WILD MUSHROOM PIEROGIES



Wild Mushroom Pierogies image

For filling
1 cup boiling water
2/3 oz dried porcini mushrooms
1 medium onion, quartered
2 garlic cloves, crushed
6 oz cremini mushrooms, quartered
1 1/2 tablespoons unsalted butter
1 tablespoon finely chopped fresh flat-leaf parsley
Pierogi and vareniki dough
For onion topping
1 lb onions, chopped
1/2 stick (1/4 cup) unsalted butter
Accompaniment: sour cream
Special Equipment
a 2 1/2-inch round cookie cutter

Steps:

  • Make filling:
  • Pour boiling water over porcini in a small bowl and soak until softened,10 to 20 minutes. Lift porcini out of water, squeezing excess liquid back into bowl, and rinse well to remove any grit. Pour soaking liquid through a paper-towel-lined sieve into a bowl and reserve.
  • Finely chop onion and garlic in a food processor, then add cremini and porcini and pulse until very finely chopped.
  • Heat butter in a skillet over moderate heat until foam subsides, then cook mushroom mixture, stirring frequently, until mushrooms are dry and 1 shade darker, about 8 minutes. Add reserved soaking liquid and simmer, stirring frequently, until mixture is thick, dry, and beginning to brown, about 15 minutes (there will be about 1 cup filling). Stir in parsley and salt and pepper to taste. Cool completely.
  • Roll out dough and fill pierogies:
  • Halve dough and roll out 1 piece on a lightly floured surface into a 15-inch round, keeping remaining dough wrapped. Cut out rounds (about 24) with floured cutter. Put 1 teaspoon filling in center of each round. Working with 1 round at a time, moisten edges with water and fold in half to form a half-moon, pinching edges together to seal. Transfer pierogies as assembled to a flour-dusted kitchen towel. Repeat with remaining rounds, then make more pierogies with remaining dough and filling.
  • Cook onions and pierogies:
  • Cook onions in butter in a large heavy skillet over moderately low heat, stirring frequently, until golden brown, about 30 minutes. Season with salt and pepper and keep warm.
  • Cook pierogies in a large pot of lightly salted boiling water until tender, 12 to 15 minutes. Transfer with a slotted spoon to skillet with onions. Toss gently to coat and serve immediately.

SAUTEED WILD MUSHROOMS

2 pounds mixed wild mushrooms, such as cremini, shiitake, porcini, and portobello
1/2 cup good olive oil
1 cup chopped shallots (4 large)
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped garlic (6 cloves)
1 cup chopped flat leaf parsley

Steps:

  • Brush the caps of each mushroom with a clean sponge. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.
  • Heat the olive oil in a large (11 - inch) Dutch oven or saucepan. Add the shallots and cook over low heat for 5 minutes, or until the shallots are translucent. Add the butter, mushrooms, salt, and pepper and cook over medium heat for 8 minutes, until they are tender and begin to release their juices, stirring often. Stir in the garlic and cook for 2 more minutes. Toss in the parsley, sprinkle with salt, and serve warm.

This recipe comes from Mark's Polish family. I seem to remember him talking about going out with family to pick wild mushrooms...

4 cup(s) mushrooms, fresh or dried, cut
1 large onion
3 tablespoon(s) oil
1 clove(s) garlic
2 tablespoon(s) flour
1 tablespoon(s) lemon juice
2 cup(s) hot water
salt and pepper

Steps:

  • Clean and trim mushrooms. Wash in several waters. Drain well. Place in pot and add cold water to cover. Add salt and bring to boil. Cook for 15 minutes. Drain and rinse in lukewarm water. Drain. Saute onion in oil until transparent. Sprinkle with flour - add 2 cups hot water. Stir well to form smooth sauce. Add mushrooms, lemon juice, salt, pepper to taste and boil for 10 minutes, stirring occasionally to prevent scorching. Serve hot.

2 tablespoons butter
2 pounds assorted wild mushrooms, sliced
1/2 cup finely chopped scallions, green parts only
4 cloves garlic, chopped
1 tablespoon all-purpose flour
2 cups chicken stock
3/4 cup cream
1/2 cup shredded gruyere
1/2 cup grated Parmesan
1/2 cup marsala wine
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
2 heads roasted garlic, cloves removed
Kosher salt
1 teaspoon truffle oil
1 pound linguine
8 medium shrimp, shelled, deveined and chopped
3/4 cup celery leaves, roughly chopped
1/2 cup pine nuts, toasted

Steps:

  • Melt the butter in a large pan and add the mushrooms. Cook until the mushrooms are brown and tender. Add the scallions and garlic and saute until tender. Add the flour and cook for 1 to 2 minutes, then reserve.
  • In a food processor, add the chicken stock, cream, gruyere, Parmesan, marsala, rosemary, thyme and roasted garlic, and pulse until well combined. Put the mixture in a pot over low heat and cook until the cheese is melted. Add the cream mixture to the mushrooms, season with salt and add the truffle oil.
  • Cook the pasta to 1 minute shy of al dente. Toss the cooked pasta with the mushroom sauce. Add the shrimp and cook until cooked through. Serve topped with celery leaves and toasted pine nuts.

300g mixed wild mushrooms
30g unsalted butter
1 garlic clove , finely chopped
½ lemon , juiced
½ small pack parsley , roughly chopped

Steps:

  • Clean the mushrooms of excess dirt using a small brush. If you need to wash them under cold water, do it quickly as mushrooms act like sponges and will soak up the water.
  • Melt the butter until foaming. Add the garlic and cook for 30 seconds. Add the mushrooms and fry for 1-2 mins - try to keep the shape as this all adds to the presentation. Season and finish with a squeeze of lemon juice and the parsley.

WILD MUSHROOM SOUP

This recipe combines "Wild mushroom soup with sherry and thyme" from Fine Cooking Cook Fresh magazine, Fall 2013, and "Wild mushroom soup" from Forgotten Skills of Cooking, by Darina Allen, Kyle Books, 2009. The first one has sherry, which I didn't want to use, and the second uses milk for half the liquid, which I also wanted to avoid. The recipe is vegetarian, and can easily be made vegan by substituting the butter and not using the cream garnish.

2 tablespoons unsalted butter
2 tablespoons olive oil
2 shallots, minced
1 1/2 lbs wild mushrooms, cleaned and finely chopped
1 tablespoon fresh thyme, chopped
1/2 teaspoon salt, more to taste
1/4 teaspoon fresh ground black pepper, more to taste
6 cups vegetable stock

Steps:

  • Clean all the mushrooms before chopping (wipe with damp paper towel, or remove dirt with small mushroom brush).
  • Melt butter and olive oil in soup pot on medium heat.
  • Add shallot, cook until beginning to caramelize, stirring infrequently.
  • Add mushrooms, thyme, salt, and pepper; cook, stirring occasionally, until mushrooms have released their liquid and liquid has mostly evaporated.
  • Add broth and any soaking liquid, scraping up browned bits. Bring to a boil, reduce to simmer, and cook until mushrooms are tender. Adjust seasoning.
  • Remove from heat, cool slightly. Puree soup with stand blender (in batches) or immersion blender until smooth. (Add more liquid if you want it thinner: broth or water would do.).
  • Serve.
  • NOTES * I used a combination of fresh mushrooms including cremini, chanterelle, hen of the woods (maitake), and beech (bunashimeji). For depth of flavor, I added some some dried shiitake mushrooms. Soak dried mushrooms in 1-2 cups hot water for 30-60 minutes before use; add the liquid with the broth (discard sediment; if using shiitakes, discard stems too, they are tough). * Instead of separating the thyme leaves, you can just tie a bunch of sprigs together and fish the bundle out before pureeing. * The original recipes suggested leaving it half-pureed and "rustic" but I found it grainy so I pureed it completely. * This soup can be made ahead. Reserve 1-2 cups broth and add it while reheating on medium-low. * This is what I did for garnish per serving. When the butter and olive oil were hot, I cooked some pretty slices of cremini and reserved them. On each serving I drizzled about 1 tsp cream, eyedroppered very few drops of truffle oil, sprinkled a couple of thyme leaves, and floated a reserved mushroom slice.

WILD MUSHROOM PIROSHKI

Pirog is Russian for "pie," and piroshki means "little pies." They can be filled with almost anything, from cabbage to meat to kasha, and are eaten by themselves as a snack or with a meal. Ours are filled with gribi, or wild mushrooms, which are a Russian passion.

Number Of Ingredients 8

2 tablespoons minced shallots
1 tablespoon unsalted butter
12 ounces wild and domestic mushrooms, roughly chopped
Salt and freshly ground black pepper
1/4 cup Cognac
1 pound, chilled Puff Pastry
1 egg yolk
1 teaspoon heavy cream

Steps:

  • In a large pan over medium heat, saute the shallots in the butter until softened, about 5 minutes. Add the mushrooms, salt and pepper to taste, and continue to saute until mushrooms give up their liquid, about 4 more minutes. Add the cognac and continue to cook until liquid has been reduced to a glaze, about 5 minutes. Set aside and let cool.
  • Heat oven to 400 degrees.
  • Roll out the puff pastry to 1/8 inch, and cut into 2 1/2-inch squares. Place one teaspoon of filling in the center of each square. With a pastry brush, apply a little ice water to two opposite corners of the square and bring them together. Crimp the edges to seal. Cover a baking sheet with parchment paper; place piroshki on sheet, with center points tucked under.
  • Beat together the egg yolk and cream, and lightly brush the tops of the piroshki with egg wash. Bake for 8 to 10 minutes, until puffed and golden brown.
