EASY BEER BISCUITS (DROP BISCUIT STYLE W/OPTIONAL CHEESE)



Easy Beer Biscuits (Drop Biscuit Style w/Optional Cheese) image

Easy drop beer biscuits. One batch yields a dozen. You can add shredded cheese if desired or a bit more sugar than suggested for a sweeter version.

2 cups all purpose flour
1 tbsp baking powder
1 tbsp sugar (optional, reduce or skip if you do not want sweet biscuits)
1/2 tsp salt
1/2 cup cold butter, cut in cubes*
1 cup beer (such as American craft lager)

Steps:

  • Preheat the oven to 425 F and line a baking sheet with parchment paper.
  • In the bowl of a food processor combine all the dry ingredients and pulse to combine.
  • Add the cold, cubed stick of butter and pulse until the butter is broken down into small pieces and the mixture resembles cornmeal.
  • Add the beer and pulse about ten times. Stop as soon as the mixture clumps and sticks to the side of the food processor bowl.
  • Use a large cookie scoop or two spoons to drop beer biscuit mixture onto the parchment paper lined baking sheet. **
  • Bake until the biscuits turn golden (about 15 minutes) in the lower half of the oven. ***

Pop-a-Top Beer Biscuits image

Serve these with butter, preserves, honey, gravy or they can also be used as dinner rolls. These light and flakey biscuits where perfect for our leftover pork roast and gravy! Try a hot one slathered with butter and your favorite jam for breakfast. Hope you enjoy!

Number Of Ingredients 6

1 c all purpose baking mix
1 c self rising flour
1 tsp baking powder
6 Tbsp butter, frozen
2/3 c beer or you can use tonic water (i used lite beer) don't finish off the beer just yet, may need a few extra drops if dough is too dry
butter for skillet

Steps:

  • 1. Preheat oven to 450 degrees. Melt a little butter in bottom of cast iron skillet (I used 10-inch skillet).
  • 2. In a mixing bowl add baking mix, flour and baking powder; whisk to combine. (yes I used baking powder with self-rising flour for a lighter biscuit)
  • 3. Grate frozen butter through the large holes of a cheese grater into the flour mixture; toss to combine. NOTE: I used a paper towel to grip butter as I got to the end and it became slippery.
  • 4. Stir beer into flour/butter mixture; stir until moistened. Dough will be thick. Add a few more drops if dough is too dry. NOTE: Got the message from my friend Kathy Griffin and what a nice tip: "I made these again this morning, but I didn't want to pop a top at 8 in the morning lol, so I used tonic water, I know the beer gives them a slight different taste and smell, but, the tonic water gave them the same texture. So for anyone that doesn't want to use beer in them try it with tonic water"
  • 5. Pat out dough on a floured surface to about 1/2-inch thick. Cut with biscuit cutter (I used 2 1/2-inch cutter). I had enough dough for 12 biscuits.
  • 6. Place biscuits in heated skillet, brush melted butter on top if desired (I did). Bake 12 to 14 minutes until lightly browned on top.

1 tsp. salt
2 sticks unsalted butter
1/2-cup beer

Steps:

  • Preheat oven to 425 degrees F. Sift together dry ingredients. Cut in butter with a fork or pastry mixer until mixture is consistency of crumbs. Add a quarter cup of the beer, stirring gently to combine, and then add remaining beer and mix gently to make soft, sticky dough. Do not over-mix or biscuits will be tough. Pat dough out on a floured work surface to a thickness of 1/2 - to 3/4-inches and cut into biscuits. Place on baking pan and bake 15-20 minutes until golden brown.

1 cup beer
6 cups all-purpose flour
3 tablespoons baking powder

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, mix all ingredients with a whisk until just combined. Using 2 spoons divide dough into 4 even mounds and put on a baking sheet. Bake for 8 to 10 minutes until golden brown.
  • In a large bowl combine the flour, baking powder and salt. Cut in the shortening with a pastry knife or fork until the mixture is well blended. Use in recipes that call for Bisquick or all-purpose mix.
  • Yield: 7 cups

ALE AND CHEDDAR BISCUITS

2 1/2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons kosher salt
1/4 teaspoon baking soda
8 tablespoons (1 stick) cold unsalted butter, cut into cubes
1 cup shredded Cheddar cheese
1 cup buttermilk
1/2 cup ale

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Whisk together the flour, baking powder, salt and baking soda in a large bowl. Add the butter and use your hands to work it into the flour mixture until it resembles small pebbles. Add the Cheddar and toss lightly.
  • Add the buttermilk and ale and stir in with a wooden spoon just to combine. Using a 1/4 cup measure, scoop the dough onto the baking sheet, leaving about 1 1/2 inches between biscuits. Bake until golden brown, 20 to 25 minutes. Serve warm.

3/4 cup beer (use a light coloured beer)

Steps:

  • In a large bowl sift all dry ingredients together.
  • Using a pastry cutter cut in shortening until cornmeal consistancy, then stir in beer.
  • Knead lightly, then gather into a large shaped ball and wrap in plastic wrap.
  • Refrigerate for 1 or more hours before forming dough.
  • Pat the dough into about 1-1/2-inch thickness.
  • Cut out with biscuit cutter.
  • Place on lightly greased cookie sheet.
  • Set oven to 450 degrees F.
  • Bake for 10-12 mins, or until golden brown.

VANILLA CHICK BISCUIT POPS

Yield Makes 15-18 biscuits

Number Of Ingredients 13

200g unsalted butter , at room temperature
100g golden caster sugar
1 medium egg , beaten
1 tsp vanilla extract
200g plain flour , plus extra for dusting
200g icing sugar
2 tbsp milk
few drops yellow food colouring
75g unsweetened desiccated coconut
50g small chocolate chips
25g orange or white fondant icing , plus a few drops orange food colouring
15-18 lolly sticks (see tip)
ribbon , to decorate (optional)

Steps:

  • Put half the butter and all the sugar in a bowl. Using an electric whisk or wooden spoon, beat together until smooth and creamy. Beat in the egg and half the vanilla extract until thoroughly combined.
  • Tip the flour into the mixture and mix on a low speed until it comes together to form a dough. Gather up into a ball, wrap in cling film and chill in the fridge for 20 mins.
  • Heat oven to 180C/160C fan/gas 4. Line 2 baking trays with baking parchment. Put the biscuit dough on a lightly floured surface and roll out until about 5mm thick. Cut out the biscuits using a 6cm round cutter. Transfer the biscuits to the prepared trays and insert the lolly sticks into the sides, just a quarter of the way through. Bake for 6-7 mins until the edges are golden brown, then carefully transfer to a wire rack and allow to cool completely before decorating.
  • Meanwhile, make some buttercream frosting. Place the remaining softened butter in a bowl and beat with a wooden spoon. Slowly add the icing sugar, 1 tbsp at a time, until thoroughly incorporated and you have a smooth, creamy mixture. Add a little milk and the remaining vanilla extract with a few drops of food colouring to give a pale yellow colour. Chill for 5 mins.
  • Put the desiccated coconut in a small bowl, add a few drops of yellow food colouring and mix well until the coconut is coloured pale yellow.
  • Spread the buttercream frosting over one side of the biscuit and sprinkle with the coconut. Add 2 chocolate chip eyes to each. Pinch a little orange fondant icing and shape into a beak and press into the mixture. Decorate with a ribbon, if you like, and serve. Will keep for 2 days in an airtight container.

1 1/4 cups shredded pizza cheese blend (5 oz)

1 tablespoon butter, melted

Steps:

  • Heat oven to 450°F. In medium bowl, stir Bisquick mix, beer, garlic powder and 1 cup of the cheese until soft dough forms.
  • Place dough on surface sprinkled with additional Bisquick mix; knead 10 times. Roll until 1/2 inch thick. Cut with floured 2 1/2-inch biscuit cutter. Place on ungreased cookie sheet. Sprinkle remaining 1/4 cup cheese evenly over rounds, about 1 teaspoon on each. Sprinkle with pepper.
  • Bake 8 to 10 minutes or until golden brown. Brush tops of biscuits with melted butter. Serve warm.
