My grandmother has made this recipe for years, and now that she can no longer do this herself, I have taken over the family tradition of preparing this great dessert. I hope you enjoy it as much as we do.

1 ½ cups quick-cooking oats
1 ¼ cups all-purpose flour
1 ¼ cups brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
¾ cup butter
½ pound dates, pitted and chopped
¾ cup water
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir oats, flour, brown sugar, baking soda, and baking powder together in a bowl; cut in butter using a pastry blender until mixture is mealy and butter pieces are uniformly small.
  • Press half of oat mixture evenly into the bottom of a 9x13-inch baking pan.
  • Cook dates with water in a small saucepan over medium heat until they fall apart and are easily mashed with a wooden spoon, about 10 minutes; remove from heat and stir in vanilla extract.
  • Spoon date mixture evenly over oat mixture in baking pan; sprinkle remaining oat mixture evenly over top and press into place.
  • Bake in the preheated oven until crust is golden at the edges, about 30 minutes; remove to cool completely on a wire rack. Cut into bars.

1 cup raisins
1 cup water
1/2 cup salad oil or 1/2 cup shortening
1 slightly beaten egg
1 cup sugar
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon clove
1/2 cup walnuts, chopped

Steps:

  • Combine raisins and water in a saucepan; bring to a boil. Remove from heat. Stir in salad oil, cool to lukewarm. Stir in sugar and egg. Sift together dry ingredients; beat into raisin mixture. Stir in nuts. Pour batter into greased 9 x 13" pan. Bake at 350* for 20 minutes or until done. When cooled cut into bars. Dust with powdered sugar.

I got this recipe from my mom, who got it from her mom. These are the best raisin cookies I have ever had. They stay very soft! Most people look skeptical of raisin cookies until they try these, and then they ask for the recipe.

2 cups raisins
1 cup water
1 cup margarine
2 cups white sugar
3 eggs
1 teaspoon vanilla
4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
1/4 teaspoon allspice

Steps:

  • Preheat oven to 400°F.
  • Bring water to boil in small pot, add raisans and boil 5 minutes. Cool. Do not drain water - it will be used in recipe.
  • Cream shortening and sugar.
  • Add eggs and beat well.
  • Add cooled raisans with any left over water, and vanilla.
  • Stir flour, baking powder, baking soda, salt, cinnamon and allspice to wet ingredients.
  • Drop by teaspoon onto a lightly greased cookie sheet. This mixture is not meant to be really dry.
  • Bake 10 minutes.

unsalted butter, for pans
2 cups raisins
1 cup sugar
1 teaspoon cornstarch
1 cup cold water
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/4 teaspoons salt
1 1/2 cups vegetable shortening
1 1/4 cups light brown sugar, packed
1 large egg
1 1/4 teaspoons vanilla
2 1/2 cups old fashioned oats

Steps:

  • Preheat oven to 350. Butter a 10 X15 baking pan, line bottom with parchment paper. Butter parchment set aside.
  • Make the filling: Place the raisins and sugar in the bowl of a food processor fitted with the metal blade. Pulse until very finely chopped.
  • Transfer to a small saucepan.
  • Whisk cornstarch into the water; whisk into pan. Stir in cider. Simmer over med-low heat until sugar dissolves and mixture thickens, about 5 minutes. Remove from heat; let cool completely.
  • Combine flour, baking soda, and salt in a med bowl. In bowl of an electric mixer fitted with the paddle attachment, cream shortening on med speed until smooth. Add brown sugar, and beat until light and fluffy. Beat in egg and vanilla. Add the flour mixture all at once; beat on low speed until combined. Beat in oats.
  • Using an offset spatula, spread half the dough in prepared pan; spread filling on top. Crumble remaining dough over, gently pressing down to conceal filling. Bake until golden brown, about 30 minutes, rotating the pan halfway through. Remove from oven; let cool completely in pan before cutting into squares.
