down. Let sit for 5 minutes.
  • Bake in the center of the preheated oven until well-browned, 20 to 25 minutes. Transfer to a cooling rack and allow to cool to room temperature.
  • While rolls are cooling, combine powdered sugar and milk in a bowl for glaze. Brush warm rolls with the glaze and serve.

2 (.25 ounce) packages active dry yeast
1 teaspoon white sugar
½ cup white sugar
½ teaspoon lemon zest
2 eggs
2 egg yolks
¼ teaspoon salt
6 cups all-purpose flour
7 tablespoons unsalted butter, melted
2 cups poppy seeds
1 cup milk, or as needed
½ cup raisins
2 egg whites
¼ cup honey
¼ cup white sugar
¼ cup chopped walnuts
3 ½ tablespoons unsalted butter, softened
1 egg
1 tablespoon water

Steps:

  • Combine warm milk, yeast, and 1 teaspoon sugar in a large bowl; stir well. Let stand until yeast softens and begins to form a bubbly foam, about 5 minutes.
  • Stir 1/2 cup sugar and lemon zest into the yeast mixture. Whisk in 2 eggs and egg yolks, 1 at time, mixing well after each addition. Add salt. Stir in flour gradually. Add melted butter and blend well. Knead dough until glossy and elastic, about 10 minutes. Form into a ball and place in a large, lightly-oiled bowl and turn to coat. Tender, soft, sweet yeast bread swirled with a creamy homemade poppy seed filling. Growing up, my mother and aunts always made this Eastern European bread for Easter and Christmas. Looks complicated, but is easy enough to make for an Old-World treat. I like it best after the second day.

½ pound poppy seeds
¾ cup white sugar
1 tablespoon butter, melted
1 teaspoon lemon juice
½ cup hot milk
1 (.25 ounce) package active dry yeast
½ cup warm water (100 degrees F/38 degrees C)
2 tablespoons white sugar
2 cups all-purpose flour, or more if needed
½ teaspoon salt
¼ cup butter
1 egg, separated - white reserved

Steps:

  • Place poppy seeds into a food processor and process until seeds are ground, about 1 minute.
  • Mix poppy seeds with 3/4 cup sugar, 1 tablespoon melted butter, lemon juice, and hot milk in a bowl; stir to combine. Cover poppy seed filling and refrigerate while making bread (filling will set up and thicken as it chills).
  • Mix yeast with water and 2 tablespoons sugar in a small bowl. Allow to stand until the yeast forms a creamy layer.
  • Whisk flour with salt in a bowl; use a pastry cutter to cut 1/4 cup butter into the flour mixture until the mixture resembles coarse crumbs.

POPPY SEED AND APRICOT BABKA

Ever since I tasted grey poppy seeds in Austria (a specialty from an area called Waldviertel) they are my favorite kind but but they are hard to find; black poppy seeds work just as well. Poppy seeds turn rancid very quickly so grind them just before using, unless you have a source for freshly ground poppy seeds. Use only high-quality, soft dried apricots. Blenheim apricots which are grown in California are hands-down the best.

⅓ cup poppy seeds
½ cup whole almonds with skins
½ cup milk
¼ cup white sugar
1 cup dried pitted apricots
3 pods cardamom, ground
4 ounces reduced-fat cream cheese, softened
2 tablespoons white sugar
1 tablespoon heavy cream
½ teaspoon vanilla extract
½ cup milk
5 tablespoons unsalted butter
1 teaspoon active dry yeast
2 cups all-purpose flour
½ teaspoon salt
1 large egg
3 tablespoons white sugar
½ teaspoon vanilla extract
2 medium dried pitted apricots
2 tablespoons heavy cream, or as needed
2 tablespoons poppy seeds, or to taste

Steps:

  • Finely grind the poppy seeds for filling using a coffee grinder.
  • Toast the almonds in a non-greased frying pan over medium-low heat until they are lightly browned, about 5 minutes. Let cool, about 5 minutes. Reserve about 1 dozen for the topping and finely grind the rest in a food processor.
  • Combine ground poppy seeds, ground almonds, 1/2 cup milk, and 1/4 cup sugar in a saucepan. Slowly bring to a boil, stirring often. Cook until it starts to thicken, about 1 minute, stirring constantly. Remove from the heat. Stir in apricots and cardamom and let cool, then refrigerate until using.
  • Whisk cream cheese, 2 tablespoons sugar, heavy cream, and vanilla together in a bowl until smooth. Refrigerate until using.
  • Make the yeast dough: Heat milk and and butter in a saucepan over low heat. Remove from the heat and let cool to lukewarm, 2 to 3 minutes. Stir in yeast and let stand until it becomes frothy, about 5 minutes.
  • Combine flour and salt in the bowl of a stand mixer. Add egg, sugar, vanilla, and yeast mixture. Knead for 4 to 5 minutes on low speed, until the dough is elastic and detaches from the bowl.
  • Drizzle with a little vegetable oil and turn the dough over so it is lightly oiled all around. Cover the bowl with a damp tea towel and a large plate and let rise in a warm place for 60 to 90 minutes.
  • Punch down the dough and roll it out on a silicone baking mat to a square about 1/4 inch thick. Evenly spread with cream cheese mixture and leave 2 inches free at the far end. Spread with an even layer of the poppy seed filling. Roll it up tightly using the baking mat, and fold in the two sides as you go. Pinch the seems together with your fingertips to seal. Place the roll on a large plate and refrigerate for 30 minutes to firm it up.
  • Place the roll on a large cutting board and cut it in half lengthwise with a sharp, large knife, dipping it in warm water a few times so the filling won't stick.
  • Gently separate the roll into two strands. With the cut sides inwards, twist the two strands around each other. Seal the ends by pinching with your fingertips. Grease a loaf pan and line with parchment. Place the babka in the pan. Cover and let rise in a warm place until visibly risen, 60 to 75 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Coarsely chop the remaining almonds. Cut apricots into thick strips.
  • Brush the dough parts with heavy cream. Place the apricot strips along the seams and sprinkle the dough parts with almonds and poppy seeds.
  • Bake on the center rack of the preheated oven until nicely browned, 40 to 50 minutes. If the top browns before the time is up, cover it with a large sheet of parchment paper. Remove from the oven and let cool in the pan for 10 to 15 minutes. Gently unmold onto a wire rack and let cool completely before cutting.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
1 cup sour cream
1/2 cup sugar
1/2 cup butter, melted
2 large eggs

NUT FILLING:
1 cup ground pecans
1/2 cup sugar
1/2 cup chopped dates
1/2 cup 2% milk
1 teaspoon salt
1 large egg white
POPPY SEED FILLING:
1 can (12-1/2 ounces) poppy seed cake and pastry filling
1/4 cup chopped raisins
1/4 cup chopped walnuts

  • In a large bowl, dissolve yeast in warm water. Add milk, sour cream, sugar, butter, eggs, salt and 3 cups flour. Beat until smooth. Beat in remaining flour until mixture forms a soft dough. Number Of Ingredients 22

1/2 cup dried currants
3 tablespoons cognac
2 tablespoons unsalted butter
3/4 pound ground poppy seeds
1/4 cup honey
Juice of 1 lemon
2 egg whites
1/2 cup granulated sugar
2 packages active dry yeast
1/2 cup of warm water
1/2 cup (1 stick) unsalted butter
2 tablespoons unsalted butter
1/2 cup sour cream
1 teaspoon vanilla extract
Juice of 1 lemon
2 large eggs (plus 2 egg yolks) lightly beaten
4 1/2 cup all purpose flour
3/4 cup granulated sugar
1/2 teaspoon of salt
2 extra eggs beaten together with 1 tablespoon water, for glaze
2 cups apricot lekvar
1 cup unsalted pistachio nuts, finely chopped.

Steps:

  • Soak currants in cognac for 3 hours.
  • Dissolve yeast in the warm water. Melt butter. Combine yeast, melted butter, sour cream, vanilla, eggs, and egg yolks. Sift together flour, sugar, and salt, add to yeast mixture, and stir until well blended. Knead on a floured board until smooth and elastic. Place in a buttered bowl, cover, and allow to rise in a warm place until doubled in bulk, about 1 to 1 1/2 hours.
  • In a large, heavy skillet, melt butter for the poppy-seed filling. Add poppy seeds and saute or a few minutes. Transfer to a bowl and mix in the honey, lemon juice, and currants. Whip the egg whites until frothy. Add the sugar 1 tablespoon at a time and continue whipping until very stiff. Fold the egg whites into the poppy-seed mixture.
  • In another bowl, combine apricot lekvar and pistachios for the apricot filling.
  • Divide dough into four equal parts. On a floured board, roll each portion of dough into a large rectangle 1/4 inch thick. Spread poppy-seed filling evenly on two of the rectangles and the apricot filling on the other two rectangles, leaving a 1-inch margin on the two short sides and one long side of each. Wet the margins with water and roll up each rectangle, beginning with the edge that has no margin. Form each into a crescent, sealing the edges together, and place on parchment-lined baking sheets. Cover and allow to rise approximately 1 hour in a warm place.
  • Heat the oven to 350 degrees.
  • Brush the rolls with the egg glaze. Using a sharp knife, make slits in the top of each crescent. Bake for 45 to 60 minutes, until deep gold. Cool on a wire rack.

  • Make the poppy seed filling: Use a spice grinder or a food processor to pulse the poppy seeds for about 30 seconds. You can do this in batches if needed, but I added them all at once. Add the seeds to a medium bowl, then the boiling water along with the rest of the filling ingredients. Mix well and set aside to cool.
  • Make the dough: In the bowl of your mixer, add the warm milk, then sprinkle the yeast over the milk. Give it about 5 to 10 minutes for the yeast to bloom, then add the flour, yeast, sugar, salt, milk, oil, and egg to the bowl, and mix for a few minutes to combine the ingredients. Let the hook knead the ingredients, adding a bit of extra flour if the dough it too sticky, until the ball of dough comes clean off the sides of the bowl.
  • Let the dough rise: Cover the bowl with the dough with plastic wrap and let it rise in a warm environment for 30 minutes to an hour or until doubled in size. Meanwhile, line a baking sheet with parchment paper.
  • Fill the dough: Roll the dough to a 14"x16" rectangle. Spread the filling, leaving about a 1/2" border of dough on the edges. Roll the dough starting at the 14" end. Pinch the edges and tuck the ends under the roll to seal the filling inside. Place the roll on the prepared baking sheet and rise for another 30 minutes to 1 hour or until doubled in size.
