POLYNESIAN-STYLE FRIED BROWN RICE



Polynesian-Style Fried Brown Rice image

Brown rice flavored with ginger and sesame is stir-fried with red onion, red bell pepper, pineapple and a little bacon for a side dish with some Polynesian flair.

Number Of Ingredients 13

2 cups uncooked brown rice
2-1/2 cups low-sodium chicken broth
1/2 cup orange juice
1 tablespoon toasted sesame oil
1- inch piece of fresh ginger (quartered)
2 strips thick-cut bacon (cut into 1/4-inch dice)
Vegetable or peanut oil
1/2 cup red onion (chopped)
1 medium red bell pepper (cut into 1/4-inch dice)
2 cloves garlic (finely chopped)
1 egg (lightly beaten)
1 cup fresh pineapple (cut into 1/4-inch dice)
3 tablespoons soy or fish sauce

Steps:

  • Preheat the oven to 375°F. Place the brown rice in a shallow 3-quart casserole or 13 x 9-inch baking dish. Add the chicken broth, orange juice, and sesame oil.
  • Smash the ginger pieces with the side of a large knife to help release the flavor, then add them to the rice. Stir once and cover tightly.
  • Bake for 1 to 1-1/4 hours, or until the rice is tender and all the liquid has been absorbed. Remove from the oven, fluff with a fork and cool completely, about 90 minutes.
  • Heat a wok or large pan over medium-high heat and fry the bacon until just barely crisp. Raise the heat to high and add about 1/2 of the rice.
  • Stir fry for about 2 minutes, tossing constantly with a spatula. Make a well in the center of the rice, add a bit of oil, then add the onion, bell pepper, and garlic.
  • Continue cooking for another 1 to 2 minutes until the onion is soft and translucent and combine with the rice thoroughly.
  • Once again, make a well in the center of the rice and add a little more oil.
  • Start adding the remaining rice in small increments, continually stir-frying until all the rice is heated through and golden brown.
  • Make another well in the center of the rice and add the egg. Cook until set, scramble and distribute throughout the rice.
  • Stir in the pineapple and soy (or fish) sauce, mix thoroughly and serve.

Number Of Ingredients 10

3 cups uncooked long grain rice
10 tablespoons margarine or butter, divided
8 large eggs
1 can (12 ounces) lite SPAM, cut into 1/4-inch cubes
1/3 cup chopped onion
4 cups frozen mixed vegetables (about 16 ounces), thawed and drained
2 garlic cloves, minced
1/2 teaspoon pepper
1/3 cup soy sauce
Sliced green onions, optional

Steps:

  • Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. Add Spam and onion; cook and stir until Spam is lightly browned, 6-8 minutes. Add mixed vegetables, garlic and pepper; cook until heated through. Stir in cooked rice, soy sauce and remaining 1/2 cup margarine; cook and stir until margarine is melted. Gently stir in eggs. If desired, top with sliced green onion.

CRISPY HAWAIIAN FRIED RICE

Number Of Ingredients 14

3 tablespoons vegetable oil
4 to 5 slices deli ham
1 teaspoon barbecue spice rub
3 scallions, sliced thin on the bias, white and green parts separated
4 cups cooked rice
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 tablespoon chile garlic sauce, chile paste or curry paste, optional
1 tablespoon grated fresh ginger
1/2 cup frozen peas
1/4 cup fresh, frozen or canned pineapple, chopped
1 large egg, cooked sunny-side up
1 teaspoon canned french-fried onions
1 teaspoon black sesame seeds

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
  • Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
  • Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

I make this in a rice cooker and it's super simple! When I have frozen diced onion, red, and green bell pepper mix on hand, I use 2 T of that in place of the fresh onion and peppers, and it's every bit as good. I really prefer the mix of red and green peppers in this dish to just plain ol' green sweet peppers. I frequently use the reduced sodium version of both the soy sauce and the chicken broth and it turns out just fine.

5 tablespoon(s) soy sauce
1/2 cup(s) plus 2 tbsp. water
1 cup(s) minute rice
1/4 pound(s) ground pork
1 tablespoon(s) butter
5 - green onions, chopped
1 - egg, beaten

Steps:

  • Bring soy sauce and water to a boil in a covered saucepan; add rice and stir. Cover and remove from heat, and let stand 5 minutes.
  • Brown ground pork and add butter and 4 of the green onions.
  • Add rice and cook on medium heat until rice is fairly dry, stirring often.
  • Heap rice into a mound into he center of the frying pan and pour beaten egg over the top. Stir quickly and cook for a few seconds until egg is absorbed.
  • Sprinkle remaining onions on top.
