Melt-in-Your-Mouth Broiled Salmon image

Fresh salmon with butter and herbs melts in your mouth; it's truly the best. Serve it with wild rice pilaf and fresh string beans.

1 clove garlic, chopped
2 tablespoons olive oil
4 (6 ounce) salmon fillets
½ cup butter
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
¼ cup white wine
1 teaspoon ground black pepper
1 teaspoon garlic salt
1 ½ teaspoons fines herbs
¼ cup chopped fresh dill

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
  • Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
  • Place the salmon fillets skin-side down on the prepared pan. Spoon about 1/3 of the butter sauce over the fillets, and sprinkle evenly with the fresh dill.
  • Broil in the preheated oven for 3 minutes. Turn salmon fillets so that the side of the fillet faces up, and baste fillets with about 1/3 of the butter sauce; broil for 3 minutes. Turn the fillets to place the opposite side facing up; spoon on the remaining butter sauce; broil until the fish flakes easily with a fork, about 3 additional minutes.

Broiled Salmon with Apple-Date Chutney image

Steamed green beans and a rice or pasta salad from the deli go nicely with this entrée inspired by the Pacific Northwest. End with a simple but sophisticated dessert of coffee ice cream drizzled with brandy and sprinkled with toasted hazelnuts. Can be prepared in 45 minutes or less.

Number Of Ingredients 8

2 1-inch-thick salmon steaks (each about 6 ounces)
6 teaspoons olive oil
1 1/2 teaspoons curry powder
2/3 cup chopped red onion
3/4 cup chopped peeled tart green apple
1/4 cup chopped pitted dates
2 tablespoons apple juice
1 tablespoon white wine vinegar

Steps:

  • Preheat broiler. Brush each salmon steak with 1 teaspoon oil. Sprinkle each with 1/4 teaspoon curry powder, salt and pepper. Broil salmon until just opaque in center, about 5 minutes per side.
  • Meanwhile, heat remaining 4 teaspoons oil in heavy medium skillet over medium-low heat. Add onion and sauté until onion begins to soften, about 3 minutes. Mix in apple, dates, apple juice and remaining 1 teaspoon curry powder. Cook 2 minutes longer. Mix in vinegar; simmer 1 minute. Season chutney to taste with salt and pepper.
  • Transfer salmon to plates. Spoon chutney alongside and serve.

Hot Smoked Salmon with Salad of Apples, Dried Cherries, Hazelnuts and Greens and Apple Cider Vinaigrette image

1/2 cup kosher salt
2 tablespoons granulated sugar
2 tablespoons light brown sugar
2 teaspoons crushed black peppercorns
1 (3 to 3 1/2-pound) piece center-cut salmon, skin on, pin bones removed, halved
Alderwood chips, soaked in cold water for 4 hours
Salad of Apple, Dried Cherries, Hazelnuts and Greens with Apple Cider Vinaigrette, recipe follows
1/4 cup apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
Salt and freshly ground black pepper
1/4 cup canola oil
4 ounces organic baby greens, roughly chopped
1 Gala apple, cored and thinly sliced
1 Granny Smith apple, cored and thinly sliced
1 cup dried cherries
1 cup peeled, toasted hazelnuts, chopped

Steps:

  • In a medium bowl, mix together the salt, granulated sugar, brown sugar and peppercorns. Spread extra-wide aluminum foil a little longer than the length of the fish on the work surface and top with an equally long layer of plastic wrap. Lay 1 half of the salmon, skin-side down, on the plastic wrap. Sprinkle the rub onto the flesh of the salmon. Place the second half of the salmon, flesh-side down, on top the first half. Fold the plastic over to cover, and then close the foil edges together and crimp tightly around the fish.
  • Place the wrapped fish onto a sheet pan and top with another sheet pan. Weigh down with a brick or 2 and refrigerate for 12 hours. Flip the fish over and refrigerate another 12 hours. Some juice will leak out during the process so make sure there's a place for the runoff to gather.
  • Unwrap the fish and rinse off the cure mixture with cold water. Pat the salmon dry with paper towels and place in a cool, dry place (not the refrigerator) until the surface of the fish is dry and matte-like, 1 to 3 hours depending on humidity. A fan may be used to speed the process.
  • Prepare a smoker with alderwood chips. Smoke the salmon over the smoldering chips, keeping the temperature inside the smoker at about 200 degrees F, until the thickest part of the fish registers 150 degrees F, about 1 hour. Serve immediately or cool to room temperature, wrap tightly and refrigerate for up to 3 days.
  • Place the salmon on a platter. Drizzle with some of the reserved Apple Cider Vinaigrette, and top with the Salad of Apple, Dried Cherries, Hazelnuts and Greens. Serve.
  • Whisk together the vinegar, honey, mustard and salt and pepper, to taste, in a large bowl. Slowly whisk in the oil until emulsified. Reserve some to drizzle over the fish. Add the greens, apples, cherries and hazelnuts to the remaining vinaigrette and toss to combine. Season with salt and pepper.

SPICE-RUBBED GRILLED SALMON WITH TAMARIND-DATE CHUTNEY



Spice-Rubbed Grilled Salmon with Tamarind-Date Chutney image

For a flavorful dinner, grilled salmon is rubbed with a mixture of toasted black mustard seeds and ground coriander and cumin. Tamarind-Date Chutney is the perfect complement to the fish.

1 teaspoon black mustard seeds
1 1/2 tablespoons whole coriander seeds
2 teaspoons whole cumin seeds
1 tablespoon coarse salt
1 teaspoon ground turmeric
1/2 teaspoon whole black peppercorns, slightly crushed
1 side of salmon (about 2 3/4 pounds), boned, with skin on
1 tablespoon vegetable oil, plus more for grill or grill pan
10 fresh hot chiles for the platter (optional)
6 limes, cut into wedges, for the platter
Tamarind-Date Chutney

Steps:

  • Place the mustard seeds in a small, dry heavy skillet. Place skillet over medium heat, moving skillet to keep seeds from burning, until seeds are toasted, about 5 minutes. Transfer mustard seeds to a small bowl. Place coriander and cumin seeds in the skillet. Toast over medium heat, shaking skillet to move the seeds, until they are aromatic, 3 minutes. Transfer these seeds to a spice grinder, and grind until fine. Transfer mixture to the bowl with the mustard seeds; stir in the salt, turmeric, and peppercorns.
  • Place the salmon on a clean work surface. Rub skin side with 1 tablespoon oil, and turn salmon over. Use your fingers to spread the spice rub all over the flesh side of the salmon. (If the salmon is chilled, let sit 10 to 15 minutes at room temperature for even cooking.) Rub grill very well with the oil; heat until very hot. Grill the salmon, flesh-side down, until flesh turns opaque about halfway up the fish, 5 to 10 minutes. Use two large spatulas to turn over the fish. Cook just until fish is opaque throughout and still very moist, 5 to 15 minutes more. Transfer to a platter; garnish with fresh chiles (if using) and lime wedges. Serve with Tamarind-Date Chutney.

4 salmon steaks, 1/2 to 3/4 inch thick (4 oz each)

Steps:

  • In 1-quart saucepan, mix all chutney ingredients. Heat to boiling. Reduce heat to medium-low; cook 12 to 15 minutes, stirring frequently, until onion is tender and sauce is slightly thickened.
  • Meanwhile, heat closed contact grill for 5 minutes.
  • When grill is heated, place salmon steaks on bottom grill surface. Close grill; cook 6 to 8 minutes or until salmon flakes easily with fork. Serve salmon with chutney.
