2 lb cod fillet (any white fish)
1/4 c butter or margarine
2 Tbsp lemon juice
1/4 c all-purpose flour
dash(es) paprika
salt & pepper, to taste

Steps:

  • 1. Cut cod fillets into serving sizes.
  • 2. Melt butter in saucepan or microwave. Add lemon juice to melted butter.
  • 3. In another dish, mix together flour, salt, and pepper.
  • 4. Dip fish into butter/lemon mix, coating well on all sides.
  • 5. Dip buttered cod into the flour mix, coating well on all sides. Shake excess flour off of the piece of fish.
  • 6. Place coated cod fillets in an ungreased baking dish.
  • 7. Drizzle remaining butter mixture over fish. Sprinkle the entire dish with paprika.
  • 8. Bake, uncovered in a 350 oven for 25-30 minutes. Fish should flake easily with a fork.
  • 9. Garnish with parsley and lemon wedges.

This wonderful recipe will make your mouth water when you sink your teeth into the lemon butter spiced fillets. Use any type of fish!

½ cup butter
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon dried parsley
3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.
  • Arrange cod fillets in a single layer on a medium baking sheet. Cover with 1/2 the butter mixture, and sprinkle with lemon pepper. Cover with foil.
  • Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork. Pour the remaining butter mixture over the fish to serve.

1 1/2 Pound Cod Filet (1/2" thick)
1/4 Pound Butter
1/3 Cup Olive Oil
1 large lemon
1/2 Cup Dry Vermouth
1 Clove Garlic
Salt
Pepper

Steps:

  • Wash and dry cod filet. Juice the lemon. Peel and finely mince the garlic clove. In a heavy skillet melt the butter, add the olive oil, lemon juice, salt pepper, and vermouth. Stir briefly to combine. Lay in the cod filet, and poach until flakey. Remove cod to warm platter and adjust seasoning of remaining sauce. Spoon sauce over cod and serve. Good accompaniment: stewed ripe tomatoes and mashed garlic potatoes.

2 pounds fresh cod fillets
2 tablespoons lemon juice
2 tablespoons butter, cut into small pieces
2 teaspoons salt, divided
⅛ teaspoon ground black pepper
2 medium carrots, coarsely shredded
1 medium onion, chopped
1 large stalk celery, minced
5 slices crustless white bread, cubed
½ cup butter, melted
1 teaspoon ground sage
½ teaspoon ground thyme
¼ cup dry bread crumbs
2 tablespoons snipped fresh parsley
½ teaspoon ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut cod fillets into serving pieces. Arrange in an ungreased baking dish and sprinkle with lemon juice, butter pieces, 1 1/2 teaspoons salt, and pepper.
  • Mix carrots, onion, celery, bread cubes, melted butter, sage, thyme, and remaining 1/2 teaspoon salt together in a bowl. Mix bread crumbs, parsley, and paprika together in a separate bowl.
  • Spread vegetable mixture evenly over cod. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover and sprinkle bread crumb mixture over top. Bake until fish flakes easily with a fork, about 5 more minutes.
