Green Mashed Potatoes image

Mashed russet potatoes mixed with a purée of parsley and green onions.

2 pounds russet potatoes (about 3 large or 5 medium sized potatoes), peeled and cut into 2 inch chunks
Salt
3 sprigs thyme (or a couple teaspoons dried thyme in a small boquet garni bag or tied up with cheesecloth)
1 bunch fresh parsley, leaves chopped (about 1 cup)
3 green onions (scallions), white and green parts chopped (about 1/2 cup)
1/2 cup milk, divided
1/4 cup cream
3 tablespoons butter (more to taste)
1 teaspoon freshly ground black pepper

Steps:

  • Mash the potatoes: While the milk is heating, mash the cooked potatoes with a potato masher or use a potato ricer. (Do not over mix or the potatoes will turn gluey.)

Mashed Potatoes With Garlic and Basil image

6 to 8 medium Washington, Idaho or Yellow Gold potatoes
6 whole garlic cloves, peeled
Salt to taste
2 tablespoons virgin olive oil
1 1/4 cups warm milk
2 tablespoons finely chopped fresh basil
Freshly ground white pepper

Steps:

  • Peel the potatoes and cut them into 3/4-inch cubes. Place the pieces in saucepan and cover with water. Add the garlic and salt.
  • Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Do not overcook.
  • Drain. Discard garlic. Put the potatoes through a food mill or ricer, or mash them well with a potato masher.
  • Add the olive oil, and beat to blend. Add the warm milk, basil and pepper. Blend well. Serve piping hot.

1 1/2 pounds russet potatoes
6 large garlic cloves peeled
Salt to taste
2 cups loosely packed parsley with stems
1 1/4 cups warm milk
2 tablespoons butter
Freshly ground white pepper to taste

Steps:

  • Peel the potatoes and cut them into 2-inch cubes.
  • Place the potatoes and garlic in a saucepan and cover with water. Add salt. Bring to a boil, and simmer for 15 minutes or until tender.
  • Drain the potatoes and force them through a food mill or potato ricer. Return to the saucepan.
  • Meanwhile, put the parsley and 1/4 cup of the milk into a food processor. Blend until coarsely chopped.
  • Place a strainer over a small bowl. Line it with cheesecloth. Transfer the parsley into the cheesecloth and squeeze very hard to extract all the juice. Reserve the juice.
  • Add the milk, the parsley juice and the butter to the potatoes. Beat with a spoon and blend well. Add the pepper and check for seasoning. Serve immediately.

Chicken Breasts With Lemon image

In this recipe, which Pierre Franey brought to The Times in 1992 in one of his 60-Minute Gourmet columns, two teaspoons of lemon zest are added to a simple sauce of lemon juice, thyme, garlic and shallots. It is, at once, lively and elegant. To round it out, it needs a sturdy accompaniment. Mr. Franey suggested mashed potatoes with garlic and basil, with just a little olive oil swirled in.

1/2 cup flour for dredging
Salt and freshly ground pepper to taste
4 skinless boneless chicken breasts, about 6 ounces each
2 tablespoons olive oil
4 sprigs fresh thyme or 1 teaspoon dried
2 tablespoons finely chopped shallots
2 teaspoons finely chopped garlic
2 teaspoons grated lemon zest
3 tablespoons lemon juice
1/2 cup chicken broth, fresh or canned
2 tablespoons butter

Steps:

  • Season flour with salt and pepper, and dredge the chicken all over. Remove the excess flour.
  • Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
  • Flip the chicken and cook for 5 minutes more, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.
  • Add the thyme, shallots and garlic, and cook for about a minute. Do not burn the garlic. Add the lemon rind, the lemon juice and the broth.
  • Scrape the skillet to dissolve the brown particles that cling to the bottom. Add the butter, and cook for 3 minutes longer. Serve immediately.

6 yellow gold or russet potatoes, about 1 1/2 pounds
6 whole cloves of garlic, peeled
1/2 cup finely sliced white onions
Salt to taste
2 tablespoons butter
1 pinch freshly grated nutmeg
Freshly ground white pepper to taste
1 1/3 cups warm milk
2 tablespoons finely chopped chervil or parsley

Steps:

  • Peel the potatoes, and cut them crosswise into 1-inch cubes. Place the pieces in a saucepan with water to cover. Add the garlic, sliced onions and salt to taste.
  • Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Drain, and put the mixture through a food mill or potato masher. Put back into the saucepan.
  • Add the butter, nutmeg and the white pepper. Blend well. Add the warm milk a little at a time while beating. Add the chervil, beat to blend, and serve.

This spiced version of the traditional English dish was developed in 1984 by Pierre Franey and Craig Claiborne for an article about budget-friendly meals. Here, the ground beef base is laced with curry powder, cumin and coriander then topped with a pile of fluffy, mashed potatoes dotted with green peas.

6 Russet potatoes, about 2 pounds, peeled and cut into 1 1/2-inch cubes
Salt to taste, if desired
1 tablespoon peanut, vegetable or corn oil
3/4 cup finely chopped onions
1 tablespoon finely minced garlic
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
2 pounds ground lean beef
Freshly ground pepper to taste
1 cup crushed, canned imported tomatoes
1/2 cup fresh or canned chicken broth
1 teaspoon sugar
2 cups cooked fresh or frozen green peas
1/2 cup hot milk
3 tablespoons butter

Steps:

  • Put the potatoes into a pot and add water to cover and salt to taste. Bring to the boil and cook 10 to 15 minutes or until the potatoes are tender when pierced with a fork.
  • As the potatoes cook, heat the oil in a skillet and add the onions and garlic over medium heat. Cook, stirring occasionally, until they are wilted. Add the curry powder, cumin and coriander and cook briefly, stirring.
  • Add the meat and cook, stirring down with the side of a heavy kitchen spoon to break up the lumps. Add salt, pepper, the tomatoes, broth and sugar. Cook, stirring occasionally, about 20 to 30 minutes.
  • Meanwhile, preheat the broiler.
  • Drain the potatoes and put them through a food mill or a potato ricer back into the pot. Stir in the peas and cook briefly.
  • Add the hot milk, two tablespoons of the butter and pepper, preferably white, beating with a wooden spoon.
  • Heat an eight-cup baking dish (a souffle dish works well) and spoon the piping-hot curried meat into it. Top with the hot mashed potatoes. Smooth over the top. Dot with the remaining tablespoon of butter.
  • Run the mixture under the broiler until the top is golden brown. Serve immediately.

1 9- to 10-ounce smoked ham hock
4 cups cold water
3/4 pound kale, stems removed and reserved, leaves coarsely chopped
1/4 pound mustard greens, stems discarded, leaves coarsely chopped
3 pounds russet potatoes, peeled, quartered
1/2 cup (1 stick) butter
1 cup (about) whole milk
4 green onions, chopped

Steps:

  • Combine ham hock and 4 cups cold water in large saucepan; bring to boil. Reduce heat to medium-low, cover and simmer until ham is tender, about 45 minutes. Transfer hock to plate; cool. Remove meat from bone; chop meat.
  • If necessary, boil ham broth until reduced to 3 cups. Add kale stems. Cover and simmer over medium heat 10 minutes. Add kale leaves. Cover and simmer 5 minutes. Add mustard greens; cover and simmer until all greens are tender, occasionally submerging greens in broth, about 20 minutes. Uncover; simmer until broth is reduced almost to glaze, about 10 minutes longer. Season with salt and pepper.
  • Cook potatoes in large pot of boiling salted water until tender, about 30 minutes. Drain potatoes, reserving 1/4 cup cooking liquid. Return potatoes and reserved 1/4 cup cooking liquid to pot. Add butter and 3/4 cup whole milk. Mash potatoes until almost smooth, adding more milk if dry. Season potatoes to taste with salt and pepper.
  • Spoon potatoes into large bowl. Make well in center of potatoes; spoon greens into well. Sprinkle with chopped ham and green onions and serve.

2 tablespoons unsalted butter
1 1/3 cups milk
1/3 cup finely chopped scallions
Freshly ground white pepper to taste
1/8 teaspoon freshly grated nutmeg

Steps:

  • Peel the potatoes and cut them into 2-inch cubes. Place the cubes in a saucepan. Add water to cover and salt.
  • Bring to a boil and simmer 15 minutes, or until tender. Drain and put the potatoes through a food mill or mash them well with a potato masher. Add the butter and beat to blend. Stir in the milk, scallions, salt, pepper and nutmeg. Serve piping hot.
