This is one of my favorite ways to cook fish. Add a lovely sauce it is so moist and tasty. I like to poach Salmon, cod and sea bass. There are many sauce recipes here on Zaar or serve it plain with a dab of butter. I like to use a lightly greased rack so the fish is just above the water, espcially if it is a skinless filet

Number Of Ingredients 7

1 1/2 lbs fish fillets
1 tablespoon fresh parsley, chopped
salt and pepper
1/2 teaspoon dried dill weed (or 1 tsp fresh)
1 onion, chopped
4 lemon slices
2 tablespoons vermouth (optional)

Steps:

  • In a a large skillet (fitted with a lid) pour in 1 inch (25mm) of water, add all ingredients except fish& bring to a boil.
  • Place fish (skin side down if the filet has skin on it) in a single layer, cover and simmer until the fish flakes easily apprx 5 minutes.
  • Serve.

TILAPIA CREOLE SAUCE

This was created after reading several Creole sauce recipes and using the ingredients at hand.This would probably work with any mild fish. Next time I make this I will probably add some crab meat.

4 tilapia fillets
1 (14 1/2 ounce) can tomatoes, diced
1 (8 ounce) can tomato sauce
1/4 cup red bell pepper
1/4 cup onion, chopped
2 garlic cloves, minced
1/2 teaspoon salt
1 tablespoon basil, chopped
black pepper, to-taste
5 drops Tabasco sauce
1/4 lb small shrimp, peeled

Steps:

  • Add all ingredients except fish and shrimp to a saucepan.
  • Simmer sauce until slightly thickened.
  • Add shrimp to sauce. Cook 3 to 4 minutes.
  • Place fish in a baking dish. Cover with sauce.
  • Bake at 350°F for 15 minutes.

1/2 cup vegetable oil
2 medium onions, chopped
1 medium green bell pepper, cored seeded and finely chopped
2 garlic cloves
1 teaspoon finely chopped seeded fresh red chile
1 teaspoon salt
pepper
3 tomatoes, peeled and chopped
3/4 cup tomato paste
1/2 cup dry white wine

Steps:

  • In a medium heavy-based saucepan, heat oil over low heat. Add onions, green pepper, garlic and chilies; saute until the peppers are soft.
  • Add salt, pepper and tomatoes. Cook about 10 minutes over low heat, stirring occasionally.
  • Add tomato paste and wine and simmer, stirring occasionally.
  • Serve hot.

Any white fish fillets will do for this simple recipe. Good served with basmati and wild rice and green beans.

1 tablespoon olive oil
1 medium onion, finely chopped
1 red pepper, finely chopped
14 ounces chopped tomatoes
1 tablespoon red wine vinegar
4 (4 ounce) white fish fillets, cut into chunks
2 tablespoons cilantro, finely chopped

Steps:

  • Heat the olive oil in a large, deep frying pan. Add the onion and fry over a medium heat for 5-10min until softened. Add the pepper and fry for a further 2-3min.
  • Stir in the tomatoes and vinegar, bring to the boil and cook for 1-2min, then add the fish and poach gently for 10min, adding a splash of water if the sauce becomes too thick. Stir through the cilantro, season with salt and pepper and serve.
