Chimichurri is an uncooked sauce used for grilled meat; it originated in Argentina and Uruguay. The dominant flavors are parsley and garlic.

¼ cup hot water
2 tablespoons dried oregano
1 teaspoon salt
1 cup chopped fresh parsley, or more to taste
⅔ cup chopped fresh cilantro
6 cloves garlic
1 shallot, roughly chopped
1 red jalapeno pepper, chopped
½ cup red wine vinegar
¾ cup extra virgin olive oil

Steps:

  • Combine water, oregano, and salt in a small bowl and set aside until oregano has softened, about 15 minutes.
  • Combine parsley, cilantro, garlic, shallot, and jalapeno in the bowl of a food processor; pulse until chopped. Add water-oregano mixture and red wine vinegar and pulse until finely chopped. Transfer to a bowl and whisk in olive oil until emulsified.
  • Cover chimichurri sauce and let sit at room temperature until flavors have melded, about 1 hour.

3 tablespoons red wine vinegar
4 cloves garlic, roughly chopped
Kosher salt and freshly ground pepper
1/2 cup packed fresh flat-leaf parsley leaves
1/2 cup packed fresh cilantro leaves
2 tablespoons packed fresh oregano leaves
1/4 cup ice cubes
1 jalapeno, stemmed, seeded and roughly chopped
1/4 cup plus 2 tablespoons extra-virgin olive oil

Steps:

  • Combine the vinegar, garlic and a generous pinch of salt in a blender and blend on low until smooth. Add the parsley, cilantro, oregano, ice and jalapeno and blend on medium speed. With the blender running, slowly drizzle in the olive oil and puree until smooth, about 1 minute, stopping to scrape down the sides if necessary. Season the chimichurri with more salt and pepper and transfer to a serving bowl, cover with plastic and refrigerate until ready to serve.

1 jalapeno (chopped)

1 small sweet onion, finely diced
1 green chilli, deseeded and finely chopped

1 cup fresh parsley leaves
1 shallot, coarsely chopped
3 garlic cloves, chopped
3 tablespoons red wine vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 lb boneless top sirloin steak

Steps:

  • In a food processor, combine parsley, shallot, garlic, vinegar, olive oil, 1/4 t. each of the salt and pepper. Pulse until combined; set aside.
  • Heat a gas grill to medium-high heat or prepare a charcoal grill with medium-hot coals. Sprinkle remaining 1/4 t. each salt and pepper over steak. Grill about 8 minutes per side.

I grew up in Panama and one of my favorite restaraunts was 'La Estancia'. Their specialty was the famous Argentinean 'Churrascos' that were grilled on a fire pit and were served with Chimichurri. This recipe is the closest to what they served. I found this recipe at Glenna Anderson Muse's blog A FRIDGE FULL OF FOOD AND NOTHING TO EAT. Enjoy!

4 -5 garlic cloves
1 lemon, juice and zest of
1/2 teaspoon coarse salt (or to taste)

This is the recipe I developed that my family loves, but there are almost as many versions of chimichurri as there are Argentinian families. One of my favorite uses is over thinly sliced grilled flank steak.

1 cup fresh flat-leaf parsley, firmly pack and trimmed of thick stems
2 -3 garlic cloves
2 tablespoons fresh oregano
1/2 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes

Steps:

  • For best results use a mortar and pestle but a quick spin in a food processor works in a pinch. Simply combine all the ingredients except the olive oil and make a loose paste.
  • Mix in the olive oil. If using a food processor, give it a few more spins to make sure everything is chopped fine.
  • Let mixture sit at room temperature for 1-2 hours to give the flavors some time to marry.
