SAVORY CHICKEN POCKET PIES



Savory Chicken Pocket Pies image

These handheld pies can go directly from the freezer to the oven to bake. From frozen, place on a baking sheet, brush with egg wash, and bake according to the recipe but for a few extra minutes.

Yield Makes 10 pocket pies

Number Of Ingredients 11

1 3-pound chicken (to get 1 heaping cup of shredded meat; you can freeze remainder for other recipes)
2 tablespoons unsalted butter
1/2 cup chopped onion
1/3 cup chopped celery (1 large stalk)
1/3 cup chopped carrot (1 carrot)
1/2 teaspoon coarse salt
2 tablespoons all-purpose flour
1 1/2 cups chicken broth (from the reduced poaching liquid)
1/4 cup grated Parmesan cheese
Cream Cheese Pastry Dough
1 large egg, for egg wash

Steps:

  • Place the chicken in a pot and add water to barely cover. Bring to a boil, reduce the heat, and simmer for 50 minutes. Skim and discard any foam as it rises on the surface. Remove the chicken to cool continue to boil the broth to reduce and concentrate to about 1 quart. Remove the meat from the chicken and shred.
  • To make the filling, melt the butter in a medium-sized hot skillet and add the onion, celery, and carrot. Saute over medium heat for 2 to 3 minutes. Stir in the salt and flour and cook for 1 minute more. Add the chicken broth and stir until thickened, about 2 minutes. Stir in 1 heaping cup shredded chicken and the Parmesan cheese. Cool in the fridge.
  • Preheat the oven to 375 degrees Fahrenheit. Butter or line a baking sheet.
  • To form the pocket pies, work with half of a disk of dough at a time, rolling it out on a floured surface. Using an overturned bowl (about 5 inches across), cut out circles about 3 at a time from each piece of dough. After cutting out all your circles, gather all dough scraps, reroll, and cut out a final time. Place 1/4 cup filling on one side of a dough circle. Wet the edges of the dough with the water. Fold the dough over to form a half circle. Pinch the edge of the dough together. Crimp the edge with a fork. Repeat the process until all the filling is used. The pocket pies can be frozen at this point.
  • Place the pocket pies on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg with 1 tablespoon water. Brush the egg wash over each pocket pie. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving. The pies can be cooled and frozen to reheat in the microwave.

1 pound ground beef
1/2 cup chili sauce
2 tablespoons onion soup mix
DOUGH:
3 cups all-purpose flour
1 to 2 tablespoons sesame seeds, optional
1 teaspoon salt
1 cup shortening
3/4 cup shredded cheddar cheese
3/4 cup evaporated milk
1 tablespoon cider vinegar

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in chili sauce and soup mix; set aside. , In a large bowl, combine the flour, sesame seeds if desired, and salt. Cut in shortening and cheese until crumbly. Combine milk and vinegar; gradually add to flour mixture, tossing with a fork until dough forms a ball. , Divide dough in half; roll out to 1/8-in. thickness. Cut with a lightly floured 2-1/2-in. round cutter. Place half of the circles 2 in. apart on ungreased baking sheets; top each with a rounded tablespoonful of beef mixture. Top with remaining circles. Moisten edges with water and press with a fork to seal. Cut a slit in the top of each. , Bake at 425° until golden brown, 12-16 minutes. Serve immediately., Freeze option: Freeze cooled pies in an airtight container for up to 3 months. Bake, from frozen, on an ungreased baking sheet at 425° until heated through, 14-16 minutes.

Easy 3 ingredient baked pocket pies.

2 - 13.2 oz Puff Pastry Sheets (I used Wewalka, now called Jus-Rol)
21 oz Canned Pie Filling and Topping of Choice (Apple, Cherry, Peach or Blueberry)
1 Egg, beaten
Flour for dusting work surface
1/2 c Confectioner's Sugar
1/2 tbs Milk (more or less as needed)

Steps:

  • Pies
  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Dust work surface with a little flour.
  • Unroll puff pastry sheet then cut into four sections.
  • Brush the inside outer edge with the egg wash.
  • Add approximately two tablespoons of your chosen fruit filling to the center of one side of the pastry quarter sheet.
  • Fold over the puff pastry to cover the fruit filling and gently press the edges to seal.
  • Cut three slits across the top of the hand pie then place on the baking sheet.
  • After all pies are assembled and on the baking sheet, brush the tops with the remaining egg wash.
  • Bake 20-25 minutes or until golden brown on top.
  • Remove from oven and allow to cool to room temperature.
  • Glaze
  • Add the milk in increments to the powdered (confectioners) sugar and stir. Use more or less milk to achieve desired consistency.
  • Drizzle over fruit pies.

2 cups (4 whole) mangoes, peeled and diced
1/2 cup brown sugar
1/2 cup apple cider vinegar
2 teaspoons curry powder
1/4 cup freshly squeezed lime juice
2 1/2 cups granulated sugar
1/4 cup plus 1 tablespoon cocoa powder
Pinch kosher salt
20 tablespoons (2 1/2 sticks) unsalted butter, at room temperature
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
6 tablespoons shortening
3/4 cup milk
1 large egg, beaten with 1 teaspoon water
Vegetable oil, canola oil, or unsalted butter, for frying

Steps:

  • Place all of the ingredients into a small saucepan set over high heat and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes, stirring occasionally. Transfer to a bowl and place in refrigerator to cool completely before using as filling.
  • Place the sugar, cocoa powder, salt, and butter into a large zip-top bag and squish to combine. Cut a hole in one corner of the bag to pipe filling. Set aside until ready to use.
  • In the bowl of a food processor, combine the flour, baking powder, and salt. Pulse for a few seconds, and then pour into a large mixing bowl.
  • Knead the shortening into the flour with your hands until it is crumbly. Add the milk all at once and mix in with a spatula until it begins to come together.
  • Turn the dough out onto a lightly floured surface. Lightly flour your hands and knead the dough ball, folding over 10 to 20 times. Using a rolling pin, roll the dough to 1/3- to 1/2-inch thickness, then cut into rounds using a 2 1/4-inch ring. Roll each round as thinly as possible, 5 to 6 inches in diameter.
  • Spoon 1 to 2 tablespoons of filling onto the dough, brush the edges of half of the dough lightly with the egg wash, fold over, and seal the edges together with the tines of a fork, dipping it into flour as needed. Gently press down to flatten and evenly distribute the filling. Dock pies that are going to be deep-fried, and snip or cut 3 slits in the tops of pies that will be baked or pan-fried.
  • To pan-fry pies: Place a medium saute pan over medium-low heat along with 1 to 2 tablespoons vegetable oil, canola oil, or butter. Once heated, place 2 to 3 pies at a time into the pan and saute until golden on both sides, 3 to 4 minutes per side. Allow to cool 4 to 5 minutes before serving.
  • To deep-fry pies: Heat vegetable oil in a deep-fryer or a large heavy pot to 375ºF. Once hot, add 1 to 2 pies at a time and fry until golden brown, 3 to 4 minutes.
  • To bake pies: Heat the oven to 350ºF. Place finished pies on an ungreased half-sheet pan and bake until golden brown, 25 to 30 minutes.

This is from Alton Brown of Good Eats fame. Very similar to a basic pie crust, but used for making your own homemade pop tarts.

9 1/2 ounces all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2 1/2 ounces shortening or 2 1/2 ounces butter
3/4 cup milk
1 egg beaten with 1-2 teaspoons water
2 tablespoons nutella, spread for filling
2 tablespoons vegetable oil, if desired (for frying)

Steps:

  • In the bowl of a food processor, combine the flour, baking powder and salt. Pulse for a few seconds and then pour into a large mixing bowl.
  • Add the shortening and knead it into the flour with your hands until it is crumbly. Add the milk all at once and mix in with a spatula until it begins to come together. Lightly flour your hands and the countertop and turn the dough out onto the countertop. Knead the dough ball, folding over 10 to 20 times. Using a rolling pin roll the dough to 1/3 to 1/2-inch thickness, then cut into rounds using a 2 1/4-inch ring. Roll each round as thinly as possible or to 5 to 6 inches in diameter.   • To deep-fry pies, heat vegetable oil in a deep-fryer or a large heavy pot to 375 degrees F. Once hot, add 1 to 2 pies at a time and fry until golden brown, approximately 3 to 4 minutes.
  • To bake pies, preheat the oven to 350 degrees F. Place finished pies onto an ungreased cookie sheet and bake for 25 to 30 minutes or until golden brown.
  • To make toaster pastries:.
  • Preheat oven to 350 degrees F.
  • Divide dough in half and roll out to less than 1/8-inch thick. Cut into 4 inch by 5 inch rectangles. Place 1 to 2 tablespoons of filling onto center of one piece of dough. Brush the edges with egg wash and top with second piece of dough. Seal edges by pressing together with tine of fork. Gently press down to flatten and evenly distribute the filling and dock the top of the pie. Repeat with second half of dough.
  • Bake for 20 minutes. Remove from the oven, allow to cool completely and place into zip-top bags until ready to toast. The pies will not be brown until toasted.

HOT POCKET AND FRIED PIE DOUGH



Hot Pocket and Fried Pie Dough image

This dough is great for making pizza pockets, hot sandwich pockets, fruit pies ("fritter") and whatever you can imagine. It doesn't take long to make if you have those little dough presses that make the crimped edges. This came from my efforts to make fritters for my husband like his mom used to make. Success!! :)The cook time will be different depending on filling, so it is an estimated time for fried pies. Cooking fillings for hot pockets will increase prep and cook time.

3 cups flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon baking powder
1/3 cup shortening
1 cup milk (more if needed)

Steps:

  • In a mixing bowl, sift the flour, sugar, salt and baking powder, together.
  • Cut in shortening.
  • Pour the milk into the flour mixture all at once.
  • Mix quickly and add additional milk if needed to combine all dry spots or flour if it is to sticky.
  • Lightly knead it to make a thick dough.
  • Let the dough rest for 10 minutes.
  • Cut the dough into 12 equal portions.
  • On a lightly floured surface, roll the dough pieces into 5 or 6 inch circles.
  • Put two or three tablespoons of filling of your choice in the center of each round, moisten edges with milk to ensure seal.
  • Fold over and crimp the edges with a fork.
  • Fry a few at a time without crowding, in the hot oil, until golden brown.
  • Remove from the oil and drain on paper towels.
  • Notes: Although this dough can be used to make homemade"hot pockets" the filling should be completely done before enclosing it in the dough.
  • The dough will cook too fast to get the insides done.
  • I find it best to place paper towels on a wire rack so the pies remain light and crisp and don't get soggy from the steam.
  • If you are using the dough for fried pies, it will use one 21 ounce can @ approximately two tablespoons per pie.
  • Pies should be sprinkled as soon as they are removed from oil so the sugar will stick.
  • (Sugar and cinnamon mix is great on apple pies.).

2 tablespoons sugar
2 tablespoons flour
pinch of salt
1 teaspoon apple pie spice
1 tablespoon vanilla extract
1 (15 ounce) package prepared, unbaked pie crust, thawed
milk
1 egg, beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a bowl, toss apple slices together with sugar, flour, salt, apple pie spice, and vanilla extract until evenly coated.
  • Lay pie dough flat on a lightly greased baking sheet. Pile apples on one side of dough, leaving a 1 inch border. Brush border and opposite half side of dough with milk. Fold dough over apples, being careful not to over-stuff or the dough will tear. Fold over edges and pinch together to seal. Cut several small slits in the top of the pocket with a sharp knife, then brush top with beaten egg.
  • Bake in the preheated oven for 40 minutes, or until flakey and golden brown. Serve warm, or at room temperature.
