COPYCAT P.F. CHANG'S SINGAPORE STREET NOODLES



Copycat P.F. Chang's Singapore Street Noodles image

A delicious noodle dish with chicken and shrimp and the trademark curry flavor. You can get the fried shallots you need in this recipe in little jars at the Asian markets. They sell fried garlic as well.

16 ounces rice noodles, uncooked
4 tablespoons oil
8 ounces shrimp, peeled and deveined
8 ounces boneless skinless chicken breasts, sliced
1 tablespoon minced garlic
1 cup cabbage, sliced thin
1/2 cup carrot, julienned
2 medium tomatoes, cut into chunks
1 bunch scallion, cut into 2 inch lengths (green parts only)
1/4 bunch cilantro, chopped
1 teaspoon dark sesame oil
1/3 cup fried shallot (commercially prepared) (optional)
1 lime, cut into fourths
1 tablespoon vinegar
2 tablespoons Madras curry powder
1 pinch turmeric
2 tablespoons light soy sauce
1/2 cup vegetarian oyster sauce
2 tablespoons sriracha sauce
2 tablespoons ketchup

Steps:

  • Boil rice stick noodles for 2 minutes or until just soft.
  • Rinse under hot water and drain.
  • Toss noodles with 2 tbsp oil and keep warm.
  • To prepare sauce, mix vinegar with curry powder and turmeric until blended.
  • Add soy sauce, oyster sauce, Sriracha, and ketchup, mixing well.
  • Set sauce aside until needed.
  • Stir-fry shrimp and chicken with remaining 2 tbsp of oil until until cooked through.
  • Add garlic, cabbage, tomatoes and carrots and cook for one minute more.
  • Stir in sauce mixture until everything is evenly coated.
  • Cook for 1-2 minutes more or until dish is heated through.
  • Toss noodles with chopped scallions, cilantro and sesame oil.
  • Garnish with fried shallots, if desired.

3 teaspoons minced garlic cloves
3 teaspoons sugar
2 teaspoons white vinegar
1 1/2 teaspoons red chili pepper flakes
2 teaspoons canola oil
1 lb fresh Chinese noodles or 1 lb vermicelli
1/2 teaspoon sesame oil
4 ounces cantonese stir-fry sauce (see recipe below)
1 japanese cucumbers or 1 English cucumber
2 teaspoons chopped cilantro
3/4 cup water
1 teaspoon chicken base, powder (no MSG)
1 teaspoon sugar
2 teaspoons shaohsing wine or 2 teaspoons sherry wine
1 teaspoon oyster sauce
1/2 teaspoon salt
1 teaspoon cornstarch

Steps:

  • Cook pasta. Rinse and cool down. Set aside. Toss in red chile flakes and cilantro.
  • Wash cucumber. Slice diagonally into 1/4" thick slices. Slice into strips. Set aside.
  • Heat wok thoroughly, add oil, then minced garlic. Stir fry briefly. Do not burn garlic or it will take on an acrid smell and taste. (If this happens, throw it out and start over.).
  • Add sugar and vinegar.
  • Add noodle to wok, stirring and tossing to mix until noodle is heated through.
  • Place on plates and surround with cucumber strips.

5 ounces guilin rice vermicelli (or sub spaghetti, follow recipe on pkg for cooking)
1 teaspoon any vegetable oil
2 teaspoons any vegetable oil
8 chili pods
3 ounces pork loin, cut into thin strips
1 teaspoon garlic
1 1/2 ounces yunnan ham (or sub. procusitto or Serrano)
2 green onions, cut into 2-3-inch sticks
1/4 cup sliced cabbage, cut into thin strips
1/4 cup shiitake mushroom, sliced (sub. any mushroom)
1/8 teaspoon salt
2 tablespoons soy sauce
1 teaspoon oyster sauce
1 teaspoon sugar
1/2 teaspoon sesame oil

Steps:

  • Soak Vermicelli in very hot water for 1 hour.
  • Bring a pot of water to a boil, add Vermicelli and boil for one minute.
  • Rinse under warm water for one minute, drain well then mix with 1tsp Veg Oil.
  • Heat a wok over high heat until it begins to smoke (sub. cast iron skillet or sauté pan).
  • Add Vegetable Oil, then Chili Pods and Pork. Then stir fry until pork is almost done.
  • Add Garlic, Ham, Green Onion, Cabbage and Mushrooms then stir for 10 to 15 seconds.
  • Add Vermicelli, Salt, Soy Sauce Oyster Sauce, Sugar and Sesame Oil then stir fry until all ingredients are mixed well.

This recipe is a copycat of the Zodiac Noodles from P.F.Chang's "Flavors of Yunnan" menu.

5 ounces rice vermicelli (try and find Guilin Style rice noodles) or 5 ounces spaghetti
1 teaspoon vegetable oil (2 tsp for spaghetti)
2 teaspoons vegetable oil (frying)
4 small red chilies, seeded chopped
3 ounces pork loin, cut into thin strips
1 teaspoon garlic, minced
1 1/2 ounces prosciutto or 1 1/2 ounces serrano ham, cut into thin strips
2 green onions, cut into 3 inch sticks
1/4 cup cabbage, cut into thin strips
1/4 cup portabella mushrooms or 1/4 cup porcini mushroom, sliced
1/8 teaspoon salt
2 tablespoons soy sauce
1 teaspoon oyster sauce
1 teaspoon sugar
1/2 teaspoon sesame oil

Steps:

  • Soak vermicelli in very hot water for 1 hour. Skip this step if using spaghetti. Bring a pot of water to a boil, add vermicelli and boil for one minute. Rinse under warm water for one minute, drain well then mix with 1 teaspoon vegetable oil.
  • If using spaghetti, follow instructions on package. After draining, mix with 2 tsp vegetable oil.
  • Heat a wok, cast iron skillet or saute pan over high heat until it begins to smoke. Add 2 tsp vegetable oil, then chopped chilies and pork. Stir fry until pork is almost done.
  • Add garlic, meat, green onion, cabbage and mushrooms then stir-fry for 10 to 15 seconds.
  • Add noodles, salt, soy sauce, oyster sauce, sugar and sesame oil, then stir fry until all ingredients are mixed well. Serve immediately.

Original recipe comes from Todd Wilbur's book "Top Secret Restaurant Recipes" however I've made some minor changes to fit personal taste. For something different substitute leftover pork roast. Please note that we like spicy food so you may wish to adjust the amount sambal oelek you use.

2 chicken breast fillets (skinless, boneless)
2 tablespoons peanut oil, plus more for cooking chicken
1 (6 ounce) package chow mein noodles or 1 (6 ounce) package Chinese egg noodles
1 1/2 tablespoons garlic, minced
1/2 cup green onion, chopped
1 tablespoon ginger, minced
1/2 cup soy sauce
3/4 cup chicken broth
1/3 cup dark brown sugar
2 teaspoons sambal oelek (chile-garlic sauce to taste)
4 tablespoons cornstarch
1/2 cup water
1/2 cup bean sprouts or 1/2 cup peanuts

Steps:

  • Saute chicken breast in a skillet in a little oil for 10 to 12 minutes.
  • Allow to cool; then mince.
  • Prepare the noodles following the directions on the package; typically boil for 3 to 5 minutes in 8 to 10 cups boiling water.
  • For Sauce:.
  • In a wok heat 2 tablespoons oil over medium heat.
  • Add garlic and green onion and saute for just a few seconds; careful that the garlic doesn't burn.
  • Add soy sauce, chicken broth, brown sugar and chile-garlic sauce. Combine the cornstarch with ½ cup water and stir it into the sauce. Simmer sauce for about 2 minutes or until it thickens.
  • Once thick, add the chicken and simmer for an additional 5 minutes.
  • Place cooked noodles onto a serving plate.
  • Spoon chicken and sauce over the top of the noodles.
  • Garnish with bean sprouts or peanuts before serving.
