Blackberry & apple pasties image

A delicious way with Autumn fruit in tasty pasties

icing sugar , to dust
425g pack ready-rolled shortcrust pastry
2 Bramley apples , peeled, cored and chopped
2 tbsp light brown sugar
150g punnet blackberries
thick cream , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Dust a work surface with icing sugar, then unroll the pastry and cut out 4 rounds using a small side plate as a template.
  • Combine the apples, sugar and blackberries and put a small pile on each pastry circle. Dampen the edge of the pastry, then fold over to encase the fruit. Pinch and fold the pastry over along one edge to make a pasty shape. Slash each pasty 3 times, lift onto a baking sheet and bake for 20 mins or until puffed and golden. Serve with cream.

These Apple pasties are great and very few ingredients, but you will have to make plenty as I discovered because they go fast and everybody wants more. I almost regret starting them as I get plenty of demand from my family for them. I found this in an old english country side cook book, and its so easy and a hit.

6 medium granny smith apples (green cooking apples )
1 1/2 cups sugar
8 cloves
2 tablespoons butter
3 sheets ready rolled puff pastry
1 egg white
2 tablespoons sugar, for glazing

Steps:

  • Peel and core Apples then chop into small pieces and place with butter in saucepan, add 1 and a half cups sugar then cloves.
  • Heat slowly and gently with lid on so the apples and sugar dont burn or brown. Stir regularly.
  • The apples should be just tender, then leave aside to cool and remove and discard cloves.
  • When apple mix is cool, preheat oven to 200 degrees celsius, cut sheets of pastry into quarters, place a portion of apple mix in middle and make into pastie shapes or triangles if your in a hurry like I do.
  • Place apple pasties onto sprayed baking tray.
  • Brush over with egg white and sprinkle with sugar.
  • Place in oven and cook until golden brown.
  • Serve warm with custard or ice cream, or there even great cold as a travelling snack or for picnics.

396 g tuna
198 g sweetcorn
120 g cheese sauce
500 g shortcrust pastry
flour
1 egg

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Line two baking trays with baking paper. Drain the tuna and mix with the corn and the sauce. Season with pepper - you probably won't need salt.
  • Roll out the pastry on a lightly floured surface to the thickness of a 2p coin. Cut out 11cm rounds. Re-roll the pastry trimmings and cut out more rounds.
  • Brush one round with the egg, put 1 heaped tsp of the tuna mixture in the middle. Fold over the pastry to make a turnover and press the edges together to seal. Repeat until all the tuna is used up.
  • Put on the baking trays and brush with egg. Bake for 20-25 minutes until golden.

Delicious savoury pasties with a Turkish twist! Great as a snack, a side for soups or salads or as a small meal on their own! There are two filling options, each makes enough for 8 pasties. The dough recipe is for 16 pasties, so if you want to make just e.g. 8 feta pasties, cut the dough recipe in half. Use the amount of flour listed only as a guideline as the amount of gluten will vary. You can use dried yeast instead of fresh if you prefer, just adjust the temperature of the dough accordingly and add the yeast with the flour. Recipe adapted from Maku magazine.

100 g butter
200 ml milk, at room temperature
2 teaspoons sugar
1 teaspoon salt
20 g fresh yeast
2 eggs
2 egg whites (save the yolks for brushing the pasties!)
1000 ml all-purpose flour
1 small onion
1 garlic clove
1 tablespoon oil
200 g feta cheese
1 egg
100 ml chopped fresh parsley
50 ml chopped fresh dill
50 ml plain yogurt
1/2 teaspoon salt
black pepper
300 g ground beef
1 onion
1 garlic clove
1 tablespoon oil
100 ml chopped fresh parsley
1/2 tablespoon lemon juice
1 -2 teaspoon chili paste
1 1/2 teaspoons ground paprika
1 teaspoon sugar
1/2-1 teaspoon salt
black pepper
1 egg

Steps:

  • To make dough: Melt butter. Add milk, sugar and salt. Check the temperature (it should be 35-37 C) and crumble yeast into the mixture. Add eggs and egg whites, stir. Gradually add flour; knead the dough for about five minutes or until it is smooth and elastic and starts to pull away from the edges of the bowl. Cover and let rise for 30-60 minutes.
  • To make cheese filling: Finely chop onion and garlic. Heat oil in a pan and cook onion and garlic until softened. Let cool. Crumble feta in a bowl with a fork and mix all ingredients together into a paste.
  • To make ground beef filling: Finely chop onion and garlic. Heat oil in a pan and cook onion, garlic and ground beef until browned. Add all remaining ingredients except for egg. Check the taste: the filling should taste fairly strong and salty. Let cool and finally mix in egg.
  • Preheat oven to 225°C Line a baking sheet with parchment paper. Oil the baking board and turn the dough on it. Divide the dough in half and cut each half into 8 pieces.
  • Roll each piece out into an oval about ½ cm thick. Divide the fillings between the 16 ovals. Turn a few centimetres of the dough on top of the filling on each side and pinch the ends together tightly, so you have a boat-shaped pasty. (You can bring the sides quite close together, as the pasties "open" a bit as they bake). Carefully transfer the pasties on the baking sheet. Brush the sides with egg yolk and bake in the preheated oven for 10 minutes.
  • Serve warm or at room temperature.

1 small sweet potato, peeled, coarsely chopped (kumara)
1 small carrot, peeled, finely chopped
1 potato, peeled, finely chopped
1/2 cup frozen peas
125 g corn, rinsed and drained
1/2 cup cheese, coarsely grated
2 eggs, lightly whisked
3 sheets shortcrust pastry (ready-rolled and frozen)
2 teaspoons sesame seeds

Steps:

  • Preheat oven to 240°C Line an oven tray with baking paper. Cook sweet potato in boiling water for 10 minutes or until tender. Drain well. Transfer to a heatproof bowl. Use a fork to mash until smooth. Set aside to cool in bowl.
  • Cook carrot and potato in a pot of boiling water for 5 minutes or until tender. Drain well. Set aside for 5 minutes to cool slightly.
  • Add carrot mixture, peas, corn, cheese and 1 egg to sweet potato. Stir to combine. Season with salt and pepper.
  • Use a 12cm-diameter pastry cutter to cut 12 discs from pastry sheets. Spoon vegetable mixture evenly among pastry discs. Brush edges of pastry lightly with remaining egg.
  • Fold pastries in half to enclose filling. Use fingertips to gently press together to seal. Place on the lined tray and lightly brush with remaining egg. Sprinkle with sesame seeds.
  • [You can freeze these pasties at this point. Place in an airtight container in the freezer. To defrost, place individual pasties in the fridge for 4 hours.].
  • Bake in oven for 15 minutes or until golden brown and cooked through. Remove from oven and set aside to cool.
  • Once completely cooled, wrap in foil and place in lunch box.

1 red capsicum, seeded and chopped
1 potato, peeled and chopped
1 onion, chopped
2 tomatoes, chopped
420 g mexican style beans, drained
1 cup tasty cheese, grated
4 sheets frozen puff pastry, thawed
milk, for glazing
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 200 Degrees Celsius.
  • Lightly grease 2 baking trays.
  • Heat oil in frying pan. Saute capsicum, potatoes and onion for 3 minutes until onion is tender. Add tomatoes. Cook 2 minutes.
  • Remove from heat and stir in beans and cheese. Season to taste.
  • Cut each pastry sheet into 4.
  • Place 2 tbs filling in centre and fold in half diagonally, wetting edges with water. Seal to close with a fork pressed on edges.
  • Make 2 slits on top of pastry to allow steam to escape. Brush with a little milk and sprinkle with sesame seeds.
  • Bake 15-20 minutes.

2 prepared piecrusts

Steps:

  • Preheat the oven to 375°F.
  • Separate the egg, placing the egg yolk in a large bowl, reserving the egg white for later use. Add the sour cream, sugar, flour, salt, and cinnamon and stir until combined. Peel and core the apples and dice into 1/2-inch pieces. Add the apples to the bowl and stir until completely coated.
  • Lay the piecrusts on a flat work surface and spoon one-half of the apple mixture in the center of each piecrust, avoiding the edges. Fold the dough over to form a half circle, gently roll up about 3/4 inch of the open edges and press gently to seal. Lightly beat the egg white until broken up, but not frothy and brush on the dough. Bake for 30 to 35 minutes, until golden brown. Cut each pasty in half and serve warm.

1 teaspoon salt
1 cup cold butter, cubed
1 tablespoon cider vinegar
1/2 cup milk
FILLING:
3/4 cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
5 tablespoons cold butter, divided
6 small tart apples, peeled and cored
1/4 cup sugar

Steps:

  • In a large bowl, combine flour and salt. Cut in butter until crumbly. Sprinkle with vinegar. Gradually add milk, tossing with a fork until dough forms a ball. Cover and refrigerate for 20 minutes or until easy to handle. , Meanwhile, in another bowl, combine the brown sugar, flour and cinnamon. Cut in 2 tablespoons butter until crumbly; set aside. Melt the remaining butter. Cut apples into 1/2-in. rings., Shape dough into sixteen 11/2-in. balls; roll into 5-in. circles. Brush with 2 tablespoons melted butter. , Place one apple ring in the center of each circle. Top each with 2 teaspoons brown sugar mixture. Fold edges of dough over apple rings, leaving centers uncovered; crimp edges. Brush dough with remaining melted butter; sprinkle with sugar., Place 1 in. apart on ungreased baking sheets. Bake at 375° for 30-35 minutes or until golden brown and apples are tender. Serve warm.
