Provided by Food Network Kitchen

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 9

All-purpose flour, for dusting
1 pound pizza dough
1/2 cup Alfredo sauce
1 1/2 cups shredded mozzarella
1 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1 1/2 cups sliced dill pickles (about 4 large pickles)
Fresh dill sprigs, for garnish
Ranch dressing, for serving

Steps:

  • Place a pizza stone or inverted rimmed baking sheet on the bottom rack of the oven and preheat to 450 degrees F.

  • Spread the Alfredo sauce on the pizza dough and sprinkle with the mozzarella. Combine the garlic powder and Italian seasoning in a small bowl, then sprinkle over the cheese. Top with the pickles.
  • Slide the pizza on the parchment onto the heated stone or baking sheet and bake until the crust is golden, 12 to 14 minutes. Garnish with dill sprigs and serve with ranch dressing for dipping.

4 CHEESE PEPPERONI PIZZADILLA

4 Cheese Pepperoni Pizzadilla image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 25m

Yield 2 servings

Number Of Ingredients 14

1 tablespoon salted butter
1 tablespoon olive oil
Two 10-inch flour tortillas
One 14-ounce jar pizza sauce
3/4 cup shredded provolone
3/4 cup shredded fontina cheese
1 1/4 cups shredded mozzarella
2 tablespoons grated Parmesan
1 teaspoon dried oregano
1/4 red bell pepper, seeded, halved crosswise and cut into very thin strips
1/4 small red onion, sliced into very thin half-moons
15 pepperoni slices
2 tablespoons Kalamata olives, pitted and halved
1/8 cup torn fresh basil leaves

Steps:

  • Preheat the broiler.
  • Heat the butter and oil in a large, oven-safe skillet over medium-high heat. Place one flour tortilla in the skillet. Spread a few tablespoons pizza sauce on the tortilla, leaving a little room around the edges. Sprinkle half of the provolone and half of the fontina over the sauce. Sprinkle a third of the mozzarella next, followed by 1 tablespoon Parmesan and 1/2 teaspoon oregano.
  • Top with the second tortilla and press it down gently. Once the underside is perfectly toasted, carefully flip the quesadilla to the other side.
  • Spread a few more tablespoons pizza sauce on the toasted side of the tortilla, being sure to leave a little bit of the edges exposed so it looks like a pizza. Sprinkle with another third of the mozzarella and the remaining provolone, fontina, Parmesan and oregano.
  • Arrange the red bell pepper and red onion on top of the cheeses like you would on a pizza. Do the same with the pepperoni slices and the olives. Top with the remaining mozzarella.
  • Transfer the pan to the broiler and let cook to melt the cheese on top, about 2 minutes. Carefully transfer the pizzadilla to a cutting board using a large spatula or two smaller spatulas.
  • Warm up the remaining pizza sauce and serve in a bowl for dipping. Cut the pizzadilla into wedges and garnish with the torn basil.

Provided by Food Network

Categories     main-dish

Time 25m

Yield 1 serving

Number Of Ingredients 11

2 cups shredded Monterey Jack cheese
One 10- to 12-inch flour tortilla
1/2 pound your choice cooked and chopped meat
2 tablespoons sour cream or Mexican crema
2 tablespoons guacamole
One 5-inch corn tostada
1 1/2 cups shredded iceberg lettuce
1/2 cup shredded purple cabbage
2 tablespoons pico de gallo or salsa
1/2 cup pickled jalapenos
1 cup nacho cheese sauce

Steps:

  • Preheat a flattop, griddle or large nonstick pan over medium heat. Sprinkle a 5-inch circle of Monterey Jack cheese in the center of the flour tortilla. Add the meat.
  • Spread Mexican crema and guacamole on the top of a corn tostada.
  • Place the tostada on top of the meat, then add the lettuce, shredded cabbage, pico de gallo and a little more Monterey Jack cheese.
  • To fold the crunchwrap, start at the bottom of the flour tortilla and fold the edge up and over the center. Continue to work your way around, folding the tortilla up and over the center fillings, until completely enclosed. Grill the crunchwrap folded-side down, on the flattop or pan. Place a grill press on top and grill each side until brown, about 3 minutes.
  • Cut in half and serve with pickled jalapenos and nacho cheese for dipping.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA

Jim Lahey's No-Knead Pizza Margherita image

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

Time 36m

Yield 3-4 10-inch pizzas

Number Of Ingredients 12

3 cups all-purpose flour or 3 cups bread flour, more for dusting
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/4 cups water
1 vine-ripened tomatoes (about 5 oz.) or 1 heirloom tomato (about 5 oz.)
1 pinch salt
1/4 teaspoon extra virgin olive oil
5 tablespoons tomato sauce
2 ounces buffalo mozzarella (about 1/4 ball)
basil leaves
1 tablespoon extra virgin olive oil
salt

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.
