Number Of Ingredients 5

750 milliliters (25⅓ ounces) pot still Jamaican rum, such as Hamilton Jamaican Pot Still Black Rum
250 milliliters (8½ ounces) pineapple syrup (see Note)
200 milliliters (6¾ ounces) grapefruit juice
50 milliliters (1½ ounces) brewed Earl Grey tea
Garnish: Lime wheels

Steps:

  • Combine all ingredients and stir to mix. Keep at least 4 hours or up to overnight in a covered container in the refrigerator. Stir before serving. If utilizing a punch bowl, pour over a large block of ice to slow dilution. Garnish with fresh lime wheels.

4 black tea bags (i used a breakfast blend)
2 cups boiling water
3 tablespoons raw sugar
3 cups pineapple juice
2 lemons, juice of

Steps:

  • Steep the tea in the boiling water for 10 minutes, with the sugar.
  • Remove bags.
  • Put in a pitcher.
  • Add the remaining ingredients.
  • Let chill in the fridge until cold.
  • Serve in frosted glasses!

2 ounces orange juice
2 ounces pineapple juice
1 3/4 ounces cranberry juice
1 dash ginger ale
1 orange, wheel (to garnish)

Steps:

  • Fill a cocktail shaker 1/2 full with ice.
  • Add orange and pineapple juices.
  • Shake to combine.
  • Strain the juice mixture into a cocktail or martini glass.
  • Top with the cranberry juice and stir.
  • Add the ginger ale.
  • Garnish with the orange wheel.
  • Serve.

300ml coconut rum
600ml pineapple juice (not from concentrate)
150ml gin
6 small chunks watermelon
12 coriander sprigs
6 x 324ml screw-top jam jars with lids
ice bucket filled with ice

Steps:

  • Put 50ml coconut rum, 100ml pineapple juice, 25ml gin and 50ml cold water into each jam jar.
  • Stir, then garnish each one with a piece of watermelon and a couple of coriander sprigs, squeezing the leaves a little bit first before dropping them into the jars to help release the flavour. Screw on the lids and chill or set in ice buckets until needed - they will keep well for 4-6 hrs.

This 1 is truly Chef Kate recipe inspired. After having made her Natilla De Pina (Pineapple Custard) Recipe #170308 for the 2nd time at DH's request, I used my excess pineapple juice for this new effort & now I'm really hooked on both of them. Enjoy!

  • In a large saucepan, bring water to a boil; remove from heat. Add tea bags; steep, covered, 3-5 minutes according to taste. Discard tea bags. Stir in sugar until dissolved.
