HEAVENLY PINEAPPLE HASH image

This is a cool, sweet and refreshing dessert type salad that my family has enjoyed for more than 50 years. It's easy to prepare and tastes even better the next day.

Number Of Ingredients 6

1 20 ounce can of pineapple tidbits, drained
12 oz regular size marshmallows
2 large egg yolks
1 1/2 Tbsp white granulated sugar
2 Tbsp apple cider vinegar
1 pt heavy whipping cream

Steps:

  • 1. Drain pineapple well and set aside.
  • 2. Using kitchen scissors or paring knife, cut each marshmallow into 4-6 pieces into a large mixing bowl (DO NOT use miniature marshmallows, it won't work; this step is sticky and a little tedious, but the results are so worth it!) Set aside.
  • 3. In a mixing bowl, whip cream to stiff peak stage and set aside.
  • 4. In a small saucepan, mix together well, egg yolks, sugar and vinegar.
  • 5. Cook, stirring constantly, over medium/medium low heat until just thickened.
  • 6. Remove from heat, add pineapple and stir until coated.
  • 7. Pour mixture over marshmallows and mix very well (until all the marshmallow pieces are coated.)
  • 8. Add whipped cream and fold in well.
  • 9. Cover and refrigerate.
  • 10. Before serving, give it an additional stir for final blending of flavors.

This pie is super easy to make and so good. It is light and fluffy, the perfect addition to a summer BBQ.

1 (8 ounce) package cream cheese, softened
1 (14 ounce) can Eagle Brand Condensed Milk
1/3 cup lemon juice
1 (8 ounce) carton Cool Whip
1 (15 ounce) can crushed pineapple, drained
1/2 cup pecans, chopped
2 graham cracker pie crusts

Steps:

  • Combine cream cheese, Eagle Brand milk, and lemon juice and beat until smooth.
  • Stir in pineapple and pecans and fold in cool whip.
  • Divide mixture evenly between both pie crusts.
  • Chill in refrigerator for 4 hours before serving.

1/2 cup Kellogg's® corn flake crumbs or 2 cups Kellogg's® corn flakes (crushed to 1/2 cup)
2 tablespoons sugar
3 tablespoons margarine or butter, softened
FILLING
1 2/3 cups crushed pineapple
1 envelope unflavored gelatin
1/2 cup sugar
1/4 teaspoon salt
1 tablespoon lemon juice
1 (8-ounce) package cream cheese, softened
1/2 pint whipping cream (1 cup)

Steps:

  • 1. In medium mixing bowl, combine KELLOGG'S CORN FLAKES cereal the 2 tablespoons sugar and margarine. Remove 2 tablespoons for topping. Press remainder evenly and firmly in bottom of 8 x 8 x 2-inch pan to form crust. Chill.2. Drain pineapple, reserving liquid. Set aside. In 1-quart saucepan, mix gelatin, sugar and salt. Add pineapple syrup and lemon juice, mixing until smooth. Cook over low heat, stirring constantly, until gelatin is dissolved. Cool slightly.3. Place cream cheese in mixing bowl. Beat until soft and smooth. Gradually add gelatin mixture and pineapple, stirring until combined. Set aside.4. Pour cream into chilled bowl. Beat until stiff. Fold into cream cheese mixture. Spread evenly in crumb crust. Sprinkle with reserved topping. Chill until firm, about 2 hours. Store in refrigerator.
