Everyone loves chicken nuggets, but sometimes we don't want all the fat that comes with deep frying. This recipe will give you the crispy crunchiness you love about chicken nuggets without the oil. This is an easy recipe and can replace your pre-made (processed, yuck!) frozen chicken nuggets! For more heat, just add some cayenne pepper to the breadcrumbs. Any dipping sauce will do!

nonstick cooking spray
¼ cup all-purpose flour
1 large egg, beaten
1 cup panko breadcrumbs, or more as needed
1 tablespoon red pepper flakes
¼ teaspoon ground chili powder
¼ teaspoon ground paprika
¼ teaspoon garlic powder
¼ teaspoon dried chives
1 pound skinless, boneless chicken breast, cut into strips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Put flour in a bowl. Put egg in a second bowl. Pour panko, red pepper flakes, chili powder, paprika, and chives in a third bowl with a lid; mix until combined.
  • Dip chicken strips in flour to dust them, then dredge in egg, making sure to let excess egg drop off, and then place in panko mixture. Cover with the lid and shake until chicken is well coated. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, 10 to 12 minutes.

1-1/2 cups panko bread crumbs
1-1/2 cups grated Parmesan cheese
1/2 teaspoon ground chipotle pepper, optional
1/4 cup butter, melted
1-1/2 pounds boneless skinless chicken thighs, cut into 1-1/2-inch pieces

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix bread crumbs, cheese and, if desired, chipotle pepper. Place butter in a separate shallow bowl. Dip chicken pieces in butter, then in crumb mixture, patting to help coating adhere., Place chicken on a greased 15x10x1-in. baking pan; sprinkle with remaining crumb mixture. Bake 20-25 minutes or until no longer pink.

These are a more adult version of chicken nuggets that are really easy to make, lower in fat than the traditional style nuggets, and classy enough to serve to company. Great with any dipping sauces.

2 boneless skinless chicken breasts
1/3 cup olive oil
salt
pepper
chili powder, i use chipotle powder
4 garlic cloves, minced
1 cup panko breadcrumbs

Steps:

  • Cut chicken into bite size nugget pieces.
  • Mix in bowl with oil, garlic, salt, pepper and chili power to taste. You can add variety here, but using whatever type of seasonings you want!
  • Allow to marinate for 30 minutes.
  • DO NOT drain. Stir in panko bread crumbs into the chicken until well coated and allow to sit for 5-10 minutes to absorb the moisture and stick better.
  • Bake in a glass dish for 15 minutes at 475 degrees.
  • Serve with dipping sauces.

3/4 cup KRAFT Classic Ranch Dressing

Steps:

  • Heat oven to 400°F.
  • Mix mayo and wing sauce until blended. Add to chicken in large bowl; toss until chicken is evenly coated with mayo mixture.
  • Add chicken, 3 or 4 chicken pieces at a time, to coating mix in shaker bag; shake until evenly coated. Place on rimmed baking sheet sprayed with cooking spray. Discard any remaining coating mix.
  • Bake chicken 15 min. or until done. Serve with dressing.

2 thawed chicken breasts
2 tablespoons cornstarch
2 tablespoons onion and garlic powder
1 1/2 tablespoons cumin
garlic salt
pepper
1 1/2 tablespoons olive oil

Steps:

  • Cut chicken breast into 1 inch cubes.
  • Combine corn starch, garlic and onion powder and cumin in a bowl. Mix well.
  • Coat each piece of chicken with the corn starch/spice mixture.
  • Sprinkle garlic salt and pepper over chicken pieces.
  • Refrigerate for 1-2 hours.
  • Heat olive oil in skillet over medium heat.
  • Add chicken pieces and cook until no longer pink.

My husband loves spicy foods and fried foods. I came up with this to satisfy his cravings but also make it much healthier for me to eat as well. I'm the type of cook that doesn't measure ingredients so The Spices and such listed below are to taste and may not be exact measurement. They are as accurate as I can get. I use egg beaters instead of eggs to cut out the fat and cholesterol..I cannot tell any difference.

1 cup Egg Beaters egg substitute
1/2 Frank's red hot sauce
2 cups panko breadcrumbs
2 tablespoons garlic powder
1 cup shredded parmesan asiago and romano cheese blend (Kraft)
2 tablespoons lowrey's seasoning
1 tablespoon pepper
1 tablespoon oregano
3 boneless chicken breasts
3 tablespoons olive oil

Steps:

  • Preheat oven to 400 deg.
  • *in one bowl combine the egg beaters and the hot sauce.
  • *in another bowl add the the rest of the ingredients except for the olive oil and chicken.
  • *dip chicken in the panko mix, egg mix, back to the panko mix.
  • Add one tspn olive oil in a sautee pan.
  • Brown the chicken for two min on each side then set aside on baking sheet.
  • When all the chicken breasts are cooked 2 min on each side. Throw in the oven for approximately 15 minute More or less depending on the size of your chicken breasts.
