Great little pizzas. Use this basic recipe and add, remove, modify with your favorite ingredients. Great for low-fat diets when you're craving some 'zaah!

2 whole wheat pita bread
30 g reduced-fat mozzarella cheese
1/2 cup pasta sauce (Ragu, etc)
1/4 cup chopped onion
1/4 cup chopped green pepper
50 g black forest ham (chopped)

Steps:

  • Preheat oven to 400.
  • Spread pasta sauce evenly over both pitas.
  • Sprinkle with onion, green pepper and ham.
  • Cover with cheese.
  • Place on a cookie sheet or baking stone and bake for 10 minutes (or until cheese starts to brown).

pita bread (the thick little round ones)
marinara sauce (Just enough to cover the surface of the bread)
shredded cheese (The little prepackaged Italian blend works well)
1 couple dashes of oregano and garlic powder (to taste)

Steps:

  • Take a piece of pita bread and spread on a light coat of marinara.
  • Sprinkle the cheese on top of the marinara.
  • Apply oregano and garlic powder to taste.
  • Put it in the toaster oven, or oven and heat until the cheese melted.
  • Remove from heat and slice into quarters.
  • Make more! because your hungry, and it was quite tasty -- .

2 tablespoons lemon juice
½ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon dried basil
6 tablespoons olive oil
2 (4 inch) pita bread rounds
2 cups torn fresh spinach
¼ cup halved grape tomatoes
3 tablespoons chopped pimento-stuffed green olives
½ cup shredded mozzarella cheese
½ cup crumbled feta cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix lemon juice, garlic powder, oregano, and basil in a bowl; whisk oil into lemon juice mixture until dressing is well blended. Brush about 1 tablespoon dressing over pita breads and arrange on baking sheet; reserve remaining dressing.
  • Combine spinach, tomatoes, and olives in a large bowl. Pour remaining dressing over vegetables and toss to coat. Divide spinach mixture evenly over each pita; sprinkle with mozzarella cheese and feta cheese.
  • Bake in the preheated oven until cheese is melted and pitas are lightly toasted, about 8 minutes.

2 pocket pitas, each split into 2 rounds
2 tablespoons olive oil
2 cups shredded scamorza cheese (you can also use mozzarella)
1 Roma tomato, thinly sliced
Garlic salt, for sprinkling
Fresh basil leaves, for topping

Steps:

  • Preheat the oven to 400 degrees F.
  • Brush both sides of each pita round with a liberal coating of olive oil and place all 4 rounds onto a baking sheet. Sprinkle the shredded cheese in an even layer on each pita. Place a single layer of tomato slices on top of the cheese and sprinkle garlic salt over top of each.
  • Bake until the bottoms are golden brown and the pitas are crispy, 15 to 20 minutes. Top with fresh basil.

I have created this recipe as one of my lunch choices for a very strict 1800-calorie per day low fat cardiac diet. I finish off with 1 cup of strawberries and water or a non-caloric beverage for a tasty, low calorie and more heart healthy lunch.

1 6 inch fat-free whole wheat pita bread
1/3 cup tomato sauce
3 ounces lowfat mozzarella cheese
1/2 cup broccoli (steamed)
2 garlic cloves (or jarred garlic like Christopher Ranch)
1 teaspoon olive oil
1 tablespoon black olives (chopped)

Steps:

  • Pre heat pizza stone in a 400 degrees oven.
  • Sauté garlic and broccoli.
  • Carefully cut a pocket into the center of the pita, but be careful not to slice through, then stuff inside with the sautéed steamed Broccoli and garlic.
  • Spread Tomato Sauce on top of the Pita.
  • Sprinkle black olive and mozzarella on top and place in the oven on the pizza stone. (Regular pizza pan or piece of aluminum foil can be used it you do not have a pizza stone).
  • Bake for approximately 12 -15 minutes until cheese is melted and lightly browned.
  • Remove from oven and cut into quarters and enjoy!
