CHICKEN AND DRESSING SHEET PAN SUPPER

1/2 loaf Ciabatta, Cut Into 1-inch Pieces
4 c. Cornbread Chunks (use Your Favorite Recipe)
1 whole Medium Red Onion, Cut Into Chunks
3 stalks Celery, Sliced
2 whole Carrots, Peeled And Cut Into Chunks
1 1/2 tsp. Kosher Salt
1 tsp. Black Pepper
1/2 tsp. Ground Sage
1/2 tsp. Ground Thyme
8 whole Bone In Chicken Thighs
1 whole Half-stick Land O Lakes® Salted Butter, Cut Into Small Pieces

Steps:

  • Preheat the oven to 425 degrees. Place the bread cubes, cornbread cubes, onion, celery, and carrots on a sheet pan. Toss together with your hands. Nestle the chicken thighs all around the pan, skin side up. Mix together the salt, pepper, sage, and thyme and sprinkle it all over the chicken, bread, and veggies. Dot the top with the butter.Place the pan in the oven for 15 minutes. Use a wooden spatula to stir the bread and veggies, mixing in the butter. Do not disturb the chicken. Return the pan to the oven and continue roasting for 25 to 30 minutes, until chicken is completely cooked. Remove the pan from the oven, stir the bread and veggies, and serve!Sponsored by Land O' Lakes.

QUARTER SHEET PAN SUPPER



Quarter Sheet Pan Supper image

1/4 cup low-sodium soy sauce
2 tablespoons honey
2 tablespoons peanut oil
1 tablespoon minced ginger
1 clove garlic, minced
3 cups frozen stir-fry vegetable blend
4 chicken drumsticks
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon sesame seeds
2 tablespoons fresh cilantro leaves
1/4 teaspoon toasted sesame oil
Asian chili paste, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a quarter sheet pan with foil and set aside.
  • In a small mason jar, add the soy, honey, peanut oil, ginger and garlic. Shake until combined. Add the stir-fry vegetable blend to a bowl and toss with half of the soy mixture. Add the vegetables to the prepared pan, favoring one side of the pan.
  • Sprinkle the chicken with the salt and pepper and place next to the vegetables. Brush the chicken with the soy mixture. Bake, tossing the vegetables and basting the chicken halfway through, until the chicken is cooked through and the vegetables begin to brown, 25 to 28 minutes.
  • Divide the vegetables between 2 plates. Top the vegetables with the chicken, sprinkle with the sesame seeds and cilantro and drizzle with the sesame oil. Serve with Asian chili paste on the side.

ITALIAN CHICKEN SHEET PAN SUPPER



Italian Chicken Sheet Pan Supper image

1/4 cup balsamic vinegar
1 teaspoon dried parsley flakes
1 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
5 cloves garlic, minced
1 cup plus 3 tablespoons olive oil
8 bone-in, skin-on chicken thighs
1 pound green beans
2 cups mixed cherry tomatoes
1 loaf crusty ciabatta bread
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • To a bowl or pitcher, add the vinegar, parsley, basil, salt, pepper, garlic and 1 cup of the olive oil. Whisk until well combined.
  • Put the chicken in a large zipper bag and pour in half the dressing. Seal the bag and squish to coat the chicken.
  • Trim the ends of the green beans and put in a large bowl with the tomatoes. Pour over the remaining dressing and toss.
  • Using tongs, arrange the chicken skin-side up on a sheet pan. Use a slotted spoon to transfer the beans and tomatoes to the sheet pan, leaving the excess marinade behind. Roast for 20 minutes.
  • Meanwhile, rip the bread into large chunks. Add to a bowl, drizzle with the remaining 3 tablespoons olive oil and toss.
  • After the chicken and vegetables have roasted for 20 minutes, shake the pan to prevent sticking, then add the bread chunks to the pan. Continue to roast until the chicken is cooked through and the skin is golden and crisp, about another 10 minutes. Sprinkle the sheet pan with parsley and serve.

RANCH PORK CHOP SHEET PAN SUPPER



Ranch Pork Chop Sheet Pan Supper image

2 tablespoons honey
2 tablespoons Worcestershire sauce
One 3.5-ounce packet ranch dressing mix
5 tablespoons olive oil
1 1/2 teaspoons freshly ground black pepper
4 boneless pork chops (1/2 inch thick)
1 pound baby Yukon gold potatoes, halved
8 ounces green beans, trimmed
2 tablespoons fresh parsley leaves

Steps:

  • Preheat the oven to 475 degrees F.
  • In a small bowl, mix together the honey, Worcestershire, 2 tablespoons of the ranch dressing mix, 2 tablespoons of the olive oil and 1 teaspoon of the pepper until combined.
  • Brush the mixture over the chops on both sides and place in a row on one side of a sheet pan using tongs.
  • In a medium mixing bowl, add the potatoes, 2 tablespoons of olive oil, 1 tablespoon of the ranch dressing mix and 1/4 teaspoon of pepper and toss to coat. Tip onto the middle of the sheet pan next to the pork chops. Bake for 15 minutes.
  • Meanwhile, add the beans to a bowl along with the remaining olive oil, ranch mix and 1/4 teaspoon pepper and toss.
  • When the 15 minutes is up, remove the sheet pan from the oven and flip the pork chops. Toss the potatoes and add the green beans to the empty space at the side of the baking sheet. Bake until the vegetables are just beginning to brown, about 7 minutes more. Garnish with the parsley leaves and serve.

PEANUT CHICKEN AND BROCCOLI SHEET PAN SUPPER



Peanut Chicken and Broccoli Sheet Pan Supper image

2 tablespoons honey
2 tablespoons creamy peanut butter
2 tablespoons soy sauce
1/2 teaspoon Worcestershire sauce
Pinch cayenne pepper
2 cloves garlic, grated
Juice of 2 limes, plus 1 lime cut into wedges
1/4 cup plus 1 tablespoon olive oil
Kosher salt and freshly ground black pepper
2 skin-on, bone-in chicken thighs
2 chicken drumsticks
2 cups broccoli florets
Cooked white rice, for serving
Sliced scallions, for topping

Steps:

  • Make a peanut sauce: Pour the honey, peanut butter, soy sauce and Worcestershire sauce into a large bowl along with the cayenne pepper, garlic, lime juice and 1/4 cup of olive oil. Season with a pinch of salt and pepper, then whisk together. Reserve 1/2 cup in a small bowl for serving.
  • Add the chicken thighs and drumsticks to the large bowl with the remaining sauce and toss to coat. Cover and refrigerate for 30 minutes.
  • Preheat the oven to 450 degrees F and line a baking sheet with foil. Remove the chicken from the marinade and place on the baking sheet.
  • Add the broccoli to a bowl and toss with the remaining tablespoon olive oil, 1 teaspoon salt and a few grinds of pepper. Place on the sheet pan with the chicken, then bake until the broccoli is tender and golden brown in spots, the chicken is crisp and the internal temperature is 165 degrees F, about 30 minutes. Serve the chicken with the broccoli and rice. Sprinkle with the scallions and serve with the lime wedges and reserved peanut sauce.

SHEET PAN SHRIMP PUTTANESCA

1 red onion, cut into wedges
3 cups sourdough bread, cut into 1-inch cubes
1 pint (2 cups) cherry tomatoes
1/2 cup pitted Niçoise olives
Kosher salt and freshly ground black pepper
4 tablespoons olive oil
2 pounds jumbo (U15) shrimp, peeled and deveined and tails removed
2 tablespoons red wine vinegar
1 anchovy, minced
1 tablespoon capers, drained
1/3 cup fresh parsley leaves, plus 2 tablespoons, chopped
Parmesan shavings, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Combine the onion, bread cubes, tomatoes and olives on a rimmed baking sheet Sprinkle with 1/2 teaspoon salt and black pepper to taste. Drizzle with 2 tablespoons of olive oil and toss everything together. Disperse evenly on the baking sheet and bake until the bread just starts to crisp, 12 to 15 minutes.
  • In a medium bowl, toss the shrimp with 1 tablespoon olive oil and 1/2 teaspoon of salt. Arrange on the baking sheet among the bread mixture. Bake until the shrimp are opaque and just cooked through, 8 to 10 minutes.
  • Meanwhile, whisk together the remaining 1 tablespoon olive oil, vinegar and anchovy in a small bowl. Stir in the capers and set aside.
  • Remove the baking sheet from the oven. Add the parsley leaves and dressing and toss to evenly coat. Transfer to a platter and garnish with the chopped parsley. Add Parmesan shavings. Serve immediately.

3 parsnips, cut into 1/4-inch slices
3 sweet potatoes, cut into wedges
2 red onions, cut into quarters
3 tablespoons olive oil
1/2 teaspoon dried sage
Sprinkle of kosher salt
Sprinkle of freshly ground black pepper
12 Italian sausages

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the Brussels sprouts, parsnips, sweet potatoes and onions to a baking sheet. Add the olive oil, sage, salt and pepper and toss. Put the sausages in and around the vegetables.
  • Bake until the sausages are cooked through and the vegetables are tender, 40 to 45 minutes. Serve.
