If you love pineapple (and/or lemon bars), you are sure to love this super easy pineapple bars recipe! Canned pineapple works in a pinch, but cut up half of a whole fresh pineapple and get ready to be hooked for life on this sweet and tangy treat!!

1 1/2 cups all-purpose flour
1/2 cup sugar
1 pinch salt
3/4 cup butter ((cold, cubed butter - 1 1/2 sticks))
2 large eggs ((beaten))
1 cup sugar
1/2 cup sour cream
1 pinch salt
1/2 cup all-purpose flour
1/2 pineapple ((fresh, finely sliced or 1 16 oz can of crushed pineapple))
1 cup confectioners sugar
2 Tbsp half-and-half ((use more as needed))
1 tsp coconut extract

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease your 9 x 13 baking pan with butter or use non-stick cooking spray.

Ingredients

2 cups flour
1 cup butter, softened
1/2 cup white sugar
4 beaten eggs
1/2 cup white sugar
1/2 cup frozen pineapple concentrate
1/2 cup crushed pineapple, drained
1/2 teaspoon salt
1 teaspoon baking powder
4 tablespoons flour

Steps:

Dump the pineapple in a strainer and let it drain while you cream the butter and sugar.
Add the flour and mix well. (you can do this in a food processor with hard butter cut into chunks and the steel blade).
Spread mixture out in a greased 9x13 inch pan and press it down evenly with your hands.
Bake at 350 degrees for 15-20 minutes. Remove from oven, but do not turn the oven off.
Mix the eggs with sugar.
Add pineapple concentrate and drained pineapple, mix.
Add salt and baking powder and stir it all up.
Add the flour and mix thoroughly. It will be runny, it will set in the oven.
Pour this mixture on top of the pan you just baked and stick it back in the oven.
Bake at 350 degrees for another 45-50 minutes.
Remove from oven and cool thoroughly.
Sprinkle with a little powdered sugar and cut into brownie-sized bars.

Preheat oven to 350 degrees. Coat a 9 x 9 baking pan with cooking spray and line with parchment. Set aside.
In a bowl, combine the butter, sugar, and flour. Crumble together and press into the bottom of the pan. Bake for 15 minutes until light golden brown. Set aside to cool slightly.
For the top layer, combine the beaten eggs with the remaining top layer ingredients and stir well to combine. Pour over the slighly cooled bottom layer and bake for 20-25 minutes or until bars are set and a rich brown color. Set aside to cool.
For the icing, beat together the powdered sugar, butter, and pineapple juice until desired consistency is reached, adding more powedered sugar and pineapple juice as necessary. Spread over cooled bars.
