- In a Dutch oven, combine pomegranate juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir for 2 minutes., Remove from the heat; skim off foam. Ladle hot liquid into six hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

- Combine pomegranate and lemon juice with sugar in a large, stainless steel saucepan. Bring to boil over high heat, and at once stir in liquid pectin. Bring to a full rolling boil, and boil exactly 1/2 minute. Remove from heat, and skim off foam.
- Ladle into hot, sterilized jars to within about 1/4 inch of the top. Seal, and process in a boiling water canner for 5 minutes.

- Sterilize 5 half-pint jars. Set aside.
- Pour the champagne into a large pot, and stir in sugar and vinegar. Bring to a full rolling boil, and stir in the pectin. Boil hard for one minute while stirring vigorously. Remove from heat, and ladle into sterile jars to within 1/2 inch of the top.
- Wipe rims with a clean dry cloth, and seal with lids. Allow to cool to room temperature, then refrigerate. The jelly may take a few days to set.

- Place the champagne and sugar in a saucepan. Remove 2 tablespoons of the champagne to a small condiment bowl; sprinkle the powdered gelatin over the champagne in the bowl. Let stand until set, about 1 minute.
- Gently heat the champagne and sugar together, stirring constantly, until the sugar dissolves. Do not boil. Add the bloomed gelatin and stir until melted. Let stand until room temperature, about 20-25 minutes, or until barely warm to the touch (hot liquid will pop the boba). Transfer the mixture to a glass measure with a pour spout.
- Drain the boba in a sieve and place them on paper towels. Gently transfer and evenly divide spoonfuls of the boba between each of 18 shot glasses (1.75 capacity each). Pour the champagne over the boba. Place in the refrigerator until set, about 2 hours.
- In the bowl of an electric mixer, beat the heavy cream to soft peaks. Transfer to a piping bag or to a zip-top bag with a corner snipped. Pipe the whipped cream on top of the jelly. Sprinkle with nonpareils and gold stars. Refrigerate until ready to serve.
