24 medium oysters, shucked, liquor and 24 bottom shells reserved
1/3 cup cider vinegar
3 tablespoons clear (filtered) apple juice
2 tablespoons finely chopped shallot
2 tablespoons finely diced cooked beet
1 teaspoon cracked black peppercorns
1/2 teaspoon salt
1/8 teaspoon sugar
1 English cucumber, peeled and halved crosswise

Steps:

  • Bring 6 cups water with 1 teaspoon salt to a simmer in a wide 6- to 8-quart pot, then add oysters with their liquor and poach at a bare simmer just until edges curl, about 1 1/2 minutes. Transfer oysters with about 1/4 cup poaching liquid to a bowl and chill, uncovered, until cool, about 30 minutes.
  • Scrub reserved bottom oyster shells. Boil shells in 6- to 8-quart pot of boiling water 3 minutes (to remove any grit or traces of raw oyster), then drain in a colander. Rinse shells and dry thoroughly.
  • Stir together vinegar, apple juice, shallot, beet, peppercorns, salt, sugar, and 2 tablespoons poaching liquid from bowl of oysters.
  • Very thinly julienne cucumber lengthwise using a mandoline or other manual slicer, working around seed core, then discard seed core. Drain cucumber in a sieve set over a bowl while assembling oysters, then discard liquid.
  • To assemble, place 1 oyster in each half shell and spoon 1 teaspoon mignonnette over it. Top with a little cucumber, twirled into a mound. Serve immediately.

MIGNONETTE SAUCE

This simple recipe gives you a classic mignonette sauce for oysters, clams or other seafood, but you can play with the basic formula by changing the vinegar (try cider, malt, sherry, champagne), swapping the allium (try leeks, scallions or red onion), adding a squeeze of citrus juice or stirring in some fresh herbs like tarragon or mint. Let the mixture sit for at least 30 minutes before serving, so the flavors can blend and the sauce can be at its tangy, peppery best.

1/4 cup finely minced shallots (from 1 to 2 shallots)
1/3 cup red-wine or white-wine vinegar
1 teaspoon coarsely ground black or white peppercorns
Pinch of sea salt

Steps:

  • Mix together all the ingredients in a small bowl or jar until well blended. Cover and chill for at least 30 minutes before using. Mignonette will keep in the fridge for up to 1 month.

POACHED OYSTERS WITH LEEKS AND BACON



Poached Oysters with Leeks and Bacon image

This sumptuous appetizer stars oysters in an elegant and creamy guise. The oyster mixture spills over the sides of a thick triangle of toasted, buttered bread, and the whole thing is topped off with smoky bacon and snipped chives. The flavors of this dish are great with champagne and have a holiday feel, but it's delicious anytime you can get great oysters. You could also toss the warm sauté with bow tie pasta for a decidedly rich Sunday supper.

Number Of Ingredients 16

2 strips thick-sliced bacon (preferably applewood-smoked), diced
1/4 cup white wine or vermouth
1 pint shucked oysters, drained and rinsed
1 tablespoon butter, plus softened butter for spreading
1/4 cup finely chopped onion
1/4 cup finely chopped celery
2-3 leeks, washed and thinly sliced (about 1 cup) (see technique for cleaning leeks, p. 109)
2 tablespoons flour
1/4 cup milk
1/2 cup cream
1/2 teaspoon chopped fresh thyme or sage
1 tablespoon fresh lemon juice
Salt and pepper
Hot sauce
4 thick slices (1/2 inch) good-quality white bread or brioche, halved into triangles
Minced scallions or snipped fresh chives, for garnish

Steps:

  • In a large skillet, cook the bacon until crispy. Transfer it to a plate topped with paper towels, then drain the skillet of all but 1 tablespoon fat; set the skillet aside.
  • Heat the white wine in a medium skillet over medium-high heat. When it starts to simmer, add the oysters and poach just until the edges start to curl, about 4 minutes (reduce the heat if the simmer gets too lively). Drain the oysters in a fine colander placed over a large bowl, reserving the poaching liquid.
  • Reheat the skillet with bacon fat over medium-high heat and add the 1 tablespoon butter. When the foaming subsides, add the onion, celery, and leeks and cook until fragrant and softened, 3-4 minutes. Sprinkle the vegetables with flour, then whisk in the reserved oyster poaching liquid. Simmer over medium heat, continuously whisking, for 3 minutes. Add the milk, cream, and herb and bring to a boil. Reduce the heat and simmer gently until thickened and creamy, about 5 minutes. Add the lemon juice and salt, pepper, and hot sauce to taste.
  • When the sauce is thick enough to coat a spoon, remove it from the heat and keep warm. Toast the bread; spread with softened butter and place it on a platter or individual plates. Stir the oysters into the sauce and warm through, over low heat. To serve, spoon the oysters over the toast and sprinkle with bacon. Top with green onions or chives, if desired.
  • I've eaten oysters all over the world. When it comes to slurping them raw, from the half shell, I love oysters from the Pacific (like the Japanese varieties), because they taste briny, like the ocean. But when it comes to cooking, nothing beats Louisiana oysters. They come from the brackish waters where the salt water of the Gulf mingles with the fresh water of the bayou and rivers, so they have a milder flavor that blends better with other ingredients. Because Louisiana oysters are larger, they're less likely to overcook in a poaching pan. I may be biased, but I definitely think they're the most versatile oysters in the kitchen. Quickly roasting oysters in a hot oven pops the shells apart so they can be opened the rest of the way by hand, no shucking skills required.

1 small shallot, finely chopped
3 Tbsp. red wine vinegar
12 oysters in shell
Coarse sea salt or kosher salt
1/4 cup (1/2 stick) unsalted butter, melted

Steps:

  • Preheat oven to 400°F. Stir shallot, vinegar, and 1 Tbsp. water in a small bowl; set aside. Line a plate with salt (this will help hold the oysters in place without tipping out their juices) and set aside.
  • Rinse oysters, then arrange flat side up on a wire rack set inside a rimmed baking sheet. Roast until oysters crack open, 4-6 minutes. (They won't open completely like a cooked clam; the top shell will separate from the bottom with about a 1/4" opening at the rounded end.) Some may open before others-remove from oven as soon as they open. Discard any oysters that don't open after 7 minutes.
  • To finish opening oysters: Fold a dish towel several times and hold oyster using towel. Slide a butter knife into opening all the way to the hinge. Turn butter knife perpendicular so top shell pops all the way open. Pull off top shell with your hand, being careful not to tip bottom shell and lose any liquid (this should all happen very easily without much force). Gently slide knife under oyster in bottom shell to release the muscle, then transfer to plate with salt.
  • Stir butter into reserved vinegar mixture. Spoon over oysters.
