  • Mix 1 cup grated Gruyere, 3 tablespoons softened butter, 2 teaspoons chopped rosemary or thyme, and a pinch of red pepper flakes. Spread on 2 pieces lavash (or other flatbread); top with 1/2 cup thinly sliced red onion. Bake at 425 degrees F on a parchment-lined baking sheet until golden and crisp, 10 minutes. Season with salt; cut into pieces.

This fried Greek flatbread-stuffed with feta and spring onions-can be filled with chopped herbs for extra flavor. Plakopsy are fried for just a few minutes.

Number Of Ingredients 7

200 ml (7 oz) cold water
1 egg, lightly beaten
450 g (14½ oz) all-purpose flour, plus extra for dusting
400 g (13 oz) feta cheese, crumbled
10 spring onions, roughly chopped
50 ml (2 oz) sunflower oil, plus extra for brushing
Flaky salt

Steps:

  • Mix the water, egg and a pinch of salt together in a large bowl. Gradually add the flour, mixing it in with a fork first and then with your hands.
  • Flour your work surface really well and knead the dough until it stops sticking to your hands.
  • Mix the feta with the spring onions. Taste and add salt only if needed. Divide the filling into 4 portions.
  • Divide the dough into 4 pieces. Flour the work surface well and roll one piece of dough out as thinly as you can into a 12 inch circle. Moisten the top of the sheet with a little sunflower oil. Take one-quarter of the filling and spread most of it over the rolled-out dough, leaving about a 2 inch border. Then fold two opposite sides of the dough inwards to overlap, brush with a little more oil and sprinkle over the remaining filling, then fold the other two sides over to form a square. Flour and lightly roll over the folded bread, then set aside.
  • Repeat with the rest of the dough pieces and filling.
  • Heat the 50 ml (2 oz) sunflower oil in a large frying pan and fry the breads, one at a time, for 3 minutes on each side, lowering the heat if you see them catching a bit.
  • Let the breads cool for a minute and then eat with some kefir or ayran (a salty yogurt drink).

Yield Makes 2 or 3 flatbreads, depending on thickness

Number Of Ingredients 7

All-purpose flour, for dusting a work surface
Pizza and flatbread dough
Cornmeal
2 to 3 tablespoons extra-virgin olive oil
1 pound Asiago or Parmigiano-Reggiano, shaved
1/2 pound Italian sausage, casings removed, meat crumbled into nut-size nuggets
1 red bell pepper, stemmed, seeded, and cut into thin strips

Steps:

  • 1. Set a pizza stone on the center rack. Preheat oven to 450°F, or higher if possible.
  • 2. Sprinkle some flour on the work surface.
  • 3. Divide the dough into halves or thirds, depending on how thin or thick you like your flatbread. Work the dough, rolling it into a ball, then flattening it into a circle with the palm of your hand. Press with your fingertips from the center outward, widening the circle. Start pushing this small circle into an oblong or rectangular shape, always leveling the thickness of the dough, so that the dough is about 14 by 6 inches.
  • 4. Sprinkle some cornmeal on a pizza peel or the underside of a cookie sheet. Pick up the dough and, in one deft movement, transfer it to the peel.
  • 5. Drizzle 1 tablespoon of the olive oil over the surface of the flatbread. Sprinkle half (or one third if making three flatbreads) of the Asiago evenly over the dough and then scatter one half or one third (if making three flatbreads) of the sausage and pepper over the surface.
  • 6. Pick up the peel and open the oven door. Gently slide the flatbread onto the stone; a few shakes of the peel and the dough should slide right off, thanks to the cornmeal.
  • 7. Bake the flatbread until the surface is bubbling and the bottom of the crust is turning a dark, golden color and crisping nicely, 15 minutes or less. Use the peel to remove the flatbread from the oven, cut into slices, and serve. While the first flatbread is baking, ready the next one. Bake it as you enjoy the first one. Repeat until you've used all the dough and other ingredients.

Because older eggs are easier to peel, this is one of those times when grocery store eggs outperform the ones from the farmers' market.

4 large eggs
1/4 cup feta
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
Kosher salt, freshly ground pepper
Palmful of chopped tender herbs (such as tarragon and/or chives)
2 warm flatbreads or slices of toast

Steps:

  • Carefully lower eggs into a small saucepan of gently boiling water; cook 7 minutes. Transfer to a bowl of ice water and let sit until cool enough to handle; drain. Peel eggs; tear into large pieces.
  • Coarsely mash feta in a small bowl with lemon juice and oil; season with salt and pepper. Gently fold in eggs.
  • Spoon egg mixture over flatbreads and top with herbs.

GRAPE AND ROSEMARY FLATBREAD

Roasting grapes is fun and unexpected, although very popular in the wine regions of Italy. I remember being surprised to find juicy grapes cooked into a dense olive oil cake in Tuscany years ago. Here the sweetness of the grapes balances the earthy truffle oil and rosemary, and the feta adds a salty kick. The flavors are just perfect, and this flatbread takes me right back to Tuscany every time.

1 (16-ounce) homemade or store-bought pizza dough
1 tablespoon truffle oil
2 teaspoons fresh rosemary, chopped
2/3 cup red grapes, halved
1/2 teaspoon finishing salt
2 tablespoons crumbled feta cheese

Steps:

  • Preheat the oven to 500˚F. Line a baking sheet with parchment paper and lightly dust with flour.
  • Take the pizza dough out of refrigerator 30 minutes before using. With a sharp knife, cut the dough in half. Stretch the dough into two long rectangles (about 6x11 inches each) on the parchment paper. Brush with truffle oil. Sprinkle with rosemary, grapes, salt, and feta. Bake for 8 to 10 minutes. Remove from the oven and cut into slices.

This is a very versatile dish from Bonnie Stern who has owned a cooking school in Toronto Canada for over 30 years. It can be served at a cocktail party, as an appetizer or as a main course with a side salad. My DH & I have been known to devour the whole thing, with a few glasses of wine, on a Saturday night!!

2 tablespoons olive oil
3 large onions, chopped
1 tablespoon brown sugar
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 lb frozen puff pastry (defrosted but cold)
6 ounces brie cheese, diced (rind removed)
6 ounces mild blue cheese, diced
2 tablespoons chopped fresh chervil or 2 tablespoons parsley

Steps:

  • Heat oil over medium high heat in a large skillet.
  • Add onions; cook until wilted& starting to brown.
  • Add sugar, vinegar, salt& pepper.
  • Reduce heat& cook gently for 15- 25 minutes or until onions are caramelized& brown.
  • Cool.
  • Roll pastry into a rectangle approximately 12 x 16 inches. I don't use the sheets of puff pastry - I prefer to use the 375gm package of Tenderflake Puff Pastry. I start rolling it out on my counter, then I transfer it to my baking tray (which has been lined with parchment paper) and roll the pastry to fit the tray. Since puff pastry is very "forgiving", you can "cut & paste" if necessary.
  • Spread onions over pastry.
  • Dot with cheese& sprinkle with chervil.
  • If you are preparing this for a party, you can prepare to this point and refrigerate- then bake later.
  • Bake in preheated 400F oven for 20- 25 minutes or until cheese has melted& pastry is crisp.
  • When removed from the oven, it will be puffed right up but allow it to cool for 5 minutes & it will fall back down. Cut into 20 serving pieces - this is easier done with kitchen scissors instead of a knife - then cut each piece in half diagonally.
