This recipe is super simple and can be changed to suit your tastes. Just add additional fruit and/or nuts.

1 (20 ounce) can crushed pineapple, drained
1 (3 ounce) package instant pistachio pudding mix
1 (8 ounce) container frozen whipped topping, thawed
½ (10.5 ounce) package miniature marshmallows

Steps:

  • In a large bowl, combine the pineapple and dry pistachio pudding mix. Fold in thawed whipped topping and marshmallows until well mixed. Refrigerate until chilled and serve.

2 cups romaine lettuce
2 tablespoons pistachio nuts
2 tablespoons parmesan cheese
1/4 cup green pepper
1/8 cup olive oil
1 dash salt
1 dash pepper
1/2 lemon

Steps:

  • Chop lettuce and green pepper into bite-size pieces.
  • Top lettuce with pistacio nuts, green pepper and parmesan cheese.
  • To make dressing, squeeze the juice of one lemon.
  • Remove seeds.
  • Add olive oil.
  • Add salt and pepper to taste.
  • Add dressing to salad and serve.
  • Note: Keep at dressing at room temperature.

1 (12 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows

1 cup chopped walnuts
3 bananas, sliced

Steps:

  • In a large bowl, fold together the pudding mix and whipped topping.
  • Add the marshmallows, pineapple with syrup, nuts and bananas. Mix well and refrigerate overnight.

August 3rd is National Watermelon Day! This recipe for a summer-inspired watermelon salad is refreshingly juicy and sweet with a tangy kick.

6 cups red watermelon, cubed
5 fresh basil leaves, chopped
10 fresh mint leaves, chopped
⅓ cup lightly salted pistachios, chopped
¼ cup crumbled feta cheese
1 teaspoon lemon zest
1 teaspoon orange zest
1 orange, juiced
1 lemon, juiced
1 teaspoon olive oil
1 tablespoon honey
freshly ground black pepper, to taste
kosher salt, to taste
6 teaspoons balsamic glaze

Steps:

  • In a large bowl, combine the watermelon, basil, mint, pistachios, feta, lemon zest, and orange zest.
  • Make the dressing: In a small bowl, whisk together the orange juice, lemon juice, olive oil, honey, pepper, and salt until evenly combined.
  • Pour the dressing over the watermelon salad and toss gently until well-coated.
  • Serve immediately, or refrigerate for 10 minutes to chill. Just before serving, divide the watermelon salad between serving bowls and drizzle with the balsamic glaze.
  • Enjoy!
