40 ounces Golden Pineapple Chunks (drained)
1 cup old fashioned oats
1 cup light brown sugar
1 cup all-purpose flour
1 stick butter (melted )
1/2 cup granulated sugar
1/2 tablespoon cinnamon

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Melt the butter in the microwave until liquid. (about 45 seconds).
  • Add the flour, oats, brown sugar, and melted butter to a dish and mix well.
  • Lightly grease your 8" x 8" dish with nonstick spray.
  • Sprinkle half the crisp mixture into the lightly grease dish.
  • Add the drained pineapple chunks over the crisp.
  • Sprinkle the cinnamon & granulated sugar over the top of the pineapple chunks.
  • Add the remainder of the crisp topping over the pineapples.
  • Bake for 30 minutes uncovered,
  • Allow crisp to cool before enjoying.

1 medium pear or apple, peeled and sliced
2 tablespoons brown sugar
2 tablespoons quick-cooking oats
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • Place fruit in a small microwave-safe bowl. In another bowl, combine the dry ingredients; cut in butter until crumbly. Sprinkle over fruit. Microwave, uncovered, on high for 1-1/2 minutes or until fruit is tender.

Took an old Pear Pie recipe and added the pineapple that was sitting on the counter and the result was delicious!

2 pie crusts - ready made or by scratch
1/2 c sugar
3 Tbsp all purpose flour
1/4 tsp salt
1 tsp ground cinnamon
1 zest from a medium sized lemon
3 c fresh pear (peeled and sliced)
3 c fresh pineapple (diced into 1 inch cubes)
2 Tbsp butter
1 juice from the 1 medium sized lemon

Steps:

  • 1. Combine the sugar, flour, cinnamon,salt and lemon zest in a small bowl.
  • 2. Mix the Pear and Pineapple with the juice from 1 Lemon and place 1/2 of the mixture into the pie crust. Sprinkle 1/2 of the flour mixture over the fruit. Add the rest of the fruit mixture and sprinkle the rest of the flour mixture on top. Pat the filling down a bit to make it firm.
  • 3. Thinly shave the butter and place randomly around the top of the pie filling. Cover the pie with second crust, press the sides together with a fork and cut a slit in the top of the crust.
  • 4. Bake at 450 degrees for 10 minutes then cover crust with foil and bake at 350 degrees for 30 minutes.
  • 5. Uncover crust and bake an additional 10-15 minutes until crust in golden brown. Remove pie and let it cool for 45 minutes on cooling rack.

1 cup all-purpose flour
1 cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
1 egg
½ cup butter, melted

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread well-drained pineapple into a 9x9 inch square baking pan.
  • In a medium bowl, mix together flour, sugar, baking powder, salt and egg until smooth. Spoon mixture evenly over pineapple. Pour melted butter over mixture and then sprinkle with cinnamon.
  • Bake in preheated oven for 40 to 45 minutes. Serve hot or cold.

6 tablespoons unsalted butter
1 teaspoon minced ginger
1 tablespoon light brown sugar
1/8 scant teaspoon ground cinnamon
Dash ground nutmeg
1/2 (1 1/4 pounds) fresh pineapple, peeled, cored and sliced into 1/4-inch pieces (about 4 cups)
2 Bartlett pears, ripe but firm, peeled, cored and sliced into 1/4-inch pieces
1 frozen puff pastry sheet, thawed according to directions on package
1 egg yolk, beaten
1 tablespoon dark rum
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium saute pan over medium heat, melt 4 tablespoons butter, add ginger and cook for 1 minute. Add in brown sugar, cinnamon and nutmeg. Let cook 2 minutes, then add in fruit, stirring gently to combine. Let cook over medium heat to gently caramelize, about 6 to 8 minutes. Remove fruit from pan, reserve sauce in pan. Let fruit cool to room temperature. Place puff pastry dough on baking sheet. Spread fruit out on puff pastry dough, leaving a 2-inch border all around. With the long end closest to you, fold dough into thirds, then repeat ending with the seam down. Pinch short ends closed. Brush with egg yolk.
  • Bake until golden brown and crispy, about 20 to 25 minutes. While baking, heat up remaining sauce over medium heat, fortify with rum and 2 tablespoons butter. To serve, remove strudel from oven and slice immediately into 6 pieces. Drizzle some of the sauce on dessert plates. Place strudel slice on top and dust with powdered sugar.

2/3 cup rolled oats

1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

Steps:

  • Coat a 2-quart rectangular baking dish with nonstick cooking spray.
  • Preheat oven to 375°F.
  • If desired, peel pears. Core and halve pears lengthwise. Arrange pear halves, cut sides up, in prepared baking dish. Sprinkle with cinnamon and top with pineapple.
  • In a medium bowl, combine remaining ingredients until well mixed. Sprinkle this mixture evenly over fruit.
  • Bake for 25-30 minutes, or until pears are tender.

1 cup old-fashioned oatmeal

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
