This basic souvlaki recipe is adapted from the website Kalofagas - Greek Food & Beyond.

1 kg pork shoulder, boneless
1 medium onion, grated
3 cloves of garlic, minced
1 tsp salt, heaping
1 tsp black pepper, heaping
1/4 cup olive (or canola) oil
1 tsp dried Greek oregano, heaping

Steps:

  • Cut off any excess fat or membranes from the meat, then cut it into equal sized cubes.
  • Toss the meat in a large bowl together with all the marinade ingredients, then refrigerate for a minimum of five hours (best overnight). Also, place the wooden skewers in a shallow container filled with water overnight.
  • The next day, take the meat out of the refrigerator and first wait until it comes to room temperature and then skewer it.
  • Grill the souvlaki over medium-high heat, about 3-4 minutes per side. Keep warm until ready to serve. Sprinkle the grilled souvlaki with lemon juice, salt, and Greek oregano.
  • Serve just with bread, or inside a pita with tzatziki sauce and toppings of your choice.

Pita Gyros and Pita Kalamaki are probably the most famous food in Greece! Today I'll show you how to make Pita Kalamaki. You will be amazed!

Number Of Ingredients 15

900 g pork
6 wheat, burrito pies
3 cutted tomatoes
3 cutted onions
1 teacup white wine and lemon juice
2 tablespoons oregano
1/2 spoon thyme
1/2 spoon rosemary
salt and pepper
600 g yogurt
2 small grated cucumbers
3 grated garlic cloves
2 tablespoons dill
7 tablespoons olive oil
4 choped potatoes (like french fries)

Steps:

  • Marinate the meat from the night before.
  • Put in a glass 1/2 tablespoon oilve oil, the white wine with the lemon juice, 1 tablespoon oregano, the thime and the rosemary.
  • Cut the pork (as shown in the pictures), then mix it with the mixture and then leave them there all night.
  • To prepare the tzatziki sauce, put the cucumber in a sieve, add salt and leave for 1 hour.
  • Periodically press with our palm.
  • Put the yogurt in a large bowl and add the cucumber, garlic, dill and olive oil.
  • Mix well to combine all ingredients.
  • Once the mixture is ready, refrigerate for at least 1 hour to tie all the ingredients together.
  • Preheat oven to 200 degrees and lay on a large baking sheet pan.
  • Put the potatoes into a large bowl and add the olive oil and oregano, salt according to your taste and mix well with your hands.
  • Spread the potatoes on a baking tray and bake until browned nicely.
  • Change the operation of our oven to grill mode and lay with parchment paper a large pan.
  • Place the choped pork pieces next to each other and bake for 30-40 ' turning them frequently.
  • At the same time, the position directly below bake the burrito pies and pour 1/2 tablespoon olive oil on each.
  • Put the meat in the pies with tomato and onion.
  • On each pie, add a few potatoes and 2 tablespoons of tzatziki.
  • Enfold the Pies and start eating (like a burrito).
  • Enjoy the remaining fries as a side wiht your Pita Kalamaki!

1 lb beef round tip steak, cut paper thin
2 cloves garlic, minced
1 teaspoon dried oregano
3 teaspoons olive oil
crumbled feta cheese
salt and pepper
4 pita breads, cut in half,warmed
2 small plum tomatoes, thinly sliced
very thinly sliced red onion
1/2 cup prepared cucumber ranch dressing

Steps:

  • Stack beef steaks; cut lengthwise in half, then crosswise into 1-inch wide strips.
  • Toss with garlic and oregano.
  • Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until hot.
  • Add 1/2 of beef; stir-fry 1 minute or until outside surface of beef is no longer pink.
  • (Do not overcook.) Remove.
  • Repeat with remaining beef.
  • Return beef to skillet; heat through.
  • Season with salt and pepper.
  • Serve in pita pockets with tomatoes,onions, Feta cheese, and dressing.

  • Cut your chicken into small-ish, bite-sized pieces. Place into a bowl. In a small bowl, stir together all the marinade ingredients. Pour over chicken and stir well to combine and coat the chicken. Cover the bowl and refrigerate for at least 1 hour or up to 8 hours.
  • If using wooden skewers, soak in cold water for 30 minutes before using. Prepare the marinated cherry tomatoes and/or homemade tzatziki, if using (see Notes below), prepare them about 30 minutes ahead or more and refrigerate.
  • When ready to cook, heat your grill to medium high (or alternately, heat your oven to 400F). Thread marinated chicken onto skewers, being sure not to fill the skewers too tightly (leave a tiny bit of space between pieces). Cook on the grill for 8-10 minutes, turning regularly, until cooked through. If using the oven, your chicken may take a bit longer. You can also place them under the broiler for a minute or two to add some colour.
  • Prepare the pitas by adding some lettuce to the pocket. Spoon in some marinated cherry tomatoes, if using, Remove chicken from skewers and add to pita. Top with a drizzle of tzatziki.

  • In a non-reactive container (or freezer bag) large enough to accomodate the pork grate the onion, add the minced garlic, oregano, olive oil, lemon juice and salt and pepper.
