PITA'S CANDIED YAMS
I have to say, all of my life I was not a yam fan. When I met my husband (boyfriend back then) this was a tradition in his family as a holiday dish. I gave it a try and now i'm hooked. They are a must have for our holidays and just might soon be yours too. I love to eat them right along with the turkey.

Steps:
- Boil yams until not quite fork tender. Remove from water and let cool. Remove skins and slice yams lengthwise into quarter pieces. Set aside.
- Cut butter into small cubes.
- In a 9x13 baking dish spoon about 1/4 of the pineapple, 1/4 of the butter cubes, and 1/4 of the brown sugar in the bottom of the dish. Lay the slices of yams over the top. Put the rest of the butter between slices. Pour the remaining of the pineapple over the top and sprinkle the remaining brown sugar over the top. Bake at 400 degrees for approximately 30 minute Sprinkle marshmellows over the top and make an additional 10-15min. Serve hot.

CANDIED YAMS WITH PECANS
These candied yams topped with sugary pecans and marshmallows are a perfect choice during the holidays, but also fun to serve as a sweet winter side dish any night of the week.

Steps:
- Bring a large pot of lightly salted water to a boil. Add yams and cook, stirring occasionally, until tender, 12 to 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Drain and transfer to a bowl with butter, 4 tablespoons brown sugar, cream, and 1/2 teaspoon cinnamon. Mash until all ingredients are incorporated and butter is melted. Transfer to a casserole dish and sprinkle with remaining brown sugar and cinnamon. Arrange pecans and marshmallows over the top.
- Bake in the preheated oven for 20 minutes.

- Combine Flour Brown Sugar, Oats and Cinnamon In Bowl.
- Cut In Margarine Until Crumbly.
- Mix 1 Cup Oat mixture with Yams and Cranberries in 1 1/2 Quart Casserole Dish.
- Top With Remaining Mixture.
- Bake at 350 . 30 to 35 Minutes.
- Sprinkle Marshmallows on top and Continue Baking Until Lightly Browned.

CANDIED YAM BREAD (USING LEFTOVERS)
The solution to those yummy leftover candied yams! I don't measure when I make candied yams so sometimes the leftovers have more liquid. If there is some liquid in the candied yams, I use that in place of some of the milk, making sure I get 1/2 cup of total liquid. If the liquid drained from the candied yams looks particularly buttery, I use it in place of some of the butter, making sure to get 1/2 cup total for the fat measurement. If there isn't much liquid I just use the measurements stated in the recipe. This makes a yummy bread!

- Preheat oven to 350°F.
- Butter a loaf pan and dust with a cinnamon sugar mixture.
- Sift the dry ingredients in a mixing bowl and set aside.
- Cream together the yams and sugar until smooth.
- Add butter; mix.
- Add eggs; mix.
- Add milk; mix.
- Fold the dry ingredients into the wet ingredients.
- Fold in nuts and/or chocolate chips if using.
- Pour batter into prepared loaf pan.
- Sprinkle top with more cinnamon sugar mixture.
