This is a double-crusted pineapple pie. Mix a teaspoon of lemon zest into the pastry for an unforgettable crust.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a medium saucepan combine sugar, cornstarch, pineapple with juice, and lemon juice. Cook over medium heat, stirring constantly until thickened, then allow to boil 1 minute.
- Cool slightly and pour mixture into pastry-lined pie pan. Cover with top crust and seal. Make a few steam vents in crust, then brush with milk and sprinkle with sugar. Place in preheated oven and bake for 35 minutes. Serve chilled or at room temperature.

- Combine milk, pineapple and lemon juice; fold in whipped topping. Pour into prepared crust. Refrigerate until serving. If desired, serve with toasted macadamia nuts and additional crushed pineapple.

PINEAPPLE GLAZED PIE- 2 CRUSTED
Someone asked about a 2 crusted pineapple pie and I happen to have one from the Country Woman Magazine the July/Aug. 2001 issue. This was a prize winning recipe by Kathy Cron of Alaska. This recipe later posted in the Taste of Home Recipes with this photo..Enjoy! The winner said the golden crust and drizzle combined with the coconut adds a tropical accent to the tangy pineapple inside... We enjoy this pie at our house hope you like it.

- Make Crisco pie crust for 2 crust pie. Line 9-inch pie pan with bottom pastry; trim even with pan. Sprinkle the coconut on the bottom. Set aside.
- Heat oven to 400^. In a small saucepan, combine sugar,flour,salt, lemon juice, butter and pineapple. Bring mixture to a boil and cook for 1 minute. Spread over coconut in pie shell. Roll out remaining pie crust to fit on top; place over filling. Trim, seal and flute edges. Cut slits in top. Add decorative cutout on top ,if desired.
- Cover edge of crust with foil lightly.Bake for 5 minutes; turn oven temperature to 350^ and bake for 25 minutes. Remove foil; and bake for 10 minutes longer or until crust is golden brown. Cool on wire rack. Combine glaze ingredients and drizzle over cooled pie. Serve with vanilla bean ice cream...delicious! Store any leftover pie in the fridge.
PINEAPPLE PIE
I found this recipe from Dole many years ago. It's delicious. If you use the glaze I added to this pie, it will remind you of the hand pies ( like Hostess made ) with the sugary glaze once the pie is cooled... Enjoy!!

- 1. Preheat oven to 400 degree F. If using a deep dish pie plate, you may want to double the filling...
- 2. Combine crushed pineapple, sugar, cornstarch and salt in saucepan. Cook, stirring, until thickened and clear. Stir in butter and lemon juice. Cool slightly.
- 3. Pour filling into unbaked 9-inch pastry shell. Top with other crust, vent and brush with cream. You can also add sugar, but I use a glaze as soon as it comes from the oven.
- 4. Bake at 400 degree F. for 25 to 30 minutes or until lightly golden brown.
- 5. Glaze: In a small bowl, combine confectioners' sugar and water or cream. ( if too runny, add more sugar till consistency you desire.) Immediately after removing pie from the oven, brush the crust well with glaze. Completely cool. Enjoy!!!
BOB'S PINEAPPLE PIE
A wonderful double-crust pie that is my husband's all-time favorite.

- Dissolve the cornstarch in 1/4 cup of the reserved pineapple juice. Combine the drained pineapple, sugar, salt, egg yolks, cornstarch mixture, and 1 cup of the reserved pineapple juice in a large saucepan. Cook and stir over medium heat just until the mixture has thickened slightly and turned shiny. Do not boil. Remove from heat, and cool 15 minutes.
- Preheat oven to 400 degrees F (200 degrees C).
- Line a 10-inch pie plate with half of the pastry. Pour the cooled pineapple mixture into the crust. Top with second crust, and seal and crimp the edge. Use a fork to poke holes in the top crust in a few places.
- Bake in preheated oven until the crust is golden brown, about 35 to 40 minutes. Cool before serving.

- In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. In a small bowl, whisk together the cornstarch, 2 tablespoons milk, and vanilla; stir into saucepan. Cook until thickened, stirring constantly. Remove from heat, and set aside to cool slightly.
- Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine the apples, flour, and cinnamon. Mix well.
- Line a 9 inch pie pan with pie dough. Pour thickened filling mixture into pastry-lined pie pan. Arrange apple mixture evenly over filling. Top with second crust, seal and flute the edges. Cut slits in top crust.
- Bake for 30 to 40 minutes, or until crust is golden brown and apples are tender. Cool for at least 30 minutes.
- In small bowl, combine confectioners' sugar, 1 tablespoon milk, 1/4 teaspoon vanilla, and 1 tablespoon softened butter. Blend until smooth; pour evenly over warm pie. Refrigerate for AT LEAST 1 1/2 hours before serving (longer is better).

- In a large saucepan combine 1 1/4 cups (reserving 1/4 cup) of the pineapple juice and the sugar. Bring to boiling; add apple wedges. Simmer, covered, 3 to 4 minutes or till apples are tender but not soft.
- With slotted spoon, lift apples from pineapple liquid; set apples aside to drain.
- Blend the remaining 1/4 cup pineapple juice slowly into cornstarch; add to hot pineapple liquid in saucepan. Cook and stir till mixture thickens and bubbles; cook 1 minute more. Remove from heat.
- Stir in the butter, vanilla and salt. Cover and cool 30 minutes without stirring. Pour HALF the pineapple mixture into the baked pie shell, spreading to cover bottom.
- Arrange cooked apples on top. Spoon remaining mixture over apples. Cover and refrigerate till chilled.
- Before serving, garnish center of pie with whipped cream and chopped macadamia nuts, if desired.

- Mix pineapple, sugar and flour.
- Pour in 9-inch pie crust, and top with another pie crust. Cut slits in top crust, and Sprinkle crust with sugar.

I have had this recipe for years.I have changed the type of apples and made one crust and topped with cool whip instead of whipped cream. Arrange the apples in a circle, it shows through the glaze and place the cool whip in the center.

Steps:
- In large pot add 1 1/4 cup pineapple juice and sugar. Bring to a low boil, add apples.
- Simmer about 4 minutes, apples should be tender but not soft.
- With slotted spoon take out apples and drain in colandar, have a dish underneath to catch liquid.
- In small bowl, add 1/4 cup pineapple juice and cornstarch. Stir to dissolve.
- Add to hot pineapple mixture, stirring until thickened. Turn the heat down when thickening. Should be clear and not milky.
- Take off the heat. Stir in margarine vanilla and salt. Cool about 30 minutes, do not stir. Take any juice drippings from apples and stir into mixture.
- Pour half of the mixture in the pie shell covering bottom.
- Arrange apples in the circle around the shell. Spoon other half over the applies, smooth with the back of a spoon. Chill.Before serving top with whipped cream or cool whip in the center.
- Optional Serving: Place 8 slices of Kiwi fruit on top of pie for 8 servings.
