PANCETTA AND ONION PIZZA

Number Of Ingredients 23

5 ounces slab bacon or pancetta, finely diced (about 1 cup)
1 1/2 pounds prepared pizza dough or homemade, recipe follows
All-purpose flour
Kosher salt
Olive oil, for drizzling
1 1/4 cups prepared pizza tomato sauce or homemade, recipe follows
1 1/2 cups shredded mozzarella (about 5 ounces)
1/2 leek (white and light green parts only) or white onion, very thinly sliced
1 clove garlic, minced
1/2 cup freshly grated Parmesan or Pecorino Romano cheese (about 1 ounce)
12 fresh basil leaves
Crushed red pepper flakes, optional
1 cup warm water (about 105 degrees F)
2 teaspoons sugar
1 (.25-ounce) packet active dry yeast, about 2 1/4 teaspoons
1 tablespoon extra-virgin olive oil, plus extra for brushing
3 cups all-purpose flour, plus more as necessary
1 teaspoon fine salt
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1 (28-ounce) can San Marzano tomatoes
4 to 6 fresh basil leaves
Kosher salt

Steps:

  • Put a pizza stone on the bottom rack in the oven and preheat to 500 degrees F for at least 30 minutes. Heat a small skillet over medium heat, add the pancetta or bacon, cook until the fat renders but is short of being crisp, about 5 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain. Divide the dough into 2 equal portions; form each into a ball. Roll a portion into a 12-inch disk on a floured surface (cover the other piece with a kitchen towel). Lightly dust a pizza peel with flour and put the dough on the peel, drizzle lightly with oil and sprinkle with salt. Slip the dough onto the preheated stone and cook until just set, about 4 minutes. Using the peel, remove the dough from the oven and top with about half the sauce and toppings - pancetta, mozzarella, onion and garlic. Drizzle with a little olive oil. Return the pizza to the stone and cook until the crust is golden and the cheese melts, about 5 to 7 minutes more. Remove the pizza, top with half the grated Parmesan and scatter with some basil leaves and pepper flakes, if desired. Serve. Repeat with the remaining dough and toppings.
  • Whisk water and sugar in a bowl and scatter the yeast over the top. Set aside until foamy, about 10 minutes. Stir in olive oil. Whisk the flour and salt in a large bowl. Make a well in the center and pour in the yeast mixture. Gradually stir the dry ingredients into the liquid to make a rough, shaggy dough. Turn out onto a lightly-floured work surface and knead until smooth and elastic, about 5 minutes. If the dough seems wet, add just enough flour to prevent sticking. Brush a large bowl with olive oil. Form the dough into a ball, rotate it around the bowl to coat and place it seam-side down in the bowl. Cover the bowl tightly with plastic wrap. Set aside at room temperature, until doubled, about 1 1/2 hours. Or cover and refrigerate overnight. If refrigerating bring to room temperature about 30 minutes before forming. Yield: Makes 1 1/2 pounds of dough, enough for 2 (12 inch) pies
  • Heat the olive oil in a medium saucepan over medium-high heat. Add the garlic and cook until golden but not dark brown, about 20 seconds. Using your hands, crush the tomatoes and add them to the pot along with 1/2 cup water, basil, and season with salt. Bring to a boil, reduce heat to medium-low and simmer until the sauce thickens, about 15 minutes. Serve.

1 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
1 1/2 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil, plus more for brushing
5 to 6 Fresno chile peppers, roughly chopped
1 1/2 cups extra-virgin olive oil, plus more for brushing
8 ounces parmigiano-reggiano cheese, shaved with a peeler
4 ounces thinly sliced prosciutto
6 large eggs (optional)
2 cups baby arugula
2 plum tomatoes, diced
1/4 cup pitted gaeta olives, sliced
2 tablespoons capers, drained
Pinch of red pepper flakes
Kosher salt
Extra-virgin olive oil, for drizzling
8 ounces taleggio cheese, chopped
Chopped chives, for topping

Steps:

  • Make the dough: Fill a liquid measuring cup or small bowl with 1/2 cup warm (not hot) water. Add the yeast and sugar and stir with a fork; let sit 15 minutes. The top of the water will bubble and it will smell very yeasty-this is what you want!
  • Combine the flour and salt in a large bowl. Make a well in the center of the flour and pour in the olive oil and the yeast mixture.
  • Using a fork, gradually stir the flour into the yeast mixture until mostly combined, then mix with your hands to bring the dough together. Turn out onto a clean surface.
  • Knead the dough until smooth, dusting with flour as needed. Lightly oil a bowl; add the dough, cover with plastic wrap and set aside in a warm place until doubled in size, about 1 hour.
  • Prep the toppings: For prosciutto-arugula pizzas, make the chile oil: Bring the chiles and olive oil to a simmer; remove from the heat and let steep 1 hour. (This makes extra oil; store in a sealed container for up to 1 week.)
  • For puttanesca pizzas, make the topping: Mix the tomatoes, olives, capers and red pepper flakes in a bowl; add salt and drizzle with olive oil.
  • Preheat the grill: Preheat a grill to medium high (you don't want it to be too hot or the crusts will burn before the cheese melts). Brush the grill to remove any crud.
  • Roll out the dough: Turn the dough out onto a floured surface and divide into 6 equal pieces. Roll each piece into a ball.
  • Use a rolling pin to roll out each ball into an irregular oval, dusting with flour as needed.
  • For cracker-thin crusts, use your hands to gently stretch the dough even more.
  • Stack the dough between layers of plastic wrap and head to the grill (or wrap and refrigerate overnight).
  • Grill the crusts: Oil the grill (Anne uses a rolled-up towel and tongs), then carefully add a few pieces of dough.
  • Grill until the top is bubbly and the bottom is marked, about 2 minutes.
  • Flip with tongs and grill until just marked on the other side. Remove from the grill and transfer to baking sheets; repeat with the remaining dough.
  • Add the toppings: Working on the baking sheets, top the crusts with parmigiano and prosciutto, or top with taleggio and the puttanesca mixture; return to the grill. Crack an egg directly onto each prosciutto pizza, if you want. Cover the grill and cook until the cheese melts and the eggs are set, 2 to 3 minutes.
  • Finish the pizzas: Remove from the grill and top the prosciutto pizzas with arugula; drizzle with the prepared chile oil. Top the puttanesca pizzas with chives.

WALLA WALLA ONION, PINE MUSHROOM FONDUTA

A creative way to take all the goodness of mushroom and onion fondue and wrap it up in a neat little package.

Roasted Walla Walla Onions:
4 Walla Walla (sweet) onions (about 1 lb each)
1 cup coarse salt, for roasting
Pine Mushroom Fonduta:
½ cup extra virgin olive oil
2 cups peeled, washed, and thinly sliced pine mushrooms
¼ cup all-purpose flour
2 cups Vegetable Stock
½ cup heavy cream
Reserved chopped innards from onions
2 tbsp. thyme leaves Kosher salt
Fresh-ground black pepper
1 cup small torn pieces day- old Arctic Sourdough
2 cups grated Gruyère-style cheese (we like Farm House Natural Cheeses Heidi)
To Serve:
1 cup grated Gruyère-style cheese
Arctic Sourdough

Steps:

  • Roasted Walla Walla Onions:
  • Preheat the oven to 450°F.
  • Cut the very tops (about 1 inch) off the onions and then replace. Make a bed of coarse salt in a small roasting pan. Place the onions on the salt and roast for about an hour, or until soft through.
  • When cool enough to handle, scoop out the insides of the onions, leaving the outer two layers intact within the skin. Take care not to scrape out the base of the onions, as the fonduta will leak out the bottom. Finely chop half of the onion innards for the filling. Set aside.
  • Pine Mushroom Fonduta:
  • In a medium-size sauté pan, heat the olive oil and add the sliced pine mushrooms. Sweat for 5 minutes, then add the flour. Sauté for 1 minute more, then add the Vegetable Stock and cream. Bring to a simmer and add the reserved chopped Walla Walla, thyme, and salt and pepper to taste. Add the day-old sourdough bread pieces. Cook together for 5 minutes to meld the flavours. Add the grated Gruyère, stirring to melt, then remove f rom the heat.
  • Assembly:
  • Preheat the oven to 450°F. Place the Roasted Walla Walla Onions in a roasting pan, and fill with hot Pine Mushroom Fonduta (if you have extra, it can be served on the side). Top with the grated Gruyère. Roast for 10 minutes, until bubbly.
  • Serve with lots of Arctic Sourdough and any extra fonduta that didn't fit in the onions.

4 Walla Walla sweet onions or any sweet onions, thinly sliced
1 tablespoon olive oil
3 tablespoons butter
2 eggs
1 cup half and half
2 tablespoons flour
1 teaspoon. salt
1/8 teaspoon pepper
pinch of nutmeg
4 tablespoons Swiss cheese, grated
2 tablespoons fresh parsley, chopped, plus more to taste

Steps:

  • Pre-heat oven to 375°F. Prepare a 9-inch pie crust by lining it with parchment paper and filling it with beans or pie weights, then partially bake your pie crust for about 15 to 20 minutes in a 375°F oven. (Once you use and cook the beans as pie weights, they will no longer be edible, but you can continue to use them over and over as pie weights.) The pie crust should still be blonde but slightly golden on the edges, the middle should still be mostly raw. Remove from oven, remove pie weights, and set aside. Sauté onions in oil and butter over low heat until golden yellow. Beat together eggs, half and half, flour, salt, pepper, and nutmeg, then add onions and half of the grated cheese. Pour into curst; sprinkle remaining cheese on top. Place pie pan on baking tray and bake at 375°F for 25 to 30 minutes or until golden brown. Garnish with parsley and serve.

1 (5 1/2 ounce) can evaporated milk

  • Boil onion chunks for 15 - 20 minutes; drain and rinse well.
  • Melt butter in saucepan on med.
