TRADITIONAL PICKLED EGGS
These pickled eggs are a fast and healthy snack or a great addition to a cheese or charcuterie board!

Steps:
- In medium saucepan, combine together ½ cup (125 mL) water, white vinegar, apple cider vinegar, sugar, onion, pickling spices, salt and chili flakes, if using. Bring to boil, stirring frequently, until sugar dissolves. Remove from heat.
- Place eggs in 4-cup (1 L) jar with lid. Pour hot liquid over eggs into each jar. Top up with more water, if necessary, to ensure eggs are completely covered. Cover jar with lid.
- Let cool on counter, and refrigerate for at least two days before enjoying.

PICKLED EGGS, BEETS AND ONIONS
If you like pickled onions and beets along with your eggs, you'll like this recipe. The juniper berries can be eliminated.

Steps:
- Place the eggs, sliced onions, and beets in a large jar. Set aside.
- In a saucepan, combine the remaining ingredients and slowly boil for 10 minutes. Let cool.
- Pour the cooled vinegar solution over the eggs, onions and beets. If the juice does not cover them, add additional water/vinegar (1:1) to cover. Refrigerate.
- Can be eaten in 24-hours, but are better after a couple of days. Store in fridge.
PICKLED EGGS AND ONIONS
Steps:
- In small saucepan blend mustard with 1/4 cup vinegar. Add remaining 1 cup vinegar and remaining ingredients except eggs. Simmer uncovered 5 minutes or until sugar is dissolved and onions are crisp and tender. Pour over eggs. Cover and refrigerate overnight. These are excellent!
SWEET PICKLED EGGS
Simple and easy to prepare. These will keep in the refrigerator for up to six months. Delicious with cold cuts, crusty bread and assorted cheeses.

- Cover eggs with water in a large pot. Cover with lid. Bring to a boil over medium-high heat. Boil gently for 10 minutes. Drain. Run cold water over eggs until they are cold. Shell eggs.
- Prepare the brine in a sauce pan by combining the vinegar, water, sugar and salt. Stir over medium heat until sugar is dissolved.
- Layer the eggs (whole) and onion rings in a sterilized 2 quart jar to within 1 inch of the top.
- Add pickling spice to brine. Swirl bag around for 30 seconds. Remove bag. Pour brine over eggs to fill jar with 1/4 inch from top. Seal with a sterilized lid. Store in the refrigerator for 1 to 2 weeks before serving. Serve chilled.

- Bring vinegars, water, sugar and salt to boil in medium saucepan, stirring occasionally. Cool 15 min.
- Layer eggs in sterilized 1-qt. wide-mouth jar alternately with onions. Add vinegar mixture. (Note: Eggs and onions should be completely covered with vinegar mixture. If not, add more water.) Cover with lid.
- Refrigerate 3 weeks. Remove eggs and onions from marinade just before serving; discard marinade. Slice eggs; top with onions.

PICKLED RED BEET EGGS
My Pennsylvania Dutch grandmother, Florence Walter, used to make these. They are especially great for picnics. The combination of pickled eggs, beets, and onions is really something special. A great way to use up left-over Easter-eggs too!

- Drain liquid from the beets into saucepan. Place beets, onions, and eggs into a large bowl or pitcher.
- Pour sugar and vinegar into the saucepan with the beet liquid and bring the mixture to a boil. Reduce the heat to low, and let the mixture simmer 15 minutes.
- Pour the beet juice mixture over the beets, eggs, and onions. Seal the bowl or pitcher and refrigerate. Refrigerate for at least one to 3 days; the longer they are allowed to sit the better they will taste.

GARLIC PICKLED EGGS
Plan ahead these eggs need to chill for at least 7 days before using, that is if you can wait that long, these are sooo good! Use beet juice or water, if you like extreme garlic flavor then add in another few cloves, the cayenne is optional I like to add it in for some heat, if you are using add it into the beet juice mixture.

- Place the peeled eggs and onion slices in a 1-quart glass jar.
- In a saucepan bring the beet juice or water, vinegar, salt, sugar and garlic cloves; bring to a boil stirring for a couple of minutes until the sugar and salt is dissolved; remove from heat and let cool (about 30 minutes).

- For malt pickle, combine ingredients, 15gm fine sea salt and 1 litre water in a saucepan and bring to the boil. Cool to room temperature, then strain (discard garlic and thyme).
- Cover eggs with cold water in a saucepan, bring to the boil and cook for 2 minutes. Drain, refresh in a bowl of iced water, then carefully peel and place in a heatproof container. Bring half the pickling liquid to the boil, pour over eggs, cover and refrigerate for at least 3 days.
- Place onion slices in a single layer in a wide saucepan, add remaining pickling liquid, cover directly with a round of baking paper and bring to a simmer over low heat. Cool, then refrigerate in an airtight container for at least 3 days.
- To serve, drain pickled eggs, halve and arrange on serving plates with pickled onion, and top with black garlic and thyme.
